I continue to play around with the einkorn whole grain wheat flour. I used 2 cups to mix up this bundt bread.
There is an easy way to tell if this was better than the last breads I've made this winter. It was more than half gone this morning. Typically, bundt bread will last a few days, even three. Not this time. They gobbled it up fast. I made it without oil and without eggs. I swapped the oil completely, and reduced it by half with my home canned unsweetened applesauce. I found a recipe online and sort of tweaked it to fit with what I had on hand. It wasn't as "tall" as my other bundt breads, but very moist.
I'm experimenting with different bread recipes again too. This was a simple sandwich bread (King Arthur Flour recipe found online) again, but softer because it is made with milk (I think that is why). I made one loaf vs. two this time. Again, this was baked without eggs. We are low on egg supply and I greatly miss my egg/green scrambles.
Off the topic of eggs and bread, I'm in search of more sources to buy herbs, essential oils, supplies for mixing and making etc. I love Mountain Rose Herbs, and everything they sell (organic, heirloom, non-gmo), but their shipping costs are horribly high. If you have another source to share, I would love to hear about it/them.

I've been keeping a low profile lately. I have what seems to be frozen shoulder (right one), and the pain from it wears one out working at the keyboard, or just about anything really.
It's in the 70s this week, and gorgeous, but WHAT??? We have snow predicted for Sunday - that's Spring in NC. Prayers for farmers with crops and trees budding.
