Pinching Pennies

It's that time again, where we have to "pinch" pennies to keep the bills paid.  It happens when the income is reduced.  This means meals without going to the store. 

For a different lunch, I took leftover turkey, added home canned zucchini relish (a bit of spice to it), and some lite safflower mayo.  I grilled it between 2 slices of bread, in olive oil. Yum!  The relish adds just enough flavor too.




I got up this morning mixed a large batch of whole wheat pancakes.  This will last a few days, thankfully.  I have one egg left, until I check the coops this morning.  Thankfully, I had sausage in the freezer, and extra orange juice. 

Yesterday I was thankful to "freezer" cook.  I pulled one package of organic chicken, a bag of garden carrots and a bag of homemade noodles - chicken noodle soup.  However, it was so good, that there was only one bowl leftover.

I love to make pumpkin bread too.  My recipe makes 2 loaves, so it goes further.  So I made it for lunches and after school snacks.



Whole Wheat Pancakes
3 c. whole wheat flour
2 c. white flour
1/2 c. sugar
5 T. baking powder
1 1/2 tsp. salt
1/2 c. vegetable oil*
3 farm fresh eggs 
Organic Milk  

*I've used olive oil or canola oil in this recipe.

Stir dry ingredients together.  Add small amount of milk to stir out lumps.  Add eggs and oil; stir until smooth.  Add milk until preferred consistency.

Today I am thankful that another farmgirl friend offered to help pay for shipping the scarves to New Jersey.

We will be pinching pennies in December as the Farmer's Market is going to be closed for three weeks. No market means no extra money for groceries. :(

It'd always some thing isn't it? I had to have an MRI on my knee yesterday to find out what's wrong. Lukcily it's just arthritis, but the bill for the MRI will be high :( It's homemade goodies for Christmas gifts though:) Big money saver...

We're pinching pennies too.
Thankful to have groceries and while we are happy to have a new water heater...we are still keeping it turned low to conserve LP.
We do what we can do...:) breakfast for dinner is good. Leftovers...uhm-boy!
sometimes pinching pennies make us a more creative cook!

That looks very similar to one of my pancake recipes. I have my very economical recipe, and my special occasion recipe. Those sure look good!
It seems there is more and more of the tight penny pinching going around these days. I am pinching mine hard just to try and keep my utilities on. In the process, though, I am enjoying some of my old dishes that I haven't cooked in awhile. I hadn't thought of grilling a turkey sandwich. Going to have to try that.
