Using a Spiralizer and Garden Basil Pesto
Also, it did not make a lot. It's about a 3-4 serving dish, but it ended up a 3 serving for us, ha ha. I would double this for leftovers.
What is it?
Chicken with Zucchini Noodles and Basil Pesto
Where is the recipe from?
I prefer to cook my raw chicken separately, and not with other vegetables, when it comes to crockpot cooking. It's just me. I cooked the chicken the day before (in the crockpot), shredded it and cooled it (recipe called for chicken breast sliced).
I simply added the chicken at the end of cooking, as well as grated parmesan cheese, because I froze our homemade basil pesto without the cheese this last time.
We thought it was so filling too, and wow, so healthy.
I bought a new hand crank spiralizer about a year ago, and I (gulp) finally used it. Wow, it is so much easier than the little gizmo I used to use.

Snow ~ Side Story ~ Try It Recipe Update
The photo pretty much depicts the recent snow storm. We did get a slight bit of sunshine yesterday. I think we got about 3 inches. My husband finally got to use his drivable mini snowplow (he bought it from an auction a few years ago and never needed it). He walked in the door that day giggling that he was happy to finally try it out on snow. Ha! I have to say it worked perfectly. All those years I joked he was a collector of such do-hickies, but it sure came in handy for us.
However, I did hand shovel the side patio to get out to tend the hens (there is a side story to this) and get the mail that particular day. There was 2 foot drifts to get to the coop, and I slipped slightly on the underlying ice (which I didn't see until I shoveled). Anyway, when I put my right foot down to catch myself, it shot pain right up that already beat up leg.
I put in a call to our main doctor, and the nurse called me back. I, and I have no idea how, missed her call. I think ice packs will ease the agitated leg, but we'll get better advice when the nurse calls me back. FYI - spikes are back on my boots for the winter.
A big fat squirrel out digging for whatever he/she can find. An odd sight for winter time.I cannot wait for the garden this year. The cucumbers in the stores are not so good lately. We have been making very good at keeping the grocery list to fresh fruits and vegetables, and focusing meals on what's in the freezer and pantry.

Tuesday Tidbits
I took advantage of the beautiful weather, so I headed out to muck the coop. Didn't happen. This chicken herself, saw that the skunks did a lot of yard damage near the barn I get my straw from. I was too chicken to go in the barn. I messaged my husband (who got a chuckle out of this), and asked if he'd check out the barn tonight after work. I know skunks generally sleep in dens during the day, but I saw one out during the day last week (up the road). I didn't want any surprises in the barn. Sigh.
Update on a crock pot meal I recently made. Didn't really follow a recipe, but tried cooking bone-in chicken thighs a different way.
I sliced up some red skin potatoes and tossed them with 2 Tbsp. olive oil and 2 Tbsp. melted butter,5 cloves of minced garlic, parsley and thyme. I put that in the bottom of the crock pot, pan seared the chicken for about 3 minutes each side and put the thighs on top of the potatoes. I cooked it for 10 hours on low, and the chicken literally fell off the bone it was so tender. I grated parmesan cheese and added that to the potatoes.
I, even though I told myself not to, printed off a salad recipe to try. If I get to the store and get it made, and share if it's worthy. It looked good anyway.
If you didn't read my post yesterday, I added photos of some ornaments and earrings I was working on for the upcoming craft show. Meanwhile I continue to crochet dish scrubbies. I finished a set of boot cuffs yesterday too.

Bourbon Chicken (Crockpot Recipe)
Place 2lbs. of organic chicken breast in a crock pot.
In a bowl mix the sauce:
1/2 tsp. grated fresh ginger
4 cloves homegrown garlic
1/2 tsp. organic crushed red pepper flakes
1/3 cup organic apple juice
1 1/2 Tbsp. organic honey
1/4 cup organic brown sugar
1/4 cup home canned (or organic) ketchup
3 Tbsp. organic apple cider vinegar
1/4 cup Bourbon
1/4 cup organic soy sauce
1/4 cup water
Mix all together and pour over chicken. Cook on low for 7 hours or so.
Just about 15 minutes before serving, remove chicken from crock pot, shred and set aside.
Mix 3 Tbsp. water with 3 Tbsp. organic corn starch. Add to the crock pot mixture and stir.
Shred chicken and add back to the crock pot. Stir.
Note: I did not turn up the heat to speed up process, I simply let it sit on low, put the chicken back in, and gave it a stir.
Serve over organic wild rice or rice of your choice and top with chopped green onions from your herb garden.

