Wild Animal ~ Salted Caramel Fudge

Good morning y'all!  It's a frigid 17°F here this morning.  It looks like we got about 3-4 inches of snow last night, and taking the dogs out this morning was not exactly peachy. 

First, they were so excited to play it in, they kept forgetting what they were out there to do.  Second, traffic is traveling at about the speed of a turtle.  Roads look terrible from what I can see, and those slow vehicles kept distracting the dogs.  Once that task was completed, I had hungry barn cats and indoor cats to feed, a fire to stoke and coffee to brew.  School is delayed two hours for now.  I wouldn't be surprised if they canceled it.

I took this through the door from the inside last night.  What in the world makes long, wide drag marks?  About two hours prior to this photo, there were two very long ones to the right of it coming up to the cat food and then leaving. I wish I took a photo then, as the marks were better to see.  What do you think left this drag mark?  A weasel?  Fox?  Coyote?  It's much wider than a cat tail dragging, and cats don't drag their tail like that.  


                                      


Yesterday I dug my way through the pantry.  Guess what?  I had the ingredients to make Salted Caramel Fudge!

Here is the recipe.  It really tastes like caramel too.  I use organic ingredients, and the organic sweetened condensed milk is never sold in stores around here, only about 3 hours south of us in large health stores (or online).

Salted Caramel Fudge
1/2 cup butter
1 can (14 oz) sweetened condensed milk*
1 cup packed dark brown sugar
2 Tbsp. light corn syrup
1 cup white baking chips
1/2 tsp. coarse sea salt

Line an 8 x 8 baking dish with foil and light spray with organic non-stick spray or lightly coat with organic olive oil.  

I did not have spray, so I used my olive oil.

In a medium sauce pan, melt butter.

Add the condensed milk, brown sugar and corn syrup.
On medium high heat bring to a simmer, until sugar is dissolved and mixture starts to bubble.  Reduce to low, and stir constantly as it cooks 10 more minutes.

Remove from heat, wait a few seconds for the bubbles to stop, toss in the white baking chips, stir and then wait 2 minutes.  Stir again until the chips are melted, and pour the mixture into the prepared pan.  Sprinkle the top with coarse salt, and refrigerate 2 hours before cutting.

I store mine in the refrigerator in a tightly sealed container.

*You can also make your sweetened condensed milk from scratch vs. buying it organic.  It just takes (all organic ingredients, and homemade vanilla) whole milk, sugar, butter and vanilla to make it.  There are many recipes available online.


I'm still working on "Vet Tech" Daughter's scarf.  It was cold enough to wrap my legs with an afghan yesterday too.  I'm whipping up some new items for the next craft show too.  The next one, if they hold it, won't be until sometime in February.

Dog duty is on me today.  My "Grad" daughter stayed overnight at Gram's house to avoid driving home in the snow storm.  She is still driving my car, and said in-town driving was terrible. She delivered Jesse his doggie scarf and I am told it fits him perfectly.  He's going to need it today. 

Speaking of Jesse.  "Vet Tech" daughter now has her dog registered as an "emotional support" dog.  I asked her what was wrong with her, and why she needed to do that.  She answered, "I'm a college student."  Either way, now she can rent any apartment with him.

This and That

Cookie and candy baking came to a halt this week.  Money flew out of my wallet as fast as it flew in.

With Hubby's work schedule the truck is not yet repaired, and the ignition went out on the car that was handed down to our daughter.  So...$230 (so far) for the truck and another $160 for the car.  Talk about frustrations and headaches.  I know this is not a happy update, but it's reality.



Zuri is modeling a dog scarf I crocheted for Jesse (Vet Tech daughter's dog).  She loved it, but King tried to eat it off of her, being jealous and all.  I guess, sigh, I'll have to whip up one for all our dogs and one for "grand dog" Mia too.  They are made to fit so they don't slip off when the bend their heads down. Jesse loves to eat snow. You always know where he's been because there is a tongue mark between his paw prints in the snow, ha ha!


