Good Day for a Pie ~ Dry Skies

 

Garden goodness yesterday.  More asparagus and first cutting of rhubarb this year.




Although I need a trip to the "big city" for supplies, I decided to surprise my husband with a strawberry rhubarb pie.  It's been quite a long time since I have baked any pie.  Oh my, I must not have had enough coffee before starting on this, ha ha ha!  I grabbed my deep dish pan and didn't realize it until I put the filling in, then I didn't cut the lattice pieces that even.  


However, I cut exactly enough rhubarb for the recipe.  I use the recipe found at Sally's Baking Addition.  I use pie crust crumble crust recipe from King Arthur (where you freeze the dough and add ice water when you pull it from the freezer to use).

Rain has not arrived as predicted, and things are very very dry outside.  Watering it all by hand, and thankful I haven't yet got the vegetable garden in.  However, the dry ground is making it difficult for tilling.

Back to the Grind ~ Lilac Jelly

 

This was my "note to self" upon awakening.  I had two days off in the kitchen.  I technically had a complete two days off, so it was back to the grind, kitchen, laundry.....you name it.




I got more flowers on my birthday and many more gifts.  The day was truly special, and I did not do a lick of work.  

First, a breakfast needed to be made (made a scramble)

A two meat potato, onion, green bell pepper, garlic, farm fresh eggs and dandelion greens.

I picked lilacs to try lilac jelly for the first time ever.  The infusion first turned a blue-ish, then purple color.

Once the jelly was made it turned into a beautiful pink color. I was expecting a yellow color (someone showed me their jelly they canned), but of course this color is pink.  Any thoughts?  My blooms were a brighter purple, so maybe that is why?  I will be tasting this in a day or so and let you all know if it's good.

I apologize for no printable version.  I tried one way I googled and could not figure it out.  It was written Feb. of 2021, but what pops up with the directions does not look like what her photos show. One of these days....

Lilac Jelly
2 cups packed lilac flowers
2 1/2 cups boiling water

I use a quart canning jar.  I add the flowers to the jar and pour the boiling water over.  I put a lid and rim on and let it sit overnight, but you should let it infuse at least 8 hours.

Strain infusion.  I use a coffee filter in a strainer over a glass bowl.

In a large pot, add:
2 cups of the lilac infusion
4 Tbsp. organic lemon juice
1 box sure-jell powdered pectin
Bring to a boil.
Add 4 cups sugar and bring to a rolling boil, constantly stirring. Boil one minute. Remove from heat and skim.
Pour into sterilized jars (1/4 inch head space), wipe jars, and add heated new lids and add the rim.   Boil in canner for 10 minutes.  Cool untouched for 24 hours.

Yield:  8 - 4 oz. jars or 4 - 8 oz. jars.

From Pile to File ~ New Recipes Tried

 



I made Cajun Angel Hair and Sausage.  New recipe tried!  I had some organic angel hair pasta and wanted to use it.  I finally found some non-gmo smoked chicken sausages too.  The recipe includes fresh green onion in the recipe and I used freshly snipped home grown green onion to top it with.  Oh my!  I'll tweek the sauce part (needs more), but the taste was fabulous.  I made homemade Cajun seasoning for it.

This recipe was a favorite.  Normally, you cook meat or brown it first, and this recipe is a toss it all in but the pasta.  Loved it.  I didn't expect it to taste so good on account of lack of ingredients.  I used 2 homemade beef bouillon cubes (because that is what I had). I just added the pasta last, cooked some peas and shredded some cheese.  The recipe is online as well - Slow Cooker Chicken Bolognese Pasta.  Does anyone have a dry homemade mix recipe for chicken bouillon?  Or one for freezing in cubes?

Speaking of all this baking and cooking, I have a container of organic non-gmo shortening, but it has coconut in it.  Do any of you have recipe ideas this would taste good in?  I basically use shortening for birthday cake frosting and that won't taste good in that.

This and That ~ Winter Weather Advisory (and it's April!)

The bad:

I heard that Hobby Lobby is closing all their stores for good, due to government mandate involving health insurance and their beliefs.  Has anyone else heard this?  Or is this just rumor?


The good:

My dehydrator replacement door was back in stock and has been ordered.  Woohoo to that.


