Normalcy

We've hit the 20's here lately, and dipping into the teens at night.  The cold can really get to you, but I'm taking advantage of it with indoor jobs etc.

Now that the house is getting back to normal, I can get back to the kitchen.






Garlic powder and granulated garlic was made.  Just one more way to preserve my garlic without a root cellar (basement or proper storage area).  I then use these to make homemade spice/herb mixes, including homemade seasoned salt.


Strained another tincture.  

Found a quick fix for the coop door that leads out to the outside ramp.  It'll go on the inside, so both sides are secured.  I'm without "wheels" again (Big Red just needs replaced in my opinion), so it was work with what I had.  There has been no animal sightings whatsoever.  Hubby feels that the idiots in the woods (most likely illegal hunters) were the cause, but we still don't know.

I still had one daughter's dog (Mia) yesterday.   She is getting homemade food.  Her Mom didn't leave me enough of her dry dog food, so her belly is happy.  She was picked up last night.

I've been trying to squeeze in crochet time to work on the 11 "f" bombs.  I have 7 more to make.  In the midst, I'm getting some plans in motion for Christmas gifts for next Christmas.  Thank goodness for my notebook.

Homemade Condensed Tomato Soup ~ From Pile to File Recipe

I noticed that a few of my recipes I collected to try, contained quick-to-buy processed foods.  One of those "food" ingredients happened to be condensed tomato soup.

I have, in the past, been consistent in making homemade condensed chicken, celery, mushroom, and even cheddar cheese soups.  So making this was super easy.  Last year's tomato harvest gave us a good supply of canned tomato sauce.

I decided to not whip up a recipe, but freeze one to see how well it freezes too.

Make this when you have opened tomato sauce and have extra that needs used up.   I may even try this by adding water to make "tomato soup" and compare the taste to my lemony-basil tomato soup I canned last fall.

Crock-pot Beef Burgundy with Homemade Noodles

Although we love Beef Stroganoff, we love beef burgundy with homemade noodles and mashed potatoes as well.  Here is my recipe (all organic ingredients or home grown and homemade ingredients):

First:  Thaw a quart of homemade onion soup from the freezer.  To make the soup, see the blue ball book for the recipe.  I make this when onions are harvested, and I use a mandolin to slice all of my onions.  This soup comes in handy to use for a soup start as well, for corn chowder and other dishes.

Add the quart of soup to the crock pot, and add the following:

2 lbs. of stewing beef, cubed and tossed with 1 Tbsp or so of flour
1/2 lb. fresh mushrooms, sliced*
1 tsp. salt*
1/2 tsp. marjoram, dried
1/2 tsp. thyme, dried
black pepper to taste
1 1/2 cups burgundy wine
*(Salt if your soup hasn't been salted)

Cover.  Cook 8-10 hours on low.

I like to thicken this a bit with arrowroot powder, but it's up to you really.

I boil my homemade noodles, drain them and simply toss them into the crock-pot just before serving.   I have also found non-gmo/organic noodles at our grocery store.

We serve it over mashed potatoes (3 lb. of organic white, with 1/2 cup homemade yogurt, 1-2 minced cloves of fresh garlic, and salt).

*for mushrooms, if you don't have fresh on hand, you could use 2-3 cans of organic mushrooms, drained, or re-hydrate some dehydrated mushrooms as well.

Our beef was very tender.  The photo is store bought noodles for this meal.  I use homemade noodles more often than not, but Non-GMO/organic noodles are available in most stores now.  I really need to restock my noodles.

Garden Goodies in Winter

Today is the last day of February for 2024.

Kitchen-ness and Tidbits

 

Crockpot Queso

8 oz. organic pepper jack cheese, shredded
8 oz. organic Monterery Jack cheese, shredded
8 oz. organic cream cheese
1 4-oz. can organic green chilis, drained
2 herb garden green onions, sliced thin
1/2 cup organic whole milk
1/2 tsp. homemade garlic powder

Stir together all ingredients in a crockpot.  Cook on low for 4 hours or until melted.  Note:  Some organic canned chili's may differ in size, and you could cube the cheese too, but it will take a bit longer (block cheese makes a creamer dip vs. buying already shredded cheese).  Sorry for the bad photo, but my husband was gobbling it up, ha ha!  I do think it needs maybe a jalapeno next time.