Egg shells ~ Garlic in Grow Bags ~ Three New Recipes
I am thrilled to say, that some of it has green tops. Not all, but I'm hoping it all comes up. The only downside of grow bags - squirrels. I had to plant a garlic clove that a rodent dug up. Otherwise, I am a happy gal to see this.
Tried three new recipes yesterday. Due to lack of ingredients on hand, each one was adjusted.
Cod in the crock pot with seasonings and onion. Didn't have red onion, so I used white. It cooked perfectly and tasted great.
Veggie quinoa in the crock pot. Didn't have carrots, so I just made it without. Cookbook said cook 4-6 hours on low. It cooked in 4.
Low carb chocolate chip cookies (almond flour). I didn't have maple syrup for these. I didn't have any eggs, so this recipe was fitting to try. These were so good!
The first two recipes are in the cook book, "Fix-It and Forget-it Healthy Slow Cooker Cookbook. The cookie recipe is online (Almond Flour Cookies with no eggs, Detoxinista).

Happy Homemaker Monday
I'm looking through this one for new recipes. I've ordered another one for the slow cooker for "diabetic" recipes. I will wait and see which is better to buy. There are several recipes for this next recipe online, but I really like using crock pots for dinner (trying new recipes for easier days this summer).
A second crock pot was filled with a turkey breast, loaded with seasoning and a few homemade beef bouillon cubes.
Both were delicious, and it was the first time I ever cooked a turkey breast in a crock pot. I'll definitely make them again, and I'll be doing a turkey in the crock pot next Thanksgiving.
Homemade Beef Bouillon Cubes
3 cups organic celery, finely diced
3 cups organic carrots, finely diced
2 onions, organic, finely diced
2 Tbsp. salt
1/2 lb. organic ground beef
In a saucepan, on low heat, combine all the ingredients. Continue to cook this on low heat, covered for about 60 minutes. Cool. Process ingredients in a food processor until smooth. Spoon mixture into ice cube trays and freeze until sold. Remove from freezer and place cubes in freezer containers.
Use to flavor meats, soups, stews, or other recipes.
My husband, after cooking us his famous omelets for breakfast yesterday morning, went to work on the car again.
I made a small batch of homemade seasoned salt. I don't use it too often, but we were running low.
I'm working on another rooster name now. Russell Crowe was removed from the coop, put into the coop with the other roosters, and another one put in with the hens. So far, this one is not mean. We'll be watching to see if Russell Crowe attacks the other roosters or not.
I took advantage of a 25% off essential oil sale at MRH. I restocked a few items too.
Today I'm joining Sandra at Diary of a Stay at Home Mom.
The weather outside is . . .
On the breakfast plate . . .
Have no idea just yet.
How I am feeling this morning . . .
Pretty good. Hubby and Daughter are both home today.
On my mind . . .
Nothing really. Just waiting for my husband to get out of bed to get this day started.
On my reading pile . . .
I came across this author, and so far it's much like the murder series written by Joanne Fluke. The setting is a flower shop vs. a cookie bakery, and the main character has red hair (like he Fluke books), and there are more to the series. This is the first book. So far, I am enjoying it.
On the TV . . .
Whatever we find interesting on Netflix.
On the menu . . .
Crock pot cod, carrots
Turkey meatballs/marinara sauce, Veggie Quinoa (both crock pot dishes)
...not sure what else just yet
What I am creating . . .
An order of "F" Bombs, another cross bookmark (an order)
From the camera . . .
Looking around the house . . .
It's not looking too bad.
Chore I am not looking forward to today . . .
Not sure what our plan is for today. All depends on how long it takes to finish repairing the car.
To relax this week I will . . .
Read and journal
Prayers . . .

