A Day of Sunshine




 Making things easier, I decided on a steel cut oats breakfast (crock pot) recipe.  I had apples and raisins and all the other ingredients needed.   I also made a pan of kamut flake bars for snacking (recipe is online with the Kamut brand).  Once that was checked off the list, housework resumed.


We had a full day of beautiful sunshine.  It felt great to be out in it.  I however, forgot to take my camera.  I did snap a photo of the early sunrise.


I lied about the baby blanket border.  After finishing round 1, I looked at the pattern and saw that it has 4 rounds.  It's been the longest baby blanket project, but will be able to soon say I finished it.  I'm on round 3 right now.  

I'm trying to decide what color of baby blanket to gift our grand-niece.  I have a baby green one done, and a light purple one.  I'll check on what color booties I already have, but I think I depleted the supply (lots of babies this year).

We ran out of leftovers, so it's back to the kitchen in regards to a dinner.   We are also needing to split wood tonight.  I better get my husband's breakfast, lunch and coffee packed.  He needs to leave for work soon.

Motivation Returns ~ From Pile to File Recipe (Sweet Potato Egg Cups)

We have a lot going on now.  Woot!  I heard it from my husband's mouth!  His goal is to finish the hallway completely this weekend.  What's on the list?  Well, for starters, I have boxes in the hall (again) that need delivered.  After that we finish the hallway flooring and trim.  I'm excited to see him motivated, but the weather may have something to do with that too, ha ha!  Although it's a bit chilly this morning.

The purge continues, but at a slower pace unfortunately.  I have done it again - printed new recipes to try.  I want to switch up our breakfast meals, try a few for larger group meals, and some for potlucks/summer cook outs.  I'm having a family get together one way or another (for whoever wants to come).  I miss family.

You may see lack of posts from now until later in March.  There are two possibilities for the bathroom remodel.  Not sure which way we'll go.  


New Recipe!  Baked Sweet Potato Cups (Skinny Taste online).  The next time I will add garlic powder.  So good!  It's a keeper!  The only difference with the instructions, is that I had to bake the eggs longer (18 minutes for mostly cooked yolks), and I rotated the pan.  The one egg that was under the oven light was baking faster.  Will definitely keep this on the breakfast menu.  Oh, I also used parchment paper cups vs. non-stick spray, and it worked great.  The sweet potatoes do not look orange because they were organic hannah sweet potatoes (have a white color to them).

Finally got around to making kamut flake bars.  I added dried cherries, pecans and hemp seeds.

Had to drain a jar of homemade vanilla to make the bars though.

I have more recipes to try, but need a few ingredients.

I've started two trays of seeds, but need two more trays and soil.  The sun is shining most days and it's been so enjoyable.

This and That

I had so much mundane tasks to do Monday, the onions never made their way to the dehydrator.

 Tuesday they finally got into the dehydrator.  

My yarn totes are made their way back to my bedroom closet sadly.  They were headed upstairs until one daughter moved back in last March.  I can't live with my office full of totes, so I'm making room (again) back in the closet. Then I can use my office once again.








I made 3 new recipes.  We loved the rosemary walnuts and the Southern sausage enchiladas with sausage gravy.  We will be cutting the Kamut granola bars and tasting them today.  All recipes are online.  I am thinking of trying a new recipe for dinner tonight.  The breakfast dish I made a few changes - left the seeds in the jalapeno, and I used butter (vs the grease left from the sausage) to make the gravy.  The original photo of the breakfast dish makes it look like you have lots of ooey gravy, but you don't.  It tasted great though.

I'm slowly cleaning the fridge again.  One shelf a day.  It's been crazy lately with trying to keep things stocked up for whatever happens in this crazy year.
