Mexican Corn Bread

 

I had all the ingredients to make this (for a potluck that I did not make it to), so I did, and sent most of it to work with my husband.  It is not diabetic friendly.  It is very good however.  I saved some for my own lunch (comfort food).  It is "corn bread" however.  There is a layer of bread then meat/veggies then more corn bread on top.  It's more of a side dish for your next Mexican meal night or potluck.

Anyway, you top this with sour cream, or whatever you'd like, and is perfect for a potluck dish for a Mexican food meal.

The actual recipe is online, but we adjusted it with organic ingredients.  Recipe is online with "Bake it with Love."

Did you know you can make homemade "jiffy" mix?

I also make homemade taco seasoning.  I have been doing this for years now.

"Rotel" can be substituted with home canned tomatoes and added organic chilies.

You can add more flavor by adding diced jalapeno to the ground beef mix as well.  So good, but not good for you, ha ha!  Perfect for a Mexican Fiesta!  

I'm making a new recipe tomorrow for a Mexican dinner.  It starts with a chuck roast in my crock pot.  I'll update after we taste it.  My husband requested it.

Sunrises ~ Tidbits

 


We have had some beautiful sunrises this week.  It makes me want to be outside and enjoy the warmer weather.  The evenings have been cold though.  Yesterday we hit the lower 60's, but with a wind warning.  Today thunderstorms move in.


My wonderful husband had these delivered on Valentine's Day.  This is big!  We live in the boonies, so he paid greatly for these beautiful roses.

I tried a new recipe.  I forgot to take a photo of it, but took a picture of the cookbook.


It's in one of my fix-it and forget it cookbooks - Enchilada Shredded Chicken.  I served it over quinoa (with diced jalapenos, oregano and cumin - I didn't have cilantro).  A nice recipe for a Mexican Potluck Meal.  I honestly don't know how this would be good on a tortilla, unless you drain the liquid off at the end of cooking.  Anyway, we topped it with some shredded cheese and sour cream.  Delicious.

The part for the stove has arrived.  It most likely will be installed this weekend.  I'll update you on that when it's done.

Half of the hallway is cleared of flooring tools and what not, and swept and mopped.  The other half remains full of tools for my husband to deal with.  I started to clean woodwork, to prepare for primer.

It's been nice to see the egg basket filling up again.  We are so thankful for this.  We changed their feed, adding black sunflower seeds and more supplements.  I am working on adding more to their diet - more on that soon.

Question ~ From Pile to File Recipe

 Has anyone  purchased this book?

“The Medicinal Herb Grower” book–volume 1, by Richo Cech

I am unable to borrow it from our library (or interloan).  I am wondering if it's worth purchasing, considering I have purged a log of my books recently.



Tried a new dessert recipe.  I had some orange gelatin on hand, so it was a go for me.
(Trying this brand for the first time too)


I had all the other ingredients oddly.  Results?  Very good!  Although my husband says "more pecans" ha ha!  He does love pecans.

Hot Taco Dip


(So good, I forgot to take a photo until it was almost gone)

1 can organic black refried beans
8 oz. organic cream cheese (or homemade)
8 oz. organic sour cream (or homemade)
2 Tbsp. homemade dry taco seasoning mix.  (or one packet from the store)

Mix all ingredients, spread into a baking dish, top with about 1 1/4 cups of shredded organic cheese of our choice, and bake at 375°F for 20 minutes. 

Dip organic tortilla chips into the dip and enjoy!  I'll be doubling this next time.

Meal Delivery ~ Creamy Sweet Potato Salad (using two fresh herbs)

I spent yesterday afternoon driving the 30 mile round trip to the "big city."  I delivered meals, to not only Dad, but Mom too.  I had spent a few days in the kitchen with all four burners going and one crock pot.  I always deliver a "breakfast" meal to Dad too. 

Meals included a new recipe ~ Creamy Sweet Potato Salad.  Have you ever made a potato salad with sweet potatoes?  This was a first for me.  Easy and delicious.  It went very fast too. I know everyone but the one "vegetarian" daughter (who won't eat sweet potatoes) loved it.  I'm still pushing her to atleast taste it.  If there is any leftover today.


I can't say I followed it exactly, but pretty close. You bake the diced sweet potatoes first.
