Strawberry-Rhubarb Jam ~ Dandelion and Pumpkin Seed Pesto

In 2016 I missed out on getting any strawberries put into the freezer.  Zero.  In 2015, I put up a lot, so we were lucky to have enough for 2 years.

We are down to the last 3 bags of frozen strawberries and I wanted to use them up before this new season starts.

I decided to make strawberry-rhubarb jam next.  We also did the taste test on this the same night.  We eat a lot of peanut butter and jelly/jam over summer (when I have zero time to cook).

Now I can't decide on which to gift for Christmas.  Hm.

We grilled out again.  It was a bit chilly, but the sun was out all day and it got up to 60°F.  I also made dandelion and pumpkin seed pesto pasta dish so the vegetarians had something.  Truthfully, I wanted to taste the pesto myself.

You can find the recipe here online.  I used 3 somewhat smallish cloves of garlic, so next time I'll be sure to add a bit more.  It was very good!!  The dandelions were not bitter.   A hunger/crowd pleaser for sure.  You could use any pasta or any other dish for the pesto.  I had a box of organic spaghetti noodles that worked perfectly.

It's raining again today.  It'll be a crock pot dinner, so I can attack my rainy day to-do list with gusto.  I need a clean house for a graduation party next month, and I am way behind in getting those dust bunnies to disappear.

Then again, I need to restock my freezer with homemade noodles too.  Hm.  Tough decision.  Most likely "dust bunnies" will win today.

The pasta looks great, and wow...to have a 2 year supply of strawberries, that must have been lots of berries! On a rainy day, dust bunnies would grudgingly win out for me :)
Susan, I am turning into a pesto crazy lady lately. So easy to make and easy way to get my greens (and please everyone too).
Rain, it's very cold here today too. Brrr!

Getting somewhat caught up with emails. I got 3 days behind, and that means it takes about 5 days to catch up. Whew!!!
We have storms rolling in, are in a Tornado Watch for the next 24 hours. Then it's suppose to get cold. I have a meaty ham bone left over from last weekend, so I'm going to toss it in the crock pot with celery and carrots, and when the carrots are tender, I'm going to throw in a can of blackeyed peas and serve it over cornbread, and it'll warm up those bones on cold days for a a few days. Yum.
Prayers everyone has a great weekend planned, and a safe one too.
God bless.

RB, black eyed peas over corn bread sounds good with that crock pot of delicious-ness.

Apples and Tomatoes Oh My!

The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Did any of my blog writing followers locate a better "blog" platform online?  Just curious if anyone is moving from blogger.

Under the Weather ~ What's Growing?

I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
