Mac n' Cheese Please ~ Health Update

We have tried a few healthier versions of Macaroni and Cheese, but haven't really found one we all like.  Of course, this is a tough dish to replace that ooey, gooey cheese sauce we all like.

After searching the Internet, I found a few that may taste pretty good.  I baked Sweet Potato Mac' n' Cheese, and we loved it!  It doesn't have that cheesy taste you get with a cheese sauce but my kids devoured this. 

The ingredients are simple, and some day, I hope to be making my own cottage cheese from scratch (or ricotta).  I know we will be adding "sweet potatoes" to the garden this year also.  For our dish, I used whole wheat penne noodles. Very simple, and very good.  I had broccoli as a side dish.  

I've had two good meals in a row, so the family is counting on me.  I'm back to searching for clean eating dishes, and hopefully find a delicious dish again.

As for the update, hubby and I have been back to the gym for over a week now.  I continue to walk on the treadmill at home and we are already feeling much better. However, I am going back to the doctor today and hopefully, they can finally put an end to my ear trouble and sinus issues.  

Recycling updates:  I've been collecting plastic cheese bags for the school.  I  hope to be sending in our first shipment this week.  The school receives $.02 for each one I ship in, and the landfills will be a cleaner place.

Are you talking about the zip top bags that shredded cheese comes in? Tell me more about where you send them please.
Kim, I signed up with Terracycle on-line. You can choose any item to recycle and ship in, and designate where the cash is sent. I am not sure if there are any openings for cheese bags still, but if you google it, you can look over all the items they will take.
Candy, it tastes just as good reheated for lunch today also. Yum! BTW, I am making your baking mix soon :)

Sweet potatoes are so good for you too! I had my first baked sweet potato last year. I know--don't judge! It was good!

Many of the places around here have sweet potato fries. Not sure they are any better for you than regular fries but a change of pace...

Glad to hear the exercise is going well...you go girl!

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
