I tried it, so you don't have to, recipe

 Breakfast Lasagna
(there are more versions of this online)

The recipe is found on a YouTube video.  It uses a lot of cheese to make this a "zero" carb recipe, but not low in calories.  You start by scrambling 18 eggs.

Gravy is made with breakfast sausage, cream cheese and beef broth.   Like I said, it uses a LOT of cheese.


I'm not a subscriber, so I could not get actual measurements from her recipe, so I "eyeballed" it.  I used a mix of mozzarella and pepper jack, and some Parmesan cheese.

The ham I used.  Honestly, didn't feel one 6 oz. package was enough, but I wasn't sure on the size of pan to use either.


Here is my review:  I used a 9 x 13 inch baking dish.  It was too big of a baking dish, to get even layers.

It was very good, but I will use my own milk based sausage gravy next time, and will utilize frozen diced ham we saved from the last holiday season.  Overall, very good, but you could make your own changes to suit your taste.  You can cut it in half and make a smaller batch too.

The final look after it came out of the oven.  I heated it at 350°F until it was heated through out the dish.

I guess all of these "zero" carb dishes are full of cheeses, so we will cut the cream cheese out and use homemade breakfast sausage gravy next time.  I use very little flour to make mine anyway.

It's a great idea for a breakfast for a group, or gathering, and it re-heats nicely.  It's perfect for a brunch as well.

 It didn't last long here, but again way too much cheese for us.

Crazy Busy Puttin' Up Time

 It was finally time to start freezing tomatoes.  I cleared off the kitchen table.





I also put rosemary in the dehydrator and snipped green onion for freezing. Our green onions have superb flavor this year. It's  a race against the clock this time of the season.  I'm trying to get the tomatoes in before it's too late.  I baked a breakfast for us, for the next few days too.

I heard some restaurants are not offering green onions on their menu due to shortage of supplies.

We woke up to a very foggy morning.  The air is very cool, but they say we'll heat up again.

Canning Day ~ Leftover night

It's another canning day today.  The paste tomatoes are rolling in and I have 38# in my kitchen.  

Looks like we get to enjoy leftovers again tonight.  I made a sheet pan chicken fajita dinner and it I am loving it.  Sheet pan dinners are quick and meat and veggies, and less dishes to wash.  Work is buying lunch for the employees, so I only had to pack breakfast for my husband.

Breakfast was thrown together with what I had - zucchini, onion, garlic, eggs, tomatoes and fresh basil from the herb garden.

Organizing my Yarn and other ramblings

 The first thing I needed to do was bake a breakfast for us.

I used the teeny tomatoes from the garden, asparagus and fresh basil for this one.  Oh, and sausage on the bottom layer.

Next?  I put up shelves upstairs and started the process of moving totes of yarn and getting that organized.  It may be a week long job (or more due to carpet cleaning, which we do plan to replace when the last kid is out), but so excited to get started.


. . . meanwhile, in the garden.



We finally got some glorious rain, so I sure hope it gives the garden what it needs to give us a bounty this summer.



My husband, Daughter K and myself went to the last day of the fair to watch the demolition derby.  We had 4 family/friends in the derby this year.  The best part is we bought pit passes and drove the truck right into the arena area and sat on the tool box to watch.  We didn't have to sit in the crowded stadium.  It was great.  My husband's Godson won 1st place and $650, our nephew won 2nd and another nephew won 3rd.  Great night.

We woke up to thunderstorms, so I am very thankful for the rain again.  It'll taper off, but it may rain later in the afternoon.  The gardens are happy.

Happy Homemaker Monday

Sunday I had some hot banana peppers a jalapenos to deal with, so I canned a batch of ....





Hot Banana Pepper Relish (Called Pepper Relish at Food.com online).

While the canner boiled away, I started on my mound of dishes I created. 



I also baked a breakfast casserole as our grab-n-go breakfast this week. A new recipe.  If it's good, I'll let you all know.

We got a good load of rain Sunday morning.  So very thankful for that too.

How I am feeling this morning . . .
Stressed. I lost two hens last night.  Apparently the newbies can fly very high.  With help we found them and put them back in the coop, but now we have to rethink the fence, put up tall posts, cover the top, and add a larger door.  I'm so done to be honest.


On my mind . . .
I have to call the dentist this morning.  A crown fell off.  Gonna be interesting now that appointments are limited.  I'm not a fan of mask wearing either.  Don't get me started on that.  I mean I touch mine a ton during one bike ride and stuff it in my purse several times, so how is that sanitary?  I watched a person drop theirs on the floor (inside of the mask fell on the floor), pick it up and put it back on his face.  The mask wearing isn't about the virus (just my opinion). It's part of the plan to keep economy from getting better (putting fear in people so they go out less, spend less), so America will blame the President, and keep him from being re-elected.  Most likely closing the bars at 10pm and causing them to lose 4 hours of business is part of that same plan?  Well, the caption did say "on my mind" so off my soapbox.