Update on Tiger.  Blood work ($175.00) ruled out most types of cat cancer.  They are saying it could be an allergy of some sort, so he's getting kids allergy medication and he hates it.  They don't make it for cats, so he gets what kids get these days.  He spits it out, sneezes it out, whatever to avoid swallowing it.  Poor guy.  I hope it makes him feel better.  If not, it's back to square one again with him.

It's cold out, but the wind and sunshine helps keep my electric bill down.

Someone is slacking in the egg department. 

Christmas goodie recipes were dug out, and a grocery list written.  Here's hoping to get a few holiday treats soon when vehicles are up and running. I'm picking maybe two recipes this season.

Crochet work continues, and all standing orders are finished.  My hands are very sore today, and I have one scarf to make for a daughter, so I'm taking a break today.  I only have my muscle rub to work with, so here's hoping it helps.  I am so close to ordering dried organic arnica, but I may have another idea if the "muscle rub" I made doesn't work.  I really need something that will help the joints too.

It's freezing cold here, so I tossed my hens some more fresh straw last night, and stuffed their roosts with warmness. They were not out in their run yesterday, on account of another fox sighting. I heard him early morning, and daughter saw him the night before.  Sigh.  I am hoping that after a few days, he'll/she'll move on up through the woods.

I have been drinking organic, store bought dandelion root tea.  I have depleted my homegrown stash of dehydrated root.  I love the little tags that come on them.  So inspiring.


I finished another scarf order last night, and have one left to do.  Then it's onto making new stuff to add to the inventory, plus one daughter's requested scarf.

Sorghum Molasses Candy ~ Tidbits


Sorghum molasses candy is one of our family favorite Christmas candies to make.  Once I started making it, I stopped making toffee for several years.  Although much of my family loves them both.  I just may make some toffee yet.  The sorghum cooks into a honeycomb type candy, is broken up, and then coated in dark chocolate.

Homemade Smoked Almonds

Hello?  Anyone out there in "cyber" land?

I love smoked almonds.  However, the ingredients in them are typically bad for good health.  Usually, they include bad oils and a form of soy.  In my opinion, all soy, unless it's organic/non-gmo, is bad for good health.  Very bad. If you saw how many times they spray the soybean field in my state, you'd never eat anything with it again.  Anyway....

I decided to make my own.

First, I made homemade celery salt using dehydrated organic celery leaves and salt. I had about 1/4 cup of dehydrated celery leaves, so I ground them up with a small amount of salt.  I didn't measure.  I just "eye-balled" it. 

Tip:  When you purchase organic celery with leaves, to freeze celery for winter, dehydrate your leaves for celery salt or to simply use in soups/stews, pastas, and other dishes too.

Then I made the almonds with the celery salt and other ingredients.  How did they taste?  

Delicious!  I used all organic ingredients and the egg white from one of our layers.

Cats to the Vet ~ Harry Potter Scarf ~ Calendula Cream Update ~ Cashew Brittle Recipe

The cats have both been to the vet this week. Somehow, with the "car shuffle" we managed it.  Jasper had to be seen because of his teeth.  He has gum disease.  He's going back for a teeth cleaning to prevent it from getting any worse.  There is no cure for gum disease in a cat sadly.  He's on antibiotics until then, and he's not liking getting it.  




Tiger is sick.  He started to vomit all over the house, so we switched his food, and he'll only eat one wet type (and it has to be cold).  He was keeping it down, but now his back bones are sticking out too much, even though he was eating.  Now his hair is falling out in large clumps.  The vet looked him over, and blood work is getting processed.  We'll get results soon.

Random Tidbits ~ Cashew Brittle

Hubby and I had a long Monday.  Who puts events on a Monday evening anyway?!  Well, the public vocational high school, that our youngest daughter will attend next year, held their "career" night Monday night.  She is the one kiddo who will go to school to learn to be a full service cosmetologist.    

More vehicle troubles - Hubby's brake line broke while driving home on the highway.  We went to fetch daughter's old car (still need to transfer title), but she let the tags expire.  So....back to square one.

"Grad" Daughter got herself a second job.  She was hired during the first interview for Christmas help in a retail clothing store.  She is super happy.  She will need the money to pay for her car insurance.

