Homemade Chicken Noodle Soup With Homemade Noodles

It started raining before I pulled the carrots for our soup.  I darted out there and pulled the last of them (I think).  After that I realized I forgot the swiss chard.  Then it started raining harder.

I have to think like pioneers, so I thought I'll just use what I have.  I diced a green bell pepper in place of celery.

I roasted two of our chickens (meat chickens raised by us) and pulled off the meat, added it to organic broth (I try to make my own, but had a box heading toward the expiration date, so I used that).  

Prior to that I diced onion, carrots and sauteed those in olive oil, then added the green pepper, broth and water, chicken, and half of the homemade egg noodles I made a few days ago.  The other half will create another meal.

I, of course, added herbs from my herb garden.  Yummy! 

I also baked 2 loaves of pumpkin bread.  I am just now getting ripe baking pumpkins, so I used a can of canned pumpkin.  However, my goal is to start canning baking pumpkin for recipes such as this.  I also did not have enough cooking oil.  I made up the difference with my homemade pear butter, and it turned out moist and delicious.  You can also adjust the amount of sugar to your preference.


Pumpkin Bread
3 cups of sugar
1 cup canola oil
4 eggs, beaten
1 can of canned pumpkin - 16 oz.
3 1/2 cups sifted flour
2 tsp. baking soda
2 tsp. salt
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. ground cloves
2/3 cup water


Cream sugar and oil.  Add eggs and pumpkin. Mix well.  Sift together flour, baking soda, salt, baking powder, nutmeg, allspice, cinnamon and cloves.  Add to pumpkin mixture alternately with water.  Mix well.  Pour into 2 - 9x5 in. loaf pans, greased and floured.  Bake at 350° for 80-90 minutes, or until completely done.  Let stand 10 minutes before removing from pans to cool.


Enjoy!  Those loaves didn't last long around here.  I had to hurry up and get slices in school lunches before it was all gone.

Your soup looks yummy! If it EVER gets a little cooler here I will be making soup too! Pumpkin bread doesn't last too long here either! LOL!!

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Did any of my blog writing followers locate a better "blog" platform online?  Just curious if anyone is moving from blogger. 

Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