Beating the Heat
Woke up to the sweet sound of rain early this morning. It'll be hotter today than yesterday, so I'm sure I'll be taking crushed ice to the chickens.
I got another bracelet done (requested colors). Seven more to make yet. I actually got 10 orders. They are turning out so nicely too, but I'll be raising the price. It's a good way to use indoor time, but the bathroom needed cleaned too. Youngest was home, so she helps count the 196 beads for me, and helps string them. I may need to raise the price after these 7 are all done. I hope to get some made this summer for the fall holiday show I do. I think they would sell very well. So glad I tried the art of crocheting with beads.
Carpet shampooing will happen after this humidity leaves though. The dehumidifier is going strong, and I have to empty it several times a day right now.
We are invited to a family breakfast, and they are super picky eaters. They won't eat onions, bell peppers, jalapenos - nothing but plain stuff. I had no idea what to take, until I remembered my very old homemade cinnamon rolls. Then again, they take walnuts. Wasn't sure if anyone didn't like walnuts, so I asked first. Next time, I'll take overnight blueberry french toast (if I can find my recipe). Photos to come soon.
I also dug around for a recipe for the crock pot using chicken. I did NOT want to leave the house in this heat, so I used homemade ranch dressing (dry mix) to make crock pot "crack" chicken casserole. Thankfully, I had frozen peas and bacon in the freezer. It was good too. Easy and delicious.
I infused nettle tea for the both of us, but Hubby needed it the most. He came home from work feeling very sickly from the heat.

Randomness ~ Four Beans and Sausage
Tiger is feeling better now. In fact, the day we took him to the vet he got a shot and when we got home, he was running around the house chasing nothing, ha ha! Then later I found a ball of yarn that was dragged all down the hallway, ha ha!
Every year we joke about what will get left out, after putting all the Christmas decor away. I did it again this year! Ha! While pulling dried clothing off the drying rack, I noticed all the stocking holders sitting on the breakfast bar. Hmpf! Guess I'm digging out a tote to fit them in.
I finally got around to locating a Tupperware dealer. I have lots of items that are cracked and need replaced. I just have to pick up the phone and call her now. Then go around and collect all the cracked stuff.
Has anyone used psyllium husk powder in a recipe? I have a new recipe I want to try, and wonder if this stuff is available in most stores? It's the "glue" in a recipe I want to make, but un-assure that I will be using it all before it goes bad.
It was another crock pot day, and we love this recipe, but it's adapted to using organic ingredients. Organic smoked sausage is a thing, but hard to find. In fact, we have plans to visit some health stores after this nasty weather breaks.
Here is the recipe (adapted from Fix-It and Forget-It Cookbook)
Note: I have used cooked dry beans for this before as well. I do have stores close to me that sell BPA free canned organic beans, but supply is limited.
1 can organic Northern beans, rinsed and drained
1 can organic black beans, rinsed and drained
1 can organic butter beans, rinsed and drained*
1 can organic red kidney beans, rinsed and drained
1 1/2 cups home canned (homemade) ketchup*
1/2 cup organic diced onion
1 organic green bell pepper, diced*
1/4 cup organic brown sugar
2 home grown cloves of garlic, minced
1 tsp. Worcestershire sauce*
1/2 tsp. organic dry mustard
1/2 tsp. home canned hot sauce (or Tabasco sauce)
1 lb. organic smoked sausage, sliced into bite size pieces
Place everything in your crock pot and cook on low for 9-10 hours, or high for 4-5 hours.
Plan ahead during gardening seasoning, and freeze your green bell peppers to make this recipe even easier. You can dehydrate your onions and re-hydrate them also. Of course you can also dehydrate your garlic, but our supply of fresh is still providing. I am getting low on home canned ketchup, so I am praying for a good garden year this year. I may give it a try to grow black beans along with our usual pinto beans this year too. Maybe even lima beans.
I have used Annie's organic Worcestershire sauce and personally do not like the taste at all. For the amount used, I use a regular brand. I cannot buy organic butter beans in any store close to me, so I stock up when I get to a store, or it can be ordered online as well. I have substituted other organic white beans for butter beans, so feel free to mix it up.