Not much to update in the sense of homesteading lately.  I miss our goats right now (for some odd reason, maybe due to lack of outdoor garden work?).  The hens are continuing to supply me, so I am stashing some for Christmas baking.  It's been raining and cold, so the barn wood job is on hold for a day or so.  It's been cold too.



Cashew brittle was made.  I haven't made it in years, so it was due time this year.  I made two trays, but I think I will make one more.  It's not a hard rock brittle, so it's easy on your teeth.  We love it.  And of course I use organic/non-gmo corn syrup to make it.  One kiddo said, "Wait? you made it this early??"  Ha ha!  I told her, "you do realize there are only 20 days until Christmas?"  Hubby already found my stash and ate a good handful or two.  I'll have to re-stash my stash.

I decided to send the next finished scarf off to CA, considering the length of delivery time, and work up the next four for the local sales.  I'm saving the gifted one for my other daughter last.  I have only a few more rows to finish another scarf today, then I'll start another one.  I also sold another mug set and 4 dishcloths.  

Its a brisk 29°F out (feels like 17) and it'll only get up to a high of 40 today.  Yesterday we had almost zero sunshine, but today we should get some.  Ever so thankful for that sunshine too.

Barn Rubble ~ Tidbits

The crazy weekend has ended.   The weather warmed up again on Sunday, and we needed some R and R.  You bet, we took off on a motorcycle ride.  We needed coffee, so our ride was to the grocery store, ha ha!  We just took the long way home.

Hubby and I are back to cleaning up the barn rubble.  I am back to removing nails to prepare some siding for delivery (and put another dent in the clean up).

I told Hubby life would resume to normal after the craft show.  Well, it will be another week or two for me, ha ha!


Here are just a few photos from the Christmas craft show.  I totally forgot to take many, as I was crocheting the entire show.  I had some hand stitched cards, photo cards, facial scrubbies and cup cozies leftover from the Farmer's market, so the girls helped make price tags.



I also had pin cushions leftover, and one sold.  We had much more on our tables  - necklaces, keychains, all sorts of handicrafts.

I sold one of the mug sets the very first minute we opened (the blue one).  I sold one wine cork (painted) necklace, and a few other items, but nothing to brag about.  It was a very long 9am-4pm day, in which we really didn't get a lot of customers.  I didn't sell one scarf either.  We made enough to cover cost of tables, and donated item, but it wasn't a best show.  Hubby wants me to find one more to do, but  guess what?


I completely finished the "Harry Potter" scarf for my youngest daughter's birthday.  She loves it.  While I was crocheting at the craft show, my "Vet Tech in training" daughter eye-spied it and wants one for Christmas.  So, with no customers, and a few hours left until the show ended I started another one.  

And.....because I was crocheting it, a customer placed an order for one (I don't even have a price yet, ha ha!).  Then...yes there is more, my cousin in CA, sent me a message that she too wants one.  As of this morning, I have 5 orders for the "Harry Potter" scarves, and one for Slytherin colors.  I will have to make a trip to the yarn store today or tomorrow.  I had no idea what "Slytherin" colors were either, so I had to look that up too.  

So, although the show wasn't that great of my time spent, I got orders for two scarves I'll be getting paid for soon.  I got one order just by my youngest wearing hers in a store.  The cashier ordered one for her sister. 

It will warm up even more today, but later this week we will be getting back below 20's at night.  Brr.  I'll try to squeeze in some outdoor time to get some more vitamin D today.  We are also cleaning house for someone's 16th birthday party soon.  My evenings will be busy with crochet work, ha ha!  I hope I can get enough yarn for all of them.

Preparing and Packing

The rain stopped late afternoon yesterday, and we had beautiful sunshine the remainder of the day.  Too bad it gets dark so quickly.  My hens were happy anyway.

Time for me to prepare for the craft show is coming to and end.  I was pretty successful at finishing a scarf, one last boot cuff, both of which need ends sewed in today.  


I sewed in ends to several bracelets, and sewed on buttons. I only have two 8 inch bracelets, so if time allows, I will crochet just one more.