Something I learned: 

I watched a show on Create TV (cooking), and found out it's healthy to add garlic powder to your chicken feed occasionally.  I caught the 1/4 cup part, but missed per what amount of feed.  I'm trying to find the show online to re-watch it.  I think I found the show, but the station is operating on reduced power, so I'll have to check back later.


Something I learned:

You can make jelly from the red buds on the red bud tree.  I most likely won't get to try it this spring (the freeze), but will try it next year. My Mom has a tree.  It's also medicinal.  Fun and good to know.


I had a request for the recipe for homemade lip balm.  The original recipe I tried uses calendula and is found on Mountain Rose Herbs blog.  I now make an infused oil with lemon balm and make it that way.

As far as making homemade "neosporin" Here is the recipe I use, but there are other recipes online as well using optional essential oils (different ones) to try.  I love this recipe. 


Whelp, sadly the best pizza up by my husband's work has closed both locations due to no one wanting to apply to work.  He tried getting it for us last week and they were closed.  They are hiring, but can't get anyone to work (thanks to you Gov extending unemployment until Sept of this year, which is ridiculous).  More local businesses have closed on certain days or have closed completely until people apply to work.


I decided to cut most of the lilacs in hopes they'll bloom inside, so I didn't have to cover it.  I can't cover my apple or peach trees, so most likely no fruit again this year.


Well, this happened.  We got 4 inches.  A record I believe.  Crazy.  Thank goodness I had enough old sheets to cover some things out there.  The freeze comes tonight.  Oh the fun...

Handiwork from on the road and other ramblings




During the recent road trip, I took along yarn and easy projects.  I got one set of pot holders finished, crocheted two washcloths and two facial scrubbies.

While we were gone, the bananas were not eaten, so I tried a new recipe.  It's more of a breakfast, but looked good and healthy too.

I made Almond Butter Banana Bread Baked Oatmeal (from A kitchen Addiction).  We loved this.  No flour and just a bit of either honey or real maple syrup to sweeten it.

Freezer/Pantry Stash

I have been getting creative with my freezer and pantry stash.  I am trying to rotate out, so I am prepared for the new garden stash to go back in.



I made another new breakfast recipe - Blueberry Baked Oatmeal (Cookie and Kate online).  I followed the recipe completely, other than adding a bit more blueberries.  I am going to need to re-stock my organic oats soon though.  

I'm looking into making herbal packets to sell for facial steams.  Has anyone done one?  There are so many recipes for different skin types.

I haven't heard back from the General Store on selling an item.  Hopefully today I will.  I sent another email in case it got missed for some reason.

A few deer came to see us the other night.  They were scrambling to find grass and found it just outside our house.  Look at all those mole mounds!!!  Sigh....haven't had those in years.  Guess I'll have to take care of those before the garden gets planted.

Happy Homemaker Monday


Today's post is a dewzie.  Meaning long.  I tried a few new recipes this past week.

I've been doing some searching on the internet lately, and have been reading up (Better Homes and Gardens) how to make my own seed tape.  It will make planting my new green onion seeds so much easier this spring.  I may also just plant them in starter trays this year for easier planting.

Good news!  We are warming up, so this snow will start to melt and we can get outside comfortably to fix the wood splitter.


Thank you all for your oohs and ahhs over the new switch plates.  I have them up for now and deciding on if we need to replace receptacles with another color.  So far I LOVE they way they look, but missed buying for one more outlet.  

.....and guess what?  I think I want them for our master bath now, and one for the living room.  Sigh, I just think we are due for upgrades in this house to perk our spirits.  The old switch plates and screws will be bagged and donated either to the thrift or Habitat location.  I have more ideas for the kitchen.

I've been working on making Monday's and Sunday's an all one meal crock pot day.  It gives me a break in the kitchen, and if we are working outside or in the hallway, we can relax when we are done for the day.  Sunday I made Four Beans and Sausage.

My husband's way of a quick fix (wood splitter) on Sunday?  Buying about 1/3 of a cord of wood.  It was really too cold to be out and fixing the wood splitter.

Woke up to 7° yesterday and today?  At 5:30am it was 38°F.

How I am feeling this morning . . .

Feeling like our weekend work was simply problems that needed fixed, so no work done on the hallway.  Otherwise feeling good.


On my mind . . .

I was happy to see a bill passed a second time to reduce our Governor's control on lockdowns etc.  It has a better chance this time, as more were for yay than nay and that stops him from putting a veto to it.  

