Sweet Potato Breakfast "Bowl"

Today I am sharing how I made these delicious breakfast "bowls" by starting with sweet potatoes. The first time I made these, I used organic hannah sweet potatoes, and this second time I used locally grown sweet potatoes (which both were very good). Prepare fresh spinach, by cleaning it, and then slicing it.  Set aside.  I used two bundles of fresh spinach.  Set aside Prepare homemade cilantro-lime sauce. In a food processer, mix 2 full cups of cleaned organic (or home grown) cilantro and: -1/2 cup organic plain Greek yogurt (I have yet to use homemade for this), plus more to thicken to your taste -juice from one lime (not the bottled kind) -1 small can of organic salsa verde (or homemade), or about 14 Tbsp.  (cut the recipe in half to reduce the amount, but we really like the sauce on this breakfast dish) -2 cloves of garlic, minced -about 1/4 tsp salt and 1/4 tsp pepper Process until smooth, and like I mentioned above, add extra yogurt to make your sauce as thick ...

Crockpot Creamed Corn

  A winner in the "tried new" recipe category.  So good!  The only ingredient I did not add, was the red bell pepper, because I didn't have any in the freezer at the time.  I will be adding it and making this again.  A keeper recipe. If you freeze your corn off the cob with butter, you can use that and add less butter too.  I save bacon grease, so I used that, and already had some bacon cooked that was leftover from another meal.  The sugar could be left out too.  I mean, it's only 2 Tbsp, but we freeze our corn with butter and sugar so I can leave it out. A win-win recipe if you freeze your corn off the cob, and freeze your garden bell peppers.  Saving your bacon grease is always a frugal tip I share often. Broken Waste Funnel ~ BBQ Sauce ~ Bell Peppers ~ Tidbits

Here is a photo of the waste funnel that goes to my food strainer/sauce maker.  There are 3 plastic tabs that secure it onto the metal strainer.  One tab broke off.  It has happened before, and I have talked to my husband about upgrading to a metal food strainer.  I have now figured out how I broke it off too.  If you are not careful when you slide the  the piece on, that is the splash guard/strainer, it will brake those tabs off. The white tray that drains it off into your pot is what I am talking about.  Now my gasket has gone bad that is inside the metal stand part of it, and where you insert the handle to hand crank it.  Juice from the tomatoes now seeps out, so when I crank I have to wrap a towel around the base.  I could not replace the funnel for a year, as it was out of stock, and now the gaskets are out of stock.  With the amount of paste tomatoes we grow, and the amount of sauce making I do, I think an all metal food strainer/s...

Tomato Days! ~ Littles are Laying ~ Zucchini Pizza Bites and other Tidbits

  Welcome to Crazy Lady's Kitchen, where the days start with tomatoes, and end with sauce anything! My Weston sauce maker waste funnel broke!  Of all the wrong times to happen.  The funnel is a think plastic one, with plastic tabs to attach it.  It broke before, and they were out of stock for over a year.  I saved my old one, and hold it on, but now the price to replace it is a whopping $21.79 with shipping.   I'm looking into getting a different food strainer/sauce maker.  What is the brand you all use (for those who have one)?  If I have to replace the funnel every year, I might as well look into a better overall sauce maker.  I use it to make applesauce too.   We brought in another 80 pounds of past e tomatoes.  I canned pizza sauce, and taco sauce.  I've been crazy busy, with long days in the kitchen.  Top that off with doing all the dishes, and trying to keep up with normal housework, incl uding laundry!...

Bell Pepper Eggs in a Nest

  No part of the bell pepper was wasted either.  The parts that I could not make a ring out of, were sliced for snacking, and the seeds went to the chickens. Why have I not made eggs in a nest this way until now??   By the way, one was not enough, ha ha!  I made each of us two. I love cooking recipes with bell peppers.  These are delicious!  I cannot wait for the fresh garden goodies to make these all summer.   I will have to tweak the chicken "sausage" patties however.  I just picked a random recipe online.  It was on the dry side, with little to no flavor.  I prefer the turkey ones over these. Do you have a good chicken breakfast sausage recipe?  I feel you almost have to add a bit of pork sausage to it.  When I make turkey patties, they are more flavorful.  I may go check my recipe and see if the ingredients to flavor them are different. I know I put sage in these, but like I said, just no flavor.  Health...

Bruschetta in a Jar and chit chat

  I decided to try another recipe from Ball.  Hopefully it will taste as good as it sounds.  I'll be doing a taste testing before making it again (if I do make it again).  Has anyone canned this?  (that is pizza sauce in the back) The recipe is in this book: You can also get it online here . Bell peppers are also getting flash froze, but golly I have to keep my brain in order to remember to get them bagged before I forget they are in there.  I doubt I will be getting enough to freeze stuffed peppers this year.  Due to the weather they are small and we are not getting as many as a typical year. Not sure if you all heard, but the BP oil company was sold to a Canadian company.  I believe the actual switch will be this coming December, and our two younger girls will lose their health insurance with us.  Not sure this is going to be good for us or not, but it's happening.  The girls have been told, so they are working on getting health insura...
