Camping Trip!

Got back from our first camping trip last night.  Puppy spent the weekend with his buddies Zuri and King, and with the kids. We really needed a weekend of camping too.  I took along some home canned hot pepper relish too.  We had guests Friday night, so I made some foil packet dinners to cook over the campfire with sausage, potatoes and beans.  Breakfast was easy to pack, meats, eggs, potatoes and bread for french toast. What's your favorite "go-to" natural remedy to take in your "first aid" kit when traveling.  I take chickweed salve and homemade neosporin, and sometimes mullein tincture.  Would love to know what you suggest and why.  I'm considering digestive bitters next trip. Friday morning I also baked us some Einkorn peanut butter cookies to take with us.  Mmm! Breakfast Quesadillas

I'm thinking of warmer days ahead this morning. I'm taking these for a camping breakfast this year - Breakfast Quesadillas. You can make the eggs before you go - scrambled.  You can cook the onions and green bell peppers (with "fire it up" herb/spice mix).  You can cook you bacon ahead and crumble it.  You can make the tortillas ahead and take them.  Just assemble with some shredded cheese and heat in a skillet.  Yum.  Hubby liked his with sour cream and salsa.   You can make these with just about any ingredient.  I love this idea, and I have no idea why I haven't made them for breakfast.  Easy, quick, and easy to transport for camping too. Next time, I will make my tortillas larger, so I can fold them over to make our quesadillas.

Camping Trip ~ Campfire Mac n' Cheese

We've been "off line" for a while so these are posts will catch up all up to date.  Hubby took us camping!  Oh the fun! This is the fire ring that we cooked on.  We bring along a tri-pod as well.

Campfire Enchilladas

We made these the other day, and that is not my homemade tortilla in the photo (sadly).  I had purchased food supplies to go camping, so we ended up making "camper" meals this week instead (minus the camping).

Raisin Bread and other tidbits

I decided to bake my first cinnamon-raisin bread. Yes, that is today's big news story.   This "pioneer" woman has not baked this tasty treat until yesterday.