Not sure if this is the reason my biscuits are flaky with layers, but it may be.  I watched a cooking show and if you "shred" the butter vs. cube you get a better rise with the biscuits.  I cube, but them use a butter blender to cut the butter chunks up a bit more.


I baked up some whiskey sticks for snacking.  I needed to use up some organic pretzels I had.

Not the best photo, but I finally got around to making biscuits and gravy for dinner one night.  I could not find my recipe for "fried" apples, so I used a new one and love it.  It's a "copycat" recipe and baked in the crockpot.



So thankful for the rain we got.  My garden and flower beds got a nice soaking.  The rainy days have also helped me get caught up with laundry and other indoor tasks.

One dose of Mother Nature's rain and the garlic ramps were one.  Now, if my radishes come up fast, I see some dip in the making.


I hope everyone is doing well.  I seem to see such a lack of blogposts lately.  Our state is back to normal thankfully.  All restrictions have lifted.  It has been so nice to see people's faces and beautiful smiles again.  I hope your weekend is fabulous!

Homemade Mexican Taco Seasoning Mix

I've been busy in my kitchen these past few days.  The rainy days here, have simply motivated me to bake, mix, and shake it up a little. 

I am finally at a point in our self-sufficiency stride, where all of my homemade goods (and home grown) are coming together in all of my recipes.

Homemade Mexican Taco Mix is made using home grown oregano, onions, and garlic.  I can then use the seasoning mix for all sorts of recipes, such as my salsa dip (using home canned salsa too).

This and That ~ Finishing the Unfinished

 









Although only for one night, we were able to travel a few hours away, to visit a 4.8 million Christmas light display, stay at a Historic hotel (which we loved), and visit some local shops, to celebrate our 25th wedding anniversary.  It rained on us, but we were still happy to travel and celebrate.

Christmas is over with, and we have had the strangest weather.  We hit 64°F I think they said, and today it's rain and in the high 50's.  The nice part of not having a lot of decorations up, is we have very little to put away this year.

Christmas has been much different, with Mom not here to celebrate, so we will need to work on new traditions for next year.  I've come to terms with the fact, it will not be the same, and we will make changes.  It's hard to believe I made it past Christmas, and only baked one Christmas cookie.  I've had a request to make one more, before the month is over.



I don't know how, but I managed to finally finish this book.  I started reading it early in the spring. The garden/other projects keep me busy, with little time to read.  

I finished this one as well.  I know, a bit shocker.  I think this makes book 5 for this year.  I typically read a lot more.

I read most of Leslie Meier Mystery books years ago, but our library did not have some of the series.  I do enjoy them, but would like to venture into other books I have at home.

If you are looking for a Christmas movie to watch, try Netflix movie Holiday in the Vineyards.  We very much enjoyed it.




We tried a new deviled egg recipe, and we really like it.  The recipe says to put the extra filling on crackers, and it would be delicious on a cracker.  We loaded it all on the eggs.  It is a recipe from The Southern Lady Cooks, and the pimentos make it colorful for a Christmas side dish.  

I used my homemade garlic powder for the recipe, and just the small amount adds a good amount of flavor.  They are not low in calories, but I'm glad we tried them.

Happy Homemaker Monday

 Happy New Year!  I do not write out resolutions for the upcoming year.  I started working myself  (physically, and there may be an update this new year, we'll see).  I'm just glad the holidays are done with this year.

On to other news . . .




A little homemaking tip:  I fill a small spray bottle with vodka (sanitizer) and add a few drops of lavender essential oil.  I spray our mattress when the bedding is being washed.  It cleans the mattress and leaves a lovely scent.

Self Care:  my self care this week was to buy myself a new set of casual dress boots (tossing out a very old, and very worn pair too).  I never find anything in the size I wear, so this is a pamper me moment.  A big bonus, was that the price tag said $55.00 and they were on sale for $14.99!  What did you do for yourself last week?  Or do you plan some self care next week?

The weather . . .