I'm starting to know what the empty nest feels like.  We haven't seen Daughter E (youngest) since last Thursday.  She doesn't like the long drive with the snow.

I love watching Create (cooking shows) during crochet time.  Avoiding talk shows and news has definitely lifted my spirits (sick of the lies, and tired of biased shows).  As for evenings we rely on netflix, movies we own (the best out because they are older movies or funny) or Amazon prime - whatever looks good.


On the menu . . .

-Crockpot roasted turkey breast, roasted asparagus or brussel sprouts

-Beef stew (Monday crock pot meal)

-Philly stuffed green bell peppers

-Sunday crock pot meal - sweet potato chili or a roast with veggies

- Snacks, homemade hummus, kamut flake bars with nuts/seeds

New Recipe I tried or one we tried and really enjoyed. . .

Pizza casserole (my version)

1 lb. sausage of your choice (we like homemade sausage using organic pork)

1 box Organic Einkorn Penne

1 organic green bell pepper diced (or equivalent from your freezer)

1 onion, diced

2 pints home canned pizza sauce

2 cups your favorite pizza topping cheese or cheese blends (we love some Parmesan in ours).

Cook sausage in a skillet. When the meat is halfway cooked, toss in the diced green bell pepper and onion (and any additions you'd like - olives, mushrooms, pepperoni).  Stir in the pizza sauce and heat.  

Cook noodles per package instructions and strain water.  Add cooked noodles to the pizza sauce mixture and combine well. 

Pour half of mixture into a prepared 9 x 13 baking pan, layer with cheese, add last half of mixture.  Bake at 350°F for 45 minutes.  Add another layer of cheese and bake until cheese is melted.  Serve.  Note: You could also add extra pizza toppings with the last layer of cheese.


Crispy baked chicken.

Recipe is online from the Salty Marshmallow.  I adapted organic ingredients.  I can only find organic chicken drumsticks, so that's what I used.  It was so easy, healthy and delicious.  A keeper recipe.  If you are interested in my favorite way to make sweet potatoes, it's basically diced sweet potatoes, loaded with thyme, some fresh minced garlic and olive oil cooked in the crockpot all day.  The other recipe is a corn and zucchini saute (also very delicious, but I prefer to make it with fresh organic zucchini and our corn off the cob we froze).

I really like the chicken recipe, because it's something we could make on vacation when renting a home or cabin.  The chicken tastes great re-heated the next day too.

Texas.  Mom - she gets her vaccine this week (shipment was delayed).  Youngest - she is still mentally having a difficult time after losing her boyfriend last year.  Some things just remind her of him.  Some times too often for her to handle.

Full Day in the Kitchen

I have two kitchen tables.  We use both during tomato season then potato season.  They are perfect for feeding family during get togethers (which I miss dearly).  Anyway, my larger table has become he spot to drop stuff and not put it away.  Yesterday I cleared it off.  Everything went to their home.


New tablecloths were put down, and yes that one on the table behind it is a Christmas one.  I really want a Christmas cloth for the smaller table in blues.  The one I have works for now.




I also tried a new bread recipe.  First, I wanted to try it due to the lesser amounts of ingredients and it didn't require bread flour.  Second.  I needed bread to make a french toast breakfast.

The recipe for the bread is a 4 ingredient recipe, which makes 2 loaves.  It's online (Simple Amish White Bread Recipe, Donna Elick).  I used all organic ingredients.

I was skeptical at first.  It uses all-purpose flour and no eggs. I used the full 7 cups of flour, and felt it should have had a bit more, as the dough was very soft.  Well, the bread rose nicely and tasted good. Now, when I cannot locate bread flour, I have this recipe to fall back on.

Dinner was a bit of work, but I decided on Chicken Spaghetti and corn.

Guess what?  My car is finally back home.

Bourbon Chicken (Crockpot Recipe)

 

Bourbon Chicken (Crockpot Recipe)

Place 2lbs. of organic chicken breast in a crock pot.

In a bowl mix the sauce:

1/2 tsp. grated fresh ginger

4 cloves homegrown garlic

1/2 tsp. organic crushed red pepper flakes

1/3 cup organic apple juice

1 1/2 Tbsp. organic honey

1/4 cup organic brown sugar

1/4 cup home canned (or organic) ketchup

3 Tbsp. organic apple cider vinegar

1/4 cup Bourbon

1/4 cup organic soy sauce

1/4 cup water

Mix all together and pour over chicken.  Cook on low for 7 hours or so.