I also (gulp) crocheted up 6 angel ornaments.  Five will be given away for free to the first 5 customers who make a minimum $15.00 purchase with me. I haven't decided if I want to spend extra time and add hangers either.  Most likely will give them as they are, or take thread with me tomorrow.  Two will be added to the ornaments and hopefully sold.  

I had hopes to get a few more granny square key fobs made too.  People like to pick up small items too.  Not sure if it will happen, but I can always take it with me and put a few out as the day goes by tomorrow too.

Over the years of selling at the Farmer's Market, I had laminated price tags to tape to the table.  This year the prices of some items are going up, so I need new ones.  I have decided to simply cut index cards in half, write on them, and tape them to the table.   I just hope my hand written tags will look professional.  My laminated ones were printed out off the computer.  I don't have time (nor money) to do that this year.

Tomorrow is a big day around our area, for the last of any Christmas craft shows.  Huge ones are taking place in other nearby towns, so I hope some travel to ours too.  

As Hubby said last night, "life will return to normal after Saturday," ha ha ha!  I have been  crocheting every night.  Meals will return to normal too.

This and That ~ Randomness

Someone, I'm not saying who, forgot to stoke the fire last night.  I got the chance to clean the ashes and restart it early this morning.  It's not too bad out - high of 50°F today with some rain in the late morning.  Lows are down to 20's.  Forecasts have predicted possible snow, but so far zero.  Towels dried great outside yesterday.  I wanted to get a dose of sunshine, and those stinkin' hunters were out back all day long.  Grr.  Either they have really bad aim, or they are shooting several herds of deer.  I'm guessing bad aim.

We are warned by the news about deer disease again.  It was a problem last year too.  I'm not sure I'd want to be eating one around here.




My jar of calendula oil and four thieves vinegar were ready to be strained.  Now I can use both.   Actually, I'm the first to try the vinegar.  I have a slight sore throat, and slightly swollen lymph nodes.  Two Tbsp. already went down the hatch.  It tastes like garlic.  I'll also be drinking hot ginger tea this afternoon.

I also got my chickweed tincture property bottled (amber bottle with a dropper) and labeled.

I need two more oils made, but those are going on the "after the craft show" to-do list.




Boot cuffs are getting made now.  I have two styles (two colors) so far, but I'm collecting free patterns for next year's Farmer's Market and winter shows.

I got my "door prize" finished for the craft show as well.  Red mug, with red/white and blue cozy and coaster.  One lucky person will receive this.  Each vendor is asked to donate one at a value of $15.00. 

I'm still plugging away at the 4th scarf.  I have been crocheting like a mad woman and forgot to thaw the fish, soak my beans, and a few other things yesterday.  I had to put it down, back away from it (ha ha!) and get some things done.  

I literally, have so much I can be doing, that I wrote out a list and it's called the "After Craft Show" to-do list.  I'm not joking.  I need to get the scarf finished, and a few more things to be ready for Saturday, then after that, I can jump back on the to-do list. Not to mention, start another scarf for our youngest daughter's birthday next month.

Herbal Book ~ Tidbits ~ Boring Stuff

I borrowed this book from the library.  I found a few good recipes to try.  I'll have to wait for spring and summer for a few of them though.  Just sharing in case you haven't seen this book. It's a beginner book, but I have not made a balm with chickweed and plantain yet.  That is first on the list.  I have chickweed salve that I purchased, and I LOVE it.  I hope it doesn't turn out to be a rock hard "balm."

Tuesday, I took some time in our 65°F (and sunshine all day) warm up, and weeded the garlic.  About 90% of it anyway. We've had lots of rain, and with the lack of snow cover, it's full of thistle already.  I found five of the giant bulbs rotten.  I replanted, but it may be too late.  The ground is very very wet, so I'm hoping the sun and heat dried it up a bit.  I also replanted the Creole variety - about 9-10 didn't come up.  Not sure yet on the last variety.  I'll check after next week.

And guess what's arriving tomorrow?  More rain. Today's high is 47°F.