It rained all weekend, and we are so stinkin' tired of it.  We did not get any work done on the coop either.  Woke up to more rain, and a slight possibility of a snow shower today.  Temps are in the high 30's/low 40's here right now.


Right now I am . . .

Making coffee, and will be putting the Christmas tree in storage for the year.


Thinking and pondering . . .

I'm considering hiring someone to paint one ceiling, and possibly more.  It all depends on my energy level this winter, ha ha!  Also, the cost.  

I'm also thinking about changing my blog background/theme on blogger too.  There is much on the side bars that can be removed too.


How I am feeling . . .

Honestly?  Pretty good, and I feel on task too.  I got all of the Christmas decorations put away, other than the tree, and life in general is pretty good.

Looking around the house . . .


I know some people get upset when people paint wood, but these dark wood doors need to get a new look.  I'm back to priming and painting some interior doors.  One door is completely done and back up where it belongs, and another down on the saw horses for a new, and brighter look.

I got the drill out, removed an old curtain rod (missing a part since last summer), installed the new one and put the curtain back up.  Some days, it's the "little" unfinished, now finished jobs that make my day complete.

I've also filled two boxes of purged/no longer needed items to donate soon.  I have a small stack of books to donate to a free little library soon as well.  If not, the books will be donated to the library book sale.  

To-do list . . .
-wash a kitchen rug (I can only do one at a time, as they have to dry flat, and I only own one drying unit for doing that).
-laundry
-dust
-put Christmas tree away, and other decor
-wash oven mitts (I try to do this once a month, but if I use them daily, then once a week - Homemaking Tip)

Use a clothes hanger with these hooks to hang dry your oven mitts.

From the camera . . .

In case you didn't see the recent post, my bunching onions are doing great!  I harvested some the other day.  they are larger than normal green onions, but seem to be hardy for this time of year.  Of course, all of this rain is helping, so I am harvesting more and enjoying them.

Kitchen Madness


We finally got some rain.  It's back to humid and hot.  


I've been busy in the kitchen - freezing green peppers, jalapenos, more green beans, some tomatoes, and cauliflower.  Our popcorn is on, and looks pretty promising (although small), but my watermelon is questionable.

Pumpkin Soup ~ Tidbits

I have never made pumpkin soup of any sort, so this year I did. I roasted one entire pumpkin for this soup. 

The recipe in my "pile" or "stash" called for potatoes.  I did some searching, and found there are so many ways to make this soup.

I didn't follow the pumpkin and red lentil soup recipe I found online, but adjusted it to what I had.  I seasoned it with home canned hot sauce and garlic both fresh (heated with the onion) and some garlic powder to add more flavor.

 I served it with a dollop of sour cream, and freshly chopped parsley.  Some of it is going in the freezer.  The hens are happy gals too.  They are getting the pumpkin "guts" for a treat.

The taste test with the soup?


Delicious!   I used 2 carrots and 2 potatoes in my soup, as well as the pumpkin.

From "Stash to Trash" ~ Corn Chili Bake

I'm progressing at working on that pile of recipes to try.  It's hard to keep up it with it.  I still like my usual from "garden to table" recipes, like the one we recently enjoyed - boiled cabbage with potatoes and added cooked sausage.  It was so nice to enjoy something straight out of the garden.

The next recipe to try ~ Corn Chili Bake.  It came from Nourish and Heal magazine (2014).  I of course looked online to see if it was posted on their site, but I could not locate it.  So, I am posting it here with by adapting organic ingredients (and beef vs. ground turkey).  You can get all of the vegetables and black beans from a garden.  And you can also make your own fire-roasted tomatoes.  I had dehydrated cayenne peppers and had my own homemade powder on hand.

Happy Homemaker Monday

 


(Snow!)

Our weekend went way too fast.  We actually went out for breakfast with family, had a kiddo and her boyfriend over for a late lunch, and did not do a lick of work.  It rained Saturday, and snowed Sunday.  Sunday was more of one of those days you just wanted to curl up with a good book or movie and stay home.



I also shared some of our bell pepper breakfast ideas with the kids, and by golly, I need to make these again soon.  I miss the stuffed ones for breakfast too.  Here I was telling my husband, we should take a year off from the garden and let it (and us) rest, but I miss those fresh bell peppers.  We could always hunt down a produce stand, but even people we know who have a stand, spray their garden.