Just about 15 minutes before serving, remove chicken from crock pot, shred and set aside.  

Mix 3 Tbsp. water with 3 Tbsp. organic corn starch.  Add to the crock pot mixture and stir.  

Shred chicken and add back to the crock pot. Stir.

Note:  I did not turn up the heat to speed up process, I simply let it sit on low, put the chicken back in, and gave it a stir.

Serve over organic wild rice or rice of your choice and top with chopped green onions from your herb garden.

Spicy Apple Crunch Cake

Yesterday I shared a blast from the past recipe, from my Spanish class (High School Days).  Today, I am sharing another blast from the past recipe.  It's funny and somewhat frightening that I saved these recipes.  When I was hunting for the sopaipilla recipe, I ran across a binder full of recipes from my Home Ec. class in Junior High School.  It uses applesauce vs. apples.  It was a very moist coffee cake, and apparently the family loved it, as it went very fast after I baked it.





Spicy Apple Crunch Cake (adapted with organic ingredients)

2 Cups All purpose flour
1 tsp. brown sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. ground cloves
1/2 cup canola oil
2 eggs, farm fresh
1 cup home canned applesauce
1/4 cup milk
1 cup walnuts, chopped

Topping:
1/2 cup brown sugar
1/2 cup walnuts, chopped
1/4 cup flour, all purpose
3 Tbsp. butter, melted
1 tsp. cinnamon

Preheat oven to 350°F and grease only the bottom of a 9 x 13 baking pan.  

In large bowl mix all ingredients except the walnuts and  topping ingredients.  Blend on a low speed until ingredients are moistened.  Beat 3 minutes at medium speed.  Stir in walnuts.  Pour batter in prepared baking pan.

Mix all topping ingredients and sprinkle evenly on top.  Bake for 35-40 minutes.

Note:  For muffins, bake for 20-30 minutes (24 muffins)

New Hummus Recipe ~ Sun Dried Tomato Hummus ~ This and That

I tried a new recipe that was given to us by our well being (insurance) point program.  I adjusted it to organic and homegrown ingredients.



Sun-Dried Tomato Hummus
(adapted with organic/homegrown ingredients)
2 cans (15 oz.) chickpeas, rinsed and drained (organic)
⅓ cup fat-free yogurt (I used full fat homemade using my dehydrator to make it)
¼ cup tahini (or homemade with sesame seeds)
3 garlic cloves(organic home grown)
½ cup chopped sun-dried tomato (dehydrated home grown grape tomatoes)
1 tsp. dried oregano leaves (organic from the garden)
2 tsp. lemon juice (organic)
Directions
Process chickpeas, yogurt, tahini, and garlic in a food processor until smooth. Stir in sun-dried tomato bits and oregano; season to taste with lemon juice. Refrigerate for 2 hours before serving.


Of course this is a "healthier" version of hummus, as it uses less tahini and no olive oil.    Don't have the yogurt?  Just use my traditional recipe and add the tomatoes and oregano. 

Note:  I rehdydrated my dried grape tomatoes before adding to the recipe.

I'm watching the weather.  I have only one rain barrel up, but if we are possibly getting down to 32°F with snow, I will have to drain it and flip it over until the cold wave passes.


Onion powder is now restocked.  I literally used all 7 lbs. of dehydrated onion to fill the jar. I will need more to dehydrate for diced.  I thought I had enough, but nope.

Mom had zero meat, so we surprised her with a delivery.  We took her a dozen pink carnations, flowers for her flower garden, groceries and cat food.  I told her "Happy Mother's Day" and she cried.  She was so thankful to have chicken and mashed potatoes for lunch instead of a hotdog.  I'm so glad we can help her out right now. 

In the evening we took a motorcycle ride with another couple and had a very nice time.   Today, it's back to cold again.  Our May weather is too cold for May weather. Brr. 

Oh, and by the way, this virus is real.  Remember the older parents of a friend who recently passed away?  Well, that friend (their daughter) is sick and tested positive, but she was sick a while back and never tested.  It apparently lasts up to a month in your body when you do get sick. So if you do get sick and not tested, stay away from people for a month.  This colder weather in our parts isn't helping kill off this virus either (or what I can the Chinese Flu).

