Fair Food Craze ~ Homemade Sopaipillas

Apparently, in this pandemic time, people are going crazy over "fair food."  One restaurant started it.  They dedicated one night for serving a drive thru with just fair food.  I didn't go, but the entire town (Big City) went.  I heard there was a 3-4 hour wait in line.   The next day, the town announced that fair food vendors will be set up this weekend at the fair grounds for selling food.  I am sure that will end up a crowd too. I decided to do a fair food night at home.  I made homemade corn dogs with real beef dogs and homemade batter. We also made hand cut fries to go with them, but that's not all.  I started us out with a batch of homemade sopaipillas, an old, old high school recipe from Spanish class.  We used to make them and sell them at lunch at school to raise money for our Spanish class.  They are like mini elephant ears you'd get at the fair.  Just for the update, all the fairs have canceled their fair t...

Rain ~ Cold Temps

Rain moved in yesterday as predicted. Our temperature is to drop considerably tonight.  They say the rain will go on for 36 hours. I went from "I'll just clean the hallway" (where people just drop stuff on the floor coming in and the boot pile is a mess), to "I think I should make...." and here is what got done . . . Homemade English Muffins were made. Einkorn Peanut Butter Cookies were made. Einkorn pizza dough was made for the freezer. I would have made pie crust crumbles, but I need to get some flour.  It remains on the re-stock it list. I got zero cleaning done, other than dishes.  Our 20 year-old daughter came out for dinner, and helped with making it.  I was totally excited she wanted to help.  Although I told my husband he would only get homemade corn dogs once a year, he got them.  I told them no "french fries" though.  They got oven roasted potato wedges and they were fantastic.  I used a recipe online (...

Good Weather

The weather turned absolutely beautiful.  First things first - weed.  Oh where to start? The garden of course.  Woke up to a very nice, camping weather, of 59°F with a high of 80.  This week will be so much better than last week's heat wave. By the way, daughter's school uniforms were free this year.  Woohoo to that!  She got two of them too.  I didn't have to fork out $180.00 like last school year.   It's sort of bittersweet this coming year.  Last year for her and last kid to finish high school.  They are growing up way too fast. We have bats in our chicken barn.  I found a baby dead on the floor by the door.  I guess they love our place to come nest and have their babies.  I just hope they leave soon, since the babies are getting born.  We've talked about building a bat house.  We may need to now.