The weather . . .

It's still cold today, but we are to warm up this week for a bit, then cool back down again.

Thinking and pondering . . . 


We've been discussing foods we only eat when the garden is producing fresh goodies.  I sure do miss roasted beets with onion, and rosemary and thyme from the herb garden.  I will be checking prices on organic beets in the store.  We are also missing my spiced pickled beets.  We are out of them.  


How I am feeling . . .

Tired.  We do not like the time change, and we had to "spring" forward Sunday.  It's an adjustment for sure.  On a good note, we are back to longer days and later sunsets, and in time for our spring gardening work soon.

Since I met two fitness goals earlier in the year, I have come up with two more.  

I am back to making weekly nettle tea infusions.  I have not been making them in the winter, but with the warmer days, my allergies act up, and it's great for allergies.  As a bonus, it's great for my hair and nails.

Not much.  We mostly listened to music.


Looking around the house . . .

It's pretty tidy, other than a box of books to donate, and some of my leftover yarn to deal with.   I'm actually making up a plan to distribute my books in a few free little libraries.  The one free little library that I went to recently, is very full right now.  

I also started to purge the office.  It's a slower process, as I am still working on the hallway painting, and of course have regular chores, and cooking from scratch (that is time consuming). Not to mention, we all need to make sure we take time for ourselves in each day.


On the to-do list . . .

-prepare a new breakfast for the next few days


Organic hannah sweet potatoes roasted in garlic powder, roasted black beans and corn, onion, bell pepper and a bunch of spinach, topped with two eggs, and homemade cilantro sauce and green onions.  So good!


-dinner prep
-brew another nettle tea infusion
-brew a gallon of iced green tea with garden spearmint
-cut up a whole watermelon and a whole pineapple
-catch up on any laundry
-dishes
-sweep/mop any floors
-finish cleaning one bathroom

I'm still crocheting this large blanket (photo from last week).  My goal is to finish it before the end of March.

I am still slowly working on an XL pot holder for us.  It is in my on-the-go bag for when we go to town or longer drives.  Once these are done, I have a few more unfinished projects.  I also have some crochet Christmas tree ornaments in a project bag.  I totally forgot about them.

This and That ~ Winter Weather Advisory (and it's April!)

The bad:

I heard that Hobby Lobby is closing all their stores for good, due to government mandate involving health insurance and their beliefs.  Has anyone else heard this?  Or is this just rumor?


The good:

My dehydrator replacement door was back in stock and has been ordered.  Woohoo to that.


Something I learned: 

I watched a show on Create TV (cooking), and found out it's healthy to add garlic powder to your chicken feed occasionally.  I caught the 1/4 cup part, but missed per what amount of feed.  I'm trying to find the show online to re-watch it.  I think I found the show, but the station is operating on reduced power, so I'll have to check back later.


Something I learned:

You can make jelly from the red buds on the red bud tree.  I most likely won't get to try it this spring (the freeze), but will try it next year. My Mom has a tree.  It's also medicinal.  Fun and good to know.


I had a request for the recipe for homemade lip balm.  The original recipe I tried uses calendula and is found on Mountain Rose Herbs blog.  I now make an infused oil with lemon balm and make it that way.

As far as making homemade "neosporin" Here is the recipe I use, but there are other recipes online as well using optional essential oils (different ones) to try.  I love this recipe. 


Whelp, sadly the best pizza up by my husband's work has closed both locations due to no one wanting to apply to work.  He tried getting it for us last week and they were closed.  They are hiring, but can't get anyone to work (thanks to you Gov extending unemployment until Sept of this year, which is ridiculous).  More local businesses have closed on certain days or have closed completely until people apply to work.


I decided to cut most of the lilacs in hopes they'll bloom inside, so I didn't have to cover it.  I can't cover my apple or peach trees, so most likely no fruit again this year.


Well, this happened.  We got 4 inches.  A record I believe.  Crazy.  Thank goodness I had enough old sheets to cover some things out there.  The freeze comes tonight.  Oh the fun...