What's Cookin'?

We had a high of 77°F, Hubby had to work, so I worked around the house etc.  Even though we took a nice long ride with our motorcycle friends, I logged 20,000 steps on my fitbit.

Crock pot chicken and wild rice (no cream sauce) and roasted asparagus with rosemary.  This was a new recipe and very good despite no cream sauce in the rice.  One daughter, who hates mushrooms, ate her entire plate.  The recipe is online at "Today" and is called Slow-Cooker Chicken and Wild Rice Casserole.


Easy Broccoli and Cheese Egg Bake
Recipe is online at "It's a Veg World After All" and I just adapted organic ingredients and added garlic powder.  I like to use a large onion with this recipe.  The crunch and flavor from the onion is great together in this recipe..

Recipe Requests


There were a few requests interested in the recipe for the breakfast casserole.  The recipe is online from AllRecipes (Easy Broccoli-Cheese Casserole).  I simply used organic ingredients, and added 1 tsp. homemade garlic powder and a 1/4 tsp. homemade fire powder to add flavor.  In all honesty, I think this recipe would make a great side dish as well for family get togethers.  I like this one particularly because it uses less eggs.  

As for the family's recipe for Hot Cranberry Punch.  I have the recipe on my blog - HERE.  It's been a tradition in our family for years and years, and my youngest daughter wanted to have some with her cookies I baked (and wanted to learn how to make it).  It was sort of something to take her mind to a peaceful place I think, and I was thrilled she wanted to make it herself.

How to make Fire Powder:
Dehydrate a mix of hot peppers according to your dehydrator instruction book.  Grind the dried peppers in a coffee grinder.  Store in an airtight spice jar.  Add to anything to spice up a recipe.

Happy Homemaker Monday


Yesterday involved 3 of us baking and cooking.  I baked a broccoli and cheese (with cottage cheese) casserole for breakfast, a batch of almond butter cookies (flourless), taught Youngest how to make Hot Cranberry Punch, infused a quart of nettle tea, and made old fashioned Goulash for dinner.  Shoot, now that I think about it, I could have added greens to the breakfast bake.  Oh well.



Dinner was old fashioned goulash with corn we froze last summer.  Instead of adding green pepper, I added finely diced jalapenos I froze from the garden last summer.  It was fantastic.  Although too many carbs, it was a nice change to visit the comfort zone in the way of food.

Youngest's boyfriend was sick with a fever, sore throat and headache for a few days.  I've been in touch with his Mom, and his fever broke yesterday.

The weather. . . 

Foggy.  High of 62° and 10% chance of rain in the evening.


How I'm feeling this morning . . .
The same.  So many circles of confusion on the news, so I'm staying busy in the garden, prepping it for a good tilling all around, doing laundry, dishes and cleaning.

On my mind . . .
The garden and getting it ready, chores that need done on a good weather day like clean the coop (and that job will not be fun), the unknown about daughter's grad party and even her graduation (and prom), hoping my husband doesn't use all good weather days to take motorcycle rides on his 2 weeks off (one guy is already asking him and I need him for the garden work, although I do like to ride, it needs to come first), and wondering what businesses will open May 1st when our shut-in order is lifted.  I can't see how a restaurant can open when the order for no more than 10 in a group order is still set in place here.  Wondering where to buy a gallon of organic olive oil (I got no suggestions so far).  I use it to infuse herbs, make homemade medicinals, and it takes 2 cups to make homemade "neosporin."

Also on my mind?  My crafting sales.  I'm getting zero, and I count on that for extras and retreat vacations (which I'm not sure that's happening any time soon), but I'm sure there will be zero craft shows this year and that saddens me.

My living room is a mess again.  Our daughter who moved in is re-organizing her room, and what she doesn't want is downstairs.  It's going to the road with a free sign today.  All thrift stores remain closed.


Chore I am not looking forward to doing this week . . .
Cleaning one toilet.


To relax this week I will . . .
I'm considering getting out my tatting, and my flower press today.  If Hubby didn't mow down all my wild violets I will pick and press some today for future crafting.


On my prayer list . . . The same - The President, our Governor, the world, the sick, for this virus to end, for our rights to be restored....for us to have a bountiful garden this year.
