Mashed Potato Squash ~ Roasting and Freezing Trial #1

  Mashed potato squash was a new garden treasure to grow last summer.  There is very little information about it online, and very little information if it freezes well.   We do not have a root cellar, so as of now, freezing our roasted squash is are best option at preserving it for the winter months. I roasted the last of our mashed potato squash, and allowed it to cool.  I scooped out the flesh and froze it.  I know it will thaw somewhat watery, as it is that way after roasting it.   The plan will be to mix it with pureed squash, add it to tomato sauce, or other dishes.  I am not sure if it will not be solid enough to enjoy on it's own, after thawing. I'll update as we thaw and use it in our meals.  I purposely waited to roast them, thinking it would help heat up this house. Early May Blooms

Dianthis I forgot what these are called.  I think it's called Alpine Columbine. Tulips still in bloom. Sage starting to bloom. A dwarf variety of phlox. Chives   We have a lot of purple blooms this spring, and a few pink, but there is one tiny yellow one too.  Last June I planted some half price rannuculus bulbs.  I planted out of season, and hoped for a few blooms.   We planted a few blue delphiniums, but so far I do no see any blooms yet.  I'm hoping they survived winter, but I did lose a few dianthis that I had for several years.  I also have one blue bell type flower, that I have had for about 15-16 years.  I am hoping it also survived this past winter.   Early May Blooms   © May 2024 by  Kristina  at  Pioneer Woman at Heart

Happy Homemaker Monday

  The closet "extreme clean" is still going on.  I'm impressed if I pull at least a few items a day around here.   My green onion is in full harvest due to the recent weather.  I could not let it be ignored with the twist of weather today.  I made a batch of fresh green onion/parsley pesto.  I plan to use some in our breakfast this morning. Compost has now been added to the gardens.  I have yet to pull the bean fence, but we have a few days before tilling is done.   I think this year has been the earliest to get these jobs done, and I am thankful for that.  In May, it's typically hit or miss weather for getting planting done.   Today I am joining Sandra at Diary of a Stay at Home Mom.
