Motivation Returns ~ From Pile to File Recipe (Sweet Potato Egg Cups)

We have a lot going on now.  Woot!  I heard it from my husband's mouth!  His goal is to finish the hallway completely this weekend.  What's on the list?  Well, for starters, I have boxes in the hall (again) that need delivered.  After that we finish the hallway flooring and trim.  I'm excited to see him motivated, but the weather may have something to do with that too, ha ha!  Although it's a bit chilly this morning.

The purge continues, but at a slower pace unfortunately.  I have done it again - printed new recipes to try.  I want to switch up our breakfast meals, try a few for larger group meals, and some for potlucks/summer cook outs.  I'm having a family get together one way or another (for whoever wants to come).  I miss family.

You may see lack of posts from now until later in March.  There are two possibilities for the bathroom remodel.  Not sure which way we'll go.  


New Recipe!  Baked Sweet Potato Cups (Skinny Taste online).  The next time I will add garlic powder.  So good!  It's a keeper!  The only difference with the instructions, is that I had to bake the eggs longer (18 minutes for mostly cooked yolks), and I rotated the pan.  The one egg that was under the oven light was baking faster.  Will definitely keep this on the breakfast menu.  Oh, I also used parchment paper cups vs. non-stick spray, and it worked great.  The sweet potatoes do not look orange because they were organic hannah sweet potatoes (have a white color to them).

Finally got around to making kamut flake bars.  I added dried cherries, pecans and hemp seeds.

Had to drain a jar of homemade vanilla to make the bars though.

I have more recipes to try, but need a few ingredients.

I've started two trays of seeds, but need two more trays and soil.  The sun is shining most days and it's been so enjoyable.

Turkey Lentil Frittata

Here is the recipe I promised to share.  The original recipe is linked, and below I will explain what I added.

I found the "protein packed" breakfast recipe online at Lentils.org (click Lentils.org to the left to go directly to the recipe), and changed it up a bit to try. Lentils for breakfast?  I mean why not, I add black beans them too.  Lentils are high in protein and low in fat, and provide many nutrients as well as fiber.

First I made my lentils the day before, and that way I had that job done.  You need cooked lentils to make this frittata.



I still have homegrown sweet potatoes (they lasted much better than all the other potatoes too).

Random Tidbits ~ Snow Showers

So I made sweet potato ginger brownies for the first time.   I used a recipe online using coconut flour (Civilized Caveman Cooking).  I have to admit, it was not our favorite.  Everyone still ate it, but I was hoping for a "wow" taste so I could freeze some, utilizing the sweet potatoes.  One daughter said, "hm, they are interesting."  Ha ha ha!  They have the top like a brownie should, but they tasted more like a texture of a cake.  Moist.  Healthy too.


I took a day off from the garden (more on that later), and went through half the stack of library books I have right now.  Oh my.  I put a few on my "wish list" and found some Christmas gift ideas for 2018.    The above photo came from one of the books, and I just had to snap a photo.  Ya' know, considering I was bitten.

I took the day off from "hard work" but still did laundry before the rain arrived.  I also made a double batch of sweet potato chili.

 Why you ask?  Well, we had our "Vet Tech" in training Daughter over for a 21st birthday celebration (Army Daughter joined too).  Birthday Daughter requested it and is too broke to make it on her own, and of course I have sweet potatoes.  It's a family favorite and they will fight over the leftovers.  I sent some home with both girls, in canning jars.  And I sent home some homemade buttermilk cornbread.



My "Grad" Daughter baked her sister some birthday cupcakes with my Grandma's frosting recipe.  The kids love to play with all the cake decorating supplies she handed down to us.  I actually learned how to decorate cakes by simply watching my Mom.



Another magazine arrived.  It's not my subscription, but I get to read it too.

I know this post is mind-numbing.  Nothing spectacularly interesting.  It rained all night, so that limits my outdoor work.  Hubby pulled an "all-nighter" and isn't even home yet this morning, as I post this.  He'll sleep most of the day, so that puts more limits on splitting wood. 

Hm.  I've just about given up on the "extreme clean" of my utility room.  Hm.  I have some areas in the kitchen that need deep cleaned, and more carpets to clean, but I'll need quiet projects until about 2 or 3pm. 

It's a brisk 37°F this morning, with "snow" showers.

 My writing room, or our "study" is pretty cold.  There are no heaters in there, so I may toss some wood in the wood stove today.
