Random Tidbits ~ Pumpkin Hummus

The carrots are all out of the ground - 7.7# more. I got them all out after a day of rain, but it was so wet out there.  I could not pull dead plants, and then the rain returned this morning.  With a vengeance.  This puts all garden work, and barn work to a halt.

Losing my Mind. . . Holiday Prep ~ Paranoid Prep

My brain has gone plain insane.  I feel like I'm caught up in a whirlwind and I'm trying to reach out to stop and get a job done, and I'm sucked back in again heading another direction.

The barn....

Oh lets not talk about that job.  It's getting on my nerves, although I've wanted that job done for several years.  So. Much. Work. The barn siding was delivered.  Then rain arrived, so garden work halted, and I was back indoors.  Deep cleaning, cooking, putting up. . .

The hens are molting.  Egg supply is at it's all time lowest.  I made a crock pot of pumpkin oats.  We are not tired of pumpkin just yet, ha ha!  I picked a handful of red raspberries for topping the oats too.

I baked my first flourless pumpkin bread.  I have always baked it with flour, so this was a new recipe.  I only tired it out of curiosity, and the fact it saves me on ingredients.  Einkorn flour isn't cheap. It was so-so.  Not awesome, yet not bad either.

Happy Homemaker Monday

I'm joining Sandra at Diary of a Stay at Home Mom today.

On the breakfast plate. . .
Pumpkin steel cut oats, banana, tomato juice, coffee

Looking around the house . . .
I see I need to dust again.

On the "to-do" list . . .

Uses for Yellow Squash Relish

I had a few pints of yellow (straight neck) squash relish to use up.  It appears to be an item we don't use as often as I though we would.  I read it's great on hotdogs.  We don't eat hotdogs.  I also canned it in pints vs. half-pints, like I should have. Of course it's good on burgers too, but then we have most of the jar to use up before it goes bad.
Here is what I tried with the yellow squash relish, and liked it.

Over Black Beans:

First up, I soaked black beans, then cooked them in the crocky the next day (with chopped onion and minced garlic sauteed and added).

. . .from stash to trash

Since I'm on a roll with new recipes. . .and because I have a reputation of "stirring" up the holidays with something of the alcohol nature (for the adults of course), I have wanted to try a new recipe of Homemade Strawberry-Watermelon Rum.

Sweet Potato Pie Recipe

(pie while cooling, top will drop down a bit)

Sweet Potato Pie
(organic ingredients)

Boil 1 lb of sweet potatoes (I use a kitchen scale to weigh the sweet potatoes) for 45-50 minutes or until cooked, then place sweet potatoes into an ice bath (safe bowl to add ice and water) to cool.  Peel and place in a bowl with:

1/2 cup softened butter.  Mix well - hand or electric mixer works well.

Overnight Breakfast Recipe

Sharing the recipe as promised.  I'll get the sweet potato pie recipe up soon too.   You are getting two blogposts today, due to this. . .

Woke up to this again.  Rain.  I can't do garden work, work on the barn siding, barn rubble, nor weed the last of the flower bed either.  The rain has been playing havoc on getting outdoor work completed.  And because I'm out of bacon fat, I don't want to roast the last 8 pumpkins either.  No way am I roasting them without roasting the seeds.  My whiskey-bacon pumpkin seeds went super duper fast.  Lick-ity split fast.  I'm out of bacon and whiskey.  Oh, don't worry.  I'll be tearing apart my vacuum sweeper and tackling some cleaning, getting another article written, and possibly some porch time and handiwork in the mean time.

Back to the recipe.
