Roasted Beet Foil Packets

  I know the instructions on this recipe are on my blog somewhere, but my searching came up empty.  Any way, I bought these organic beets at the store, but they are not the same as homegrown. Nothing is.  Homegrown is the best.   I didn't measure.  Dice trimmed and peeled beets, dice onion, and put on a oil sprayed piece of heavy duty foil (or toss in olive oil then place on foil).  Sprinkle with thyme and sprigs of fresh rosemary from the herb garden.  Wrap foil and pinch to seal it.  I place my foil packets on a baking sheet. 400°F, 60 minutes or until beets are tender.  Enjoy!  We have made these on the grill too. Roasted turkey with homemade garlic aioli sauce, and those delicious beets/onions. Here's to praying we get the new raised beds built in time to fall plant beets.  I am really gonna miss my spring planted beets this year.  

Hot!

It's been hot here. Yesterday we reached 95°F again, with a whopping high of 107°F heat index. Nothing could be done outside, but I sure had a long list for inside too.  We don't have the large air conditioner put in downstairs, so it's been somewhat uncomfortable working indoors too.  I managed to pick some radishes and garlic scapes though.

Herbal/Weed Tea ~ Jam

My latest favorite infection fighting tea.  My antibiotics (blech) were not kicking the phlegm from the sinus infection, so I brewed up 1 tsp. dried homegrown thyme and added 1 tsp. dried mullein weed and honey.  I drank this 4 x day and poof!  Much better.  Cough nearly disappeared after about 3 mugs of it too.

Tidbits ~ Herbed Omelets or Scrambled Eggs

Hubby and I were up at 5am this morning.  Had coffee on the porch before he left for work and I made him a sweet potato (more like an egg hash) burrito.  Both of us were up since about 3am. I had to laugh this morning.  He asked me to open the door so he could carry his lunch, mug of coffee and half eaten burrito out to the car (truck is still down).  I looked down and he had socks and slippers on, ha ha ha ha!  I had to tell him, "um, hun? You don't have your shoes on."  We laughed and laughed. It's operation homestead clean up again today.  I was abandoned by all kiddos, so I didn't have any help, but today I will.  More spider traps are going in place again too. I don't see that it even rained last night, so we'll dig out more porch furniture.  I put a few pieces out yesterday, but golly, there is more to tidy up than I thought.

Tuna-Corn Pie ~ A Meal from Leftovers

It's 13°F (feels like -1°F) this morning. The pups are sporting their winter coats and their hand crocheted dog scarves.  Brr. I now have a slight cough😟, regardless of resting and remedies.  I am however, resting again today, although last night I was feeling good enough to resume my exercise today.  I will do a few yoga stretches.  In the mean time I have lots of handiwork, and many library books to look over and read. I do have two good herbs here for coughs - mullein and comfrey, and will be adding more thyme to my soup today.  I will also either steam with eucalyptus or take a warm soak in the tub.   After our 18-year old babysat, she did grocery shopping for Mom, and I explained to all that I would not be going out until I was much better.  Considering what happened the last time I visited a hospital.  The flu is horrible here, and two of the little ones (great great nieces to us) became sick at the meal after the funeral and now...

Yesterday I woke up to this.... A sign fall is here to stay and winter is on the way.  Wood splitting must get into full swing here on the homestead.
