New Breakfast Tried ~ Butternut Apple and Kale Hash with Sausage

  The photo is my husband's breakfast packed up the day prior.  I have to say, it would be absolutely fantastic with eggs over easy made fresh, but I do have to send breakfast on-the-go for him during the work week days. Oh my goodness, it was delicious!  Time consuming to make, but healthy and very good.  It's a keeper recipe, with some tips to make it easier. First, remember I ground up some of our dehydrated sage a while back?  I put it in a spice jar for easy use for making homemade chicken or turkey sausage?  Well, I'm not doing that anymore. I discovered that the delicious sage flavor goes stale after weeks of sitting in a spice jar.  It's just not the same as crushing the full leaves dehydrated.  I'll just have to take the time to crush them for really good flavor.   Tips:  Most butternut squash is about 3 pounds or so.  Unless I grow it myself, and have a dry year, I have never seen a "small" or 1 1/2 pound butternut sq...

Just the Bits

We hit a high of 53° yesterday, and the chickens were loving it, as well as the full day of sunshine.   The paint brushes/rollers took a break for a few days. February is starting out with some hiccups.   However, I have finished washing  down the rest of the hallway walls (all but a small section).  I can now proceed to spackle any holes, allow them to dry.   Laundry got caught up.  I had some to fold and some to put away.  I also caught up on some paperwork.  Bathrooms are getting cleaned. Healthy breakfasts were prepared.  We decided that the next time I make this sweet potato hash, we prefer two eggs per serving. Meals got made and meal prep (lentils cooking for a dinner recipe). I got another rug washed.  I love the ones we bought at the flea market in Amish country.  They are the "washable" ones, and more expensive, but boy do they wash up nicely.  I have had cheaper ones from the box stores, that did not hold u...

Bell Pepper Eggs in a Nest

  No part of the bell pepper was wasted either.  The parts that I could not make a ring out of, were sliced for snacking, and the seeds went to the chickens. Why have I not made eggs in a nest this way until now??   By the way, one was not enough, ha ha!  I made each of us two. I love cooking recipes with bell peppers.  These are delicious!  I cannot wait for the fresh garden goodies to make these all summer.   I will have to tweak the chicken "sausage" patties however.  I just picked a random recipe online.  It was on the dry side, with little to no flavor.  I prefer the turkey ones over these. Do you have a good chicken breakfast sausage recipe?  I feel you almost have to add a bit of pork sausage to it.  When I make turkey patties, they are more flavorful.  I may go check my recipe and see if the ingredients to flavor them are different. Whipped Feta Dip Trial #1 ~ Asparagus ~ Mexican Breakfast Skillet Tidbits

  We really liked the flavor in this first recipe we tried, for Whipped Feta Dip.  The recipe stated to heat the hot honey with the red pepper flakes.  First, this recipe used sour cream, so it whipped up to a very light dip.  We prefer a thicker dip, so we will be "whipping" up (ha ha) a trial #2 soon with another recipe.  If you want this recipe, it is online with Greens and Chocolate - Whipped Feta with Honey Honey. Results:  Very good flavor!  Just not thick enough for our liking.  We did top it with chives from our herb garden. Tip:  Make the dip at the same time you heat the honey, so it is room temperature.  Otherwise the honey will harden on the dip.  Also, we felt this was way too much for 2 people, so consider cutting the recipe in half, unless you are entertaining.   We are still getting asparagus from the garden.  We are thankful for that, but I still need to dig up the raspberry sprouts in that part of t...
