Brussel Sprouts and Butternut Squash (roasted) ~ Bell Pepper Oven Fries ~ Wild Rice Soup (with chicken) ~ Turmeric Honey?



 I decided to try this combination, after seeing it on SkinnyTaste online.  They recipe simply states to add 6 sprigs of fresh thyme and black pepper.  Well, in my opinion, it needs more flavor, such as garlic perhaps.    Anyway, I had the butternut squash in my freezer, and it needed rotated out, so I thawed it and used that.  The squash cooked to a soft texture, but it was all good.  I will try fresh butternut next time, and add garlic powder or even sliced shallots or onions.  







I make this side about once a year, with homegrown bell peppers.  I used the healthier version of "panko" this time, and we loved it.  The dip is hand made as well.  I believe the recipe is online with Delish (Bell Pepper Oven Fries).

Thank you for the tip on freezing chicken rice soup.  I found a recipe that I will be trying during our next cold spell.  It is on another blog, and the recipe is here:  Wild Rice Blend Soup.

On another note regarding medicinals, has anyone used a blend of turmeric and honey for illness?  It's not a jar method, but mixing ground with honey and using on the spot.  I'm just trying to be prepared.  Two weeks of feeling ill was not fun, and we want to have many options on hand if people start spreading sickness again.

Day on the Sanity Saver ~ More Green Bell Peppers

 

Posting late this morning, and after the sun is coming up.  We slept grand last night.  My husband set up a motorcycle ride with some friends and family on Saturday.  We were literally on the bike from 10am to past 7pm.  It was a long day, but a very nice ride, and we both needed it.

Although, the ride day put us behind on the chicken coop, it was great weather for us.  When we arrived home, the wind picked up, due to neighboring weather, and the island ferry (hour away or so) shut down.  The wind was that bad.

Marble Lake, Coldwater, MI.  I thought we were in Quincy, ha ha!  That's the fun of a ride.  We did go through Quincy, but the ride ended at Marble Lake.  Beautiful trees, and blue water there.

I'm terrible at getting photos on a motorcycle ride day. My cell is in the trunk of the bike the entire time, as it should be.  It's just a time to relieve the mind of everything.

I have not even thought about meals today either, ha ha!  The wind has subsided this morning.  We are in the 70's now, which makes outdoor work easier and more comfortable. 

We are still getting some decent size green bell peppers.  We have not had rain in a while, and may get some later next week.  I am not watering anything that we left in the garden.  The 200 feet of hose is being reeled in and put away for now.  If the peppers produce more, we are thankful, and if the plants die off, it will be time to yank them for the season.  These 7 that I picked may be slightly small, but they are thick and nice and fresh.  I will use them for either a breakfast or dinner dish.

The weekend is not over yet, so we hope to get more work done, followed by some down time.  I hope you are enjoying your weekend.

Table Talk and Questions (one a serious one about bee keepers keeping bees on your property) ~ Goldenrod

 

This was not all in one day.  I do have a question at the end of this post today.  Actually two questions after someone stopped at our place yesterday evening.


I made the breakfast bell peppers again this week.  I used up spinach and bacon, that we had leftover from our camping trip.  The top pieces of the bell peppers were saved for another meal.





Roasted the first of our spaghetti squash for a chicken dinner casserole.  I saved some seeds, but gave the rest to the chickens.  It was not worth my oven time, to roast the last 1/4 cup or so of seeds.




I roasted a second spaghetti squash to make this dish.  We love it.  It is a meatless dish, but pretty good, and easy to make when you still have tomatoes.  I have also used cherry or grape tomatoes from the garden in the past. 

Not only is it delicious, it's very self sufficient.  You can grow everything for this (aside for the black olives), and you can make your own feta.
 The recipe is simply "Spaghetti Squash" recipe online with Allrecipes.

Due to my husband's long work hours in the spring, we did not get our raised beds built, so no greens were planted.  I am relying on what I can find locally.  I froze some kale and spinach this week.


Sage made it to the dehydrator.  I use a lot of it for homemade sausage.

Question:  Has anyone here made "breakfast" mushrooms?  I am re-thinking our breakfast, and would like to add mushrooms as a side when I make eggs or scrambled eggs.  I know they can be added to an omelet or casserole, but I'm considering it as a breakfast side.

My other question is a serious question.  We were sitting on the front porch last night.  My husband was making calls on his cell, and I was knitting.  A van pulls in, and a guy walks up to the porch.  He says he has a farm slightly north (maybe 20-25 minutes), and is a bee keeper.  He asked if he could bring 50 units (forgot what he said they are called) to put out back on our property, because we have a lot of goldenrod right now, and his bees are not doing well.  He proceeds later to say he has issues with his bees having mites, and if the bees are in the back corner of the property, we would not know they were even there.  He also told us that the government will only allow bee keepers to treat their bees with specific chemicals.

I'm hesitant on this, so I'd like your opinions on this.  He has to be able to drive them to where they will sit.  Also, he said he'd exchange a gallon of honey if we agree, but not until next year. 

We looked his farm up. He is legit.  He used to raise a bunch of meat birds and chickens, but has turned bee keeper now.