I am going to wait until shotgun week has ended to finish the weeding.  When I heard the first shot I saw trees move not far from me.  I'm pretty sure I know who is shooting out in the woods, and they are not safe people.  I went in until Hubby got home.  Got myself a good dose (double dose) of vitamin D, then a dose of iron.   

You bet we went on a motorcycle ride.  I so much enjoyed seeing the beautiful Christmas lights on a motorcycle ride in late November.  I smiled all the way home.

I spent one day, up until noon, getting my last minute health insurance points.  Oye, what a mess of hoops we have to jump to keep our current cost the same!  I could have worked on barn wood, cleaned inside, canned, but the points have to be in before the end of December (and once you complete a "course" they can take up to 15 days to add to your account).  This meant watching several, hour long videos on financial tips, and health stuff.

Boring!

I'm glad that job is done for this year. I got a set of boot cuffs made while waiting for the videos to end.   (Yawn)  You can't just walk away and let it play either.  They spontaneously stop the slide show and give you quizzes.  

Although I think we are overdue for some snow, I am enjoying hanging my laundry out in sun and wind and warmer weather.  I thought you'd enjoy a funny photo, because I haven't taught myself to knit socks yet, you get to see just a few pairs of my Christmas socks (ha ha ha!).

Last Bottle of Homemade Pear Wine

The last pear wine update was posted here (November 9, 2016).  We had some wonderful taste tests, and eventually bottled it.  However, the bottles with corks popped some tops, and turned pink.  

We didn't have enough bottles with screw caps, so much went bad.  However, to our delight, we kept one screw cap bottle.  

We popped it open last night.  It was very good, but too much carbonation in it.  More like a high alcohol champagne, ha ha!



We are so excited that we've learned so much already, and next time we will have another carboy and we'll let it sit longer with the bubble airlock on it.  

We were so happy to enjoy that one single bottle, and now we are prepared to do any fruit wine.  Peach, cherry, any berry, grape, plum, apple....I may need more fruit trees, ha ha!

We now have a supply of empty screw cap wine bottles too (thanks to my wine drinking friends and family).  Many wine companies and changing over to screw tops due to the cost of corks.  

I thought you'd enjoy this update, as we travel through our homesteading and self sufficiency adventures.  I'm not sure what's on the schedule today yet.  It all depends on the weather.

Last night I had to put a buff orpington in the emergency coop.  She's loosing many feathers from molting and the other hens are pecking at her backside.  I have one chicken saddle, but they hate to wear it.  And the other hens will attack who ever is wearing it, so hence we just separated her until she's got her feathers back.

In preparation for the upcoming craft sale, I finished another slouchy hat, another mug/cozy/coaster set, sewed in the ends of other projects, and have 3 completed double wrap infinity scarves (with another in the making).  If I have time, I may whip up a few ornaments.

Load of Wood ~ Freezing Ginger



It was time to cut more wood.   We cut up rafter boards, a few beams and about half of the pile of short boards I pulled nails from.   We put another dent into cleaning up the barn mess, and the wood turned into a blessing for us.  


I was a few days late for this step, but the garlic was drained, half the liquid saved for salads, and the remainder heated with honey and poured back over the garlic. It will sit another 3-4 weeks.

The weather was heating up to the low 50's, and sunny.  Beautiful sunshine.   In fact, it was so beautiful, that we later took off on a motorcycle ride.  We passed about 5-6 other die hard riders Friday too.  

Saturday, it was the OSU-Michigan game, so we didn't get anything done.  It was also a day for a get together with my side of the family.   

I froze fresh organic ginger for winter for the first time.  I have dehydrated some in the past, but from what I have read, frozen will taste better.  I don't want to be home in a snow storm, and not have any.  Or have a sick kiddo and need it.  I simply wrapped it up with peeling on and will just peel as needed.  I will be stocking up more when it's on sale again.  It's organic too.

Guess what???


