Corn Freezing Day

 



We had a beautiful evening sky last night.  We were out shucking corn on the front porch, and Daughter E pulled in for a visit.  We fed her and she helped shuck some corn.



 
My tool to clean the last of the pesky hairs off the corn - inexpensive bottle brush.  I learned about this a few years ago, while watching the cooking channel.  Works great too.

It's weird to be freezing corn today by myself.  No kids to help, and we joked about my husband taking a vacation day to help.  I'll get it done, and the chickens are going to be very happy today.

I did however, get a good portion of carpet cleaned upstairs.  It has to dry, get vacuumed again, and possibly spot cleaned.  I hope to hire a few strong men to move the treadmill up there.

Corn ~ Tiger ~ Cake and other ramblings

I have gotten 70 cups of corn in the freezer, and have 10 more to get done today.  After that I pass out the remaining ears of corn to my family and friends.



When I start removing the corn off the cob, Tiger comes a runnin'.  He is so funny.  I gave him an ear to chew on and when he left the kitchen I picked it up.  Later he came back and I ignored him.  He got around my leg and was back kicking me and then bit me.  Ha ha!  I gave him another.  





We have our daughter's boyfriend's family coming for dinner tonight, so I baked another zucchini cake.  I will put a glaze on this one before they arrive.

I finally got in touch with Mom.  She is so funny.  Always out and about.  I wanted to ask what she needs for her birthday, but she refuses to let me gift her anything.  If I get more zucchini, I'll be delivering her cake and something else homemade.  She loves homemade/handmade anything.

Today, we un-bury the tomato patch.  It's full of grass.  No big deal, but with the tomatoes turning red, I need the grass out so I don't get ticks on me.  I wear muck boots, but still.

I got an order for 4 of the jar grippers I make.  I need to make 2 of them to get the colors she needs, but I'm thrilled for the sale.

I'm trying to locate organic / non-gmo corn grits.  They are sold out on the site I order from, and Amazon has prices so high it's ridiculous.  If you know where I can find them, please shoot me a comment.

We are all getting through day by day.  Minute by minute.  When I am busy, I am fine, but when I stop I have anxiety and whatnot.  Daughter is having a rough time yet.  I do thank you all for your kind words, good mojo and prayers.

Freezing Corn

First, I do not like the new blogger at all.  Oh my golly.  I reverted back to the old, sent my feedback, and hope they get the picture.  


It's that time of year again for freezing corn off the cob.  I'll be back at it today.

We had a few beautiful weather days (days I call great camping weather).  My tomatoes and hot peppers don't like it, but it's been nice to have a break from the heat.

Time for sweet corn and blueberries

Monday was not about the garden, it was about dropping another $200 for Youngest - school uniforms, photos etc.  It will still save us in the long run, but man.  School is not cheap.  That doesn't include her shoes, supplies and other necessary clothing.  They told us we'd spend only 1 hour there, but ended up spending 2 hours, and it was a 30 minute drive there and back.  We didn't get home until almost 2 pm.

Rain was in the forecast again, but the weather man has been wrong this year.  So wrong.  We need more, so I was hoping they were right for a change.  We didn't get any, and it's in today's forecast too (slight chance).

I had food to freeze, and a lot of it.  Despite rain and dry/hot weather, the cucumbers, zucchini and other stuff needed dealt with.



Three bags (slightly short of 3 bushels) brought home.  We'll need a tractor to plant this much sweet corn in the future.


The fun started.  



Youngest and I shucked the first bag while Hubby went to work on a call out. Tuesday I got a double batch of corn frozen, but we have two more bags to shuck yet.  Here is my recipe to freeze corn - freezing corn.

I finally found not one, but two sources for MI blueberries.  The last time we were able to obtain them, the 10 lb. boxes were $31.00.  The price this year, despite a bad blueberry year was $27/10 lb. box.



Twenty pounds of deliciousness.  I'm so happy to find a source and so happy to restock, but like I said, things are all happening at once.  It's a good deal too.  They were selling them $7/qt.


The minute I started working on the corn, Tiger was meowing like crazy.  To get him to stop, I gifted him a cleaned corn cob, and he loved it.  Soon after, he was napping peacefully.  He's such a cutie.

The chickens got to clean off some corn cobs too, so everyone was happy.  We even had some corn on the cob with our dinner last night.  

Today is going to be super busy, packed with work, so I'm praying I can get it done.  I'll have to clean up and then make dinner too.  But first, the garden.

I had a plan. . .

I want to say to, "don't ever have a plan" but some plans work out.  Just no this plan.
 
 I wish I had better news than this, but sweet corn is in full swing.  

I saved the weekend for this big job (which ran into this week due to me requiring so much help - lifting the bags of corn, shucking, lifting the pan of kernels to dump into pans to cool etc.)

However.  Plans change.  I felt dizzy all weekend, and felt I was just needing rest.  I took a lot of naps, and Sunday was the worst.  Monday I got into my doctor (or a new one rather).  Hubby went to his eye doctor and is off work.  

Diagnosis?
