What's Cooking? Homemade Meatball Recipe

 


My meal plan was going pretty well before we both got sick.   We had roasted more of our home grown mashed potato squash, and paired it with some air fryer (can be done in the oven too) blackened chicken tenders (local chicken), and I thawed some garden green beans and local bacon to make the BBQ crock pot green beans.

The blackened chicken is simply chicken patted dry, seasoned with a mix of seasonings, and air fried (or baked).  There are so many online recipes for the chicken, but we love it (first time trying it).

Here is the recipe for homemade meatballs.  A friend shared it with me.  We buy our meat from a local butcher, buy the organic oats from an Amish area that is a quick a drive, but the only place to buy it anymore.


Homemade Meatballs


Meatballs
3 pounds ground chuck (see notes)
2 cups oatmeal, organic
2 eggs
1 cup chopped onion
13 oz. can evaporated milk, organic
2 teaspoons salt
2 tsp. chili powder
1 tsp. garlic powder (I use homemade)
1 tsp. black pepper

Mix well.  Shape into balls (I use a large cookie scoop), place on cookie sheet and freeze until firm, package and freeze until needed (or bake).

Bake at 350 degrees for 40-50 minutes.

Note:  I use half groung chuck and half ground pork, but you could use what you like.



The recipe uses oats in place of bread crumbs.  My recent batch was made with local pork sausage, because the butcher accidently gave me that instead of ground pork.  We'll see if how it tastes soon.  I already had the ingredients mixed before opening the meat packages.

I mix, roll the meatballs, and line a pan and freeze them.  I then bag them for future meals.  You could cook them ahead of time as well. It's all up to you.

I just made a batch too though I cook mine before freezing. I think I‘ll add some garlic powder next time too. I add parsley and I used half lean ground beef with half spicy poultry sausage. That seems like a lot of milk. I guess the oatmeal absorbs a lot?

Gosh, everything looks and sounds so good. Thanks for the meatball recipe. My Hubby loves meatloaf and always orders it when we go out to eat if it's on the menu. :-)

Katie C, it has always worked for us, and sometimes I have even used 4# of meat. I pour the milk over oats, while working on adding the rest.
Sandi, we love it, and it eliminates bread crumbs for my diabetic husband.
Betsy, it's great to have in the freezer, and just have for a quick healthy meal. I thaw spaghetti squash (squeeze the water out), place it on the bottom of a crock pot, cook about 14-15 meatballs, place those on the squash, and pour a pint or two of home canned any type of tomato related sauce over it and heat up on low for a few hours. There are other ways, but that is a favorite dish.

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