Poof!  After almost a year of not laying one single egg, the two of the three araucanas are laying again.  I was seriously about to drive them the one hour drive where they'd become stew meat  But alas they have proven their right to stay.  And some of the barred rocks and buff orpingtons are laying again too.  During the last two weeks or so, we were getting one egg a day.  I told Hubby the araucanas must be "Christmas" chickens.  It seems to be the only time of year they lay us eggs.

Last night we got home when it was getting dark out, so we plan to unload the wood today, but also have plans to cut another load.  We have a long to-do list, so I'm thinking we'll be spreading it out over the next week.

A Hammer and a Pile of Wood

Here is where I (re)started - the pile of wood left from tearing apart the roofing of the barn.  The long boards were put to good use - a co-worker of Hubby's that makes furniture with it.  The shorter boards remain in this somewhat of a huge pile.  I've worked on it a few days, but didn't bring much up to the house.  While Hubby is at work, and on good weather days. . .


 Nails got pulled.   And they are not easy to get out either.  Some are so mangled it takes great effort.

Added to the existing pile until we can cut them to fit the stove.  My wrist was sore, so I took a break.  


....putting a dent in it.

Best Thanksgiving Ever

I am ever so grateful for my health, my family's health, and well being.

Guess what I did the day before Thanksgiving?

Nothing.  Nada.  Zip.  Literally.  Other than getting up at the crack of dawn (5am) and making breakfast, I pampered myself all day (aside from animal chores).

Thanksgiving day?  Ha!  I was up sipping coffee, enjoying the sunrise, while Hubby made us omelets.  Then we took a drive to visit Hubby's family before we enjoyed our own Thanksgiving.   

We ate out.  Yes, can you believe it?!  There is a nice restaurant (about an hour away) famous for their Thanksgiving dinner, and reservations are required.  I'll admit, it was not the same as homemade, but pretty close.  We met up with one daughter, another had to work.

After the meal, the girls all jumped in their sister's new car at the restaurant and carpooled to go "Black Friday" shopping.

Hubby said he saw a huge change in my mood. He was telling everyone later that I was up singing and dancing and dressing up.  I was too.

Best Thanksgiving ever, because Hubby sang to me in the car.  He serenaded me all the way home.  

Total bliss.  

I'm up to stoke the fire, and let Hubby sleep in, but we may not need a fire today.  The weather is warming up a bit today. Yay!

Canning, Bourbon and Crochet ~ Cherry Bourbon BBQ Sauce




Tuesday started out just gorgeous.  Caught these photos after seeing it going out to fetch firewood.  Just makes a person smile.  

BBQ pork chops went into crock pot yesterday.  We had leftover wild rice, and it was a perfect match.  The sauce is home canned, with added fresh onion, green pepper etc.  Yum.  Recipe is in the cookbook, "Fix it and Forget it."  Although I think it's called "Spicy" not BBQ in the book.

Now if you just read the blogpost title and wondered (hiccup) if I indulged (hiccup) in that bourbon or (hiccup) not .  .  . 

 . . . Cherry-Bourbon BBQ Sauce was canned. Recipe is a "pile to file" keeper recipe.  I've had this on my list for over a year now.  It's from "The All New Ball Book of Canning and Preserving @ 2016."   And you bet I tasted it right away.  Yum!    I would recommend it for gift giving for any occasion too.  You can use it on meat, fish, rice or other grain, on burgers, in other recipes...endless ideas.

I couldn't get my towels out on the line until noon, but the high winds dried it spankin' fast.  The sun was out too. 

Yesterday's snack?  Pumpkin hummus.  Mmmm.


It was also a day to blanch and freeze 3 bundles of organic dandelion greens, pick some more kale, and bring in one egg from my free loaders.  The kale is in this morning's breakfast.  I'm thankful it's still producing.

I got up extra early this morning, to make a fresh hot breakfast (not a reheated one Hubby usually takes to work).  Why?  Well, ha ha!  Oh boy.  I watched him walk out the door with pancakes on a plate with syrup and a fork.  There was no stopping him either.  It could have been bad with him driving and eating pancakes to work.  He arrived safely and on time, but today he'll not get away with do that.  

I'm making omelets - onion, red pepper, potatoes, ham and kale.  Gotta get them greens ya' know.
