Garden Goodies in Winter

Today is the last day of February for 2024.  

Hopefully it's the last day of our winter as well.  Although, every day has been up and down weather, and yes, more snow yesterday.

  

I've been focusing meals on what we froze from the garden, what was stocked up in the freezer, and what's in the pantry as well.  It's getting close to spring, and we still have a lot of green beans and green peppers in our freezer.

I didn't get a lot of photos, as we were enjoying our dinner, but here was what I came up with recently.

Dinner - meatball casserole with dollops of ricotta.  I used homemade frozen (then cooked) meatballs, and home canned tomato sauce for this.  I also thawed some diced yellow squash and added that to the sauce (I wanted asparagus, but we were out).  The squash was also from the garden.

 The meatballs are made with organic oats vs. bread crumbs.  We topped the meatball "casserole" over frozen and thawed garden spaghetti squash.  In the future, I will layer the spaghetti squash in the baking dish first, and bake it all together.  Either way, it was delicious.

I roasted green beans using frozen garden green beans. I used homemade garlic powder, then when it came out of the oven, added some parmesan cheese.

I baked a dozen sausage egg cups, with our farm fresh eggs, and one cup of already cooked sage sausage from the freezer.

I'm already making breakfast plans, to use some delicious garden bell peppers we froze last year.  There will be some scrambles, hash/egg dishes, more egg cups, and crust-less quiches or breakfast bakes.  I will be adding them to lunch and dinner as well.  They are delicious in omelets.

I also have and abundance of green peppers in the freezer! I like to throw them in soup, eggs, potatoes, rice... pretty much anything. We had an abundant harvest last year for the first time ever, I think that's why we still have so many left in the freezer!
Debi, we too has a bountiful green pepper season last year. We use a lot for weekend omelets, but have not made them lately. I too add them to about everything. I think one year I even made green pepper pesto (with fresh green peppers). We typically stuff them in halves and freeze them, but for some reason I never got any frozen like that.

Apples and Tomatoes Oh My!

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Did any of my blog writing followers locate a better "blog" platform online?  Just curious if anyone is moving from blogger. 

Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
