This and That

  A beautiful sunrise from Monday morning.  The rain moved in, and so did the freezing rain.  Now the fog has rolled in. I put my big girl bloomers on, and watched YouTube and read a few "how to drywall patch" a hole.  One job done, but two more drywall patches need done (from moving a light switch and moving a ceiling light fixture.   Add this to my "what did I learn new" this year list. I finished painting one more entire door and two door frames, including trim inside each room and outside.  The door to the garage has been primed.  I'm making progress, but feels like it's taking forever to finish. I finished the pink/white lap afghan. They will all be donated to a cause, and soon I hope.   Low-carb egg, ham and cheese breakfast quesadillas.  I used to make my own tortillas (so many varieties), but my husband brought home carb friendly ones from the store.  I am using the ham we were given at Christmas, that we diced up and f...

Another Re-Stock ~ Chicken Freezer Treats ~ New Recipe Tried and other random tidbits

  Although on the "rainy day" list, I got a batch of meatballs restocked and in the freezer.  I like to do this early in the year, before the freezer is too full to put trays of them in there to freeze. To help cool off the ladies, I filled a muffin pan with veggies and water and froze them for some delicious freezer treats. Our internet has been working, but it's slower now.  I hope they get all the bugs out soon.  Several people are having issues. More stores and restaurants have been closing numerous day.  They cannot hire enough employees, as no one wants to work. We tried another new recipe - Slow Cooker Jalapeno Dip .  I used frozen jalapenos from the garden (vs. canned as the recipe called for).   How did it taste?  Very good!  You can control the amount of heat by the amount of jalapenos too.  When I freeze my jalapenos, I leave the seeds in.  We topped this dip with freshly diced green onions.

Random Tidbits

First off, I just want to say that I don't write my blog to brag, boast, nor compete with any person.  I simply share my experiences we go through in maintaining a self-sufficient life, processed food free, healthy, using natural remedies, and sometimes funny homesteading life.  I consider myself unique, one-of-a-kind, and love to learn from others. I am inspired by others, and I hope I myself, create inspiration to others.   This morning's sunrise.  Another beautiful start to my day. The weather is cold.  Brr.  Not cold enough to turn on the heat, burn wood or get out the carhartts, but it's cold.   Garden work resumed, but with less hours, and no digging.  Hubby promised he'd help after work a few nights to ease the strain on my back.  He is always so tired when he gets home. How does your garden grow? ~ SIL Update ~ Meatballs

This was a post that was to get posted a few days back, and got lost in the shuffle.... The zucchini is on, and the straight neck yellow squash is also on.  I've already started harvesting it.  Cucumbers have blossoms now.  If I planted as well as I think I have, we won't have to plant pickling cucumbers next year. My 40-some foot row of pumpkins are doing very well  (they have doubled their size since I took this photo).  You don't see the entire row, because I am still weeding it.  Vines are about 4 foot long - two varieties of organic non-gmo pie pumpkins.  Last year, I planted the pumpkins in with the popcorn, and we didn't even get blossoms on them.  That was disappointing, so this year, I planted them in their own area.  There are no squash mounds in the tomatoes this year either.  Hubby tilled them up last year, so I don't even take those chances anymore.
