English Muffin Rings

Over about a year ago, I looked into buying a set of baking rings for English muffins.  I guess I just sort of forgot about it, as I had not baked some in a while.  The above photo is making the English muffins without the rings.  The dough would rise nicely, but spread outward and delicate to move from oil sprayed foil to the pan (as directed on the original recipe). I ordered myself a set and gave it a whirl.  Instead of using foil, I used parchment paper, cutting it into 8 squares.  I lightly oiled them and put the dough in the rings during the second rise.  I also oiled the inside of the rings. I then could pull off one at a time delicately, and boy did I get a thicker muffin.  Will do it this way from now on. I also used the rings to fry eggs for muffin sandwiches.  Works great!  You do need to oil the ring, but it makes eating the breakfast sandwich much easier.  Love my new kitchen gadget.

Rain ~ Cold Temps

Rain moved in yesterday as predicted. Our temperature is to drop considerably tonight.  They say the rain will go on for 36 hours. I went from "I'll just clean the hallway" (where people just drop stuff on the floor coming in and the boot pile is a mess), to "I think I should make...." and here is what got done . . . Homemade English Muffins were made. Einkorn Peanut Butter Cookies were made. Einkorn pizza dough was made for the freezer. I would have made pie crust crumbles, but I need to get some flour.  It remains on the re-stock it list. I got zero cleaning done, other than dishes.  Our 20 year-old daughter came out for dinner, and helped with making it.  I was totally excited she wanted to help.  Although I told my husband he would only get homemade corn dogs once a year, he got them.  I told them no "french fries" though.  They got oven roasted potato wedges and they were fantastic.  I used a recipe online (...

This and That ~ Pumpkin Pasta Dish

As soon as daylight hit, I noticed these ladies were out wandering.  And later a 4th.  Hm.  Daughter didn't do a head count, but they are all there.  Whew! The new handicraft adventure I wrote about (several months ago) is still on the list, but delayed.  It may be a winter project.     Puffed pear pancake was enjoyed for an after school snack vs. breakfast.   Again, I used 2 pears. Apples would be delicious in this too.  Although I only have one kiddo in school, it's the perfect time of day to make a sweet treat, and double it as a dinner dessert.  And utilize our homegrown pears.  Right now, organic apples are $5.99/bag (3 lb.), so I am patiently waiting on a sale.  I am hoping our apple trees produce next year.  The herbs are getting full attention this week.  Sage was dehydrated. Vanilla ~ Muffins ~ Pampering Myself

Homemade vanilla extract was refilled.  I go through it very quickly at this homestead.  However, as gardening season sets in, I won't have all this time to bake with (probably a good thing). Enjoying another batch of homemade English muffins.  These don't have a lot of "nooks" and "crannies" but they are delicious.  The trick is to only knead the dough a few minutes to keep it soft. And just so you know I am taking time for myself, and pampering myself .  I took that last glass of bubbly (from the pea dish night) and too k it to t he bathroom....   ....and had a nice relaxing soak in the tub with essential oils.  I had some candles burning and rejuvenated my body and soul. Momentarily. Today's it's back to that tile floor.   Or not.

Einkorn Flour ~ Baking and English Muffins

Upon learning from a few blo gger friends about eink o rn flour, and the health benefits (and less gluten), I had to try some. I first checked the library s ystem for the recipe book, but could only borrow this one: I wasn't able to borrow the other cookbook einkorn has.  In fact, there was only one copy of this particular book to borrow from our inter-loan system (from other area libraries).