Getting some honey would be great, but I am on the fence with someone coming onto our property with his property, that we do not know.   What about these bees with mites and being treated with chemicals we know nothing about?  

 What if deer trample the bee hive boxes?  Or something happens otherwise out of our control?  Or am over thinking this?

I would appreciate all of your input, especially if you keep bees.

Sorry for the long post today.  Speaking of goldenrod, we have an abundance of it.  Do you dehydrate it?  What do you use it for other than tea?  I have wanted to put some up over the years, but it always seems something else needs done.

Heat Index of 95 degrees ~ Garden Updates ~ What was I thinking?

 The heat arrived in our area.  So hot, that they asked people to "conserve" energy.  Although I have been using our clothesline, the humidity is so bad, my laundry doesn't dry.  I have resorted to drying racks and my small indoor clothesline (in my utility room).

I have a rechargeable fan for my treadmill upstairs, so I keep that charged in case of a power outage (we have one in the camper too), which reminds me I need batteries for the portable radio.


Zucchini is still coming on.  I gave up trying to give it out for free.  No one stops to pick it up.  I just send the extras with my husband when he goes to work.  They are greatly accepted there. In fact, I hear they are fighting over it, ha ha!  I have tried to barter for other produce, but no one wants to do that either.



I continue to experiment with new recipes, but we are not fond of anything baked with almond flour (but still trying recipes).  I I do like any recipes using einkorn flour.  I am still putting some zucchini in the freezer.








Our green bell peppers are finally being harvested.  Red are on too, but not red yet.  So thankful for these.  They smell amazing when sliced.  They are not like the ones you buy at the store either.

Cucumbers are still producing.  Although, I am close to pulling the pickling cucumber plants.


I picked another 5 plus # of green/wax beans.  They are doing great this year.

My "what were you thinking" moment!!!  We were on our way to do errands, and we found out a produce stand changed locations, so we stopped.  She was about to close for the day, and offered a bushel of corn at a low price of $20!  My husband and I got to taste the corn first.  It was okay, but first picking, so they are smaller.  I have no idea what I was thinking, but we came home with that bushel.  I'm hoping the kids will come for a visit, so I can share.

We are both hobbling around with sore backs.  My husband tripped on the water hose a few weeks ago, and fell.  I think mine hurts just form all the bending in the garden, but it's been a bit rough lately. 

I'm sort of feeling like everything here, is happening all at once.

Putting up Tomatoes ~ Loofah

 


Tomato soup and ketchup canned so far.  I brought in more tomatoes.



I also brought in another pound of jalapenos, so I'm putting those up today.  I brought in a few more hot banana peppers, but all of the other types are slow to harvest this year.

My kitchen heated up to much, so the AC went back on.  I was literally sweating.  I didn't want to do that, but I do like to be comfortable.



Canning ketchup takes all day to reduce, but I managed to put chicken in the crockpot early, and right after the ketchup came out of the canner, I baked us some bell pepper fries with homemade dip.  So good!

My loofah plant is about 3 1/2 feet tall now.  I don't see any sponges yet.

More Tomato Sauce Canned ~ Last Green Bell Pepper Picking

 

Friday morning the clouds were low and looked like mountains.  I sliced up 23# of tomatoes and got my sauce maker back out.



I am thrilled to get more tomato sauce canned.  I have more green tomatoes in the kitchen though.





Our Friday weather was brr! cold!  Low 50's with a possible frost this morning (38°F), so I did my last picking of the green bell peppers.  We got 110 not including all those little ones in the strainer.  A wonderful harvest this year.

Random Tidbits

Although, it's super convenient to use potatoes of some sort in a breakfast casserole, this one was delicious.  I have been trying to limit the carbs, sugar/starch etc. lately.  It makes a 9 x 13, but you can cut the recipe in half for a smaller family.  I cooked sausage vs. buying pre-cooked, and of course organic. 

The recipe is online at Pretty Providence, and the recipe is called "Best Breakfast Casserole."  Although I can't say it's the best of any casserole I've made, it is very good.


To relax yesterday, I made more of the jar openers.  They are becoming popular.  I have two more pending orders.  One wants 4 of them and another wants at least 2.  I think I will make one for the camper for us too.


I am waiting to see if I can get 16-20 bell peppers ripe all at the same time to stuff.  I may have to do it in half batches this year.  I had to dig and dig for Mama Pea's recipe for stuffed peppers.  We haven't had them in the freezer for the last 2 gardening seasons.

Only one zucchini and some cucumbers (planted 3 varieties of cucumbers this year).  The rain helped start a few more on the plants, so here's crossing my fingers we get more squash.  The yellow is on, but the plants are smaller than zucchini this year. 

I figured my green beans would be done, but the rain brought on a ton of blossoms. If they don't amount to anything, I'll be yanking the plants for the season.

As for the chickens and the chaos, we are going to clip their wings vs. spend a load of cash to re-do the coop.  Much easier and I surely hope they can't fly higher than the fence.  They are really giving me a run for my money.

I was given a pass on having to make dinner last night.  My husband took me on a motorcycle ride and dinner out.  A much needed ride after all the stuff going on here lately.
