Curried Lentils ~ A Crockpot Summer

As promised, here is the recipe for the curried lentils.  However, I don't have a photo of it.  I do have one of what I made with leftovers.

 Curried Lentils with Spinach


Heat 2 tsp. butter (or canola oil) and saute one onion thinly sliced or diced, until browned.  Add 2 cloves of garlic, minced, 2 jalapenos, diced, and 1/2 tsp. red pepper flakes.  Saute for 2-3 minutes.

Add the onion mixture to the crockpot.  Sort and rinse 1 pound of yellow lentils.  Place lentils and 6 cups of water, 1/2 tsp. salt and 1/2 tsp. turmeric into crockpot.

Cook on high for 2 1/2 hours. Add 4 cups fresh spinach.  Stir and cook on high for another 15 minutes.  Serve.



 I called this a "curried lentil" frittata, but it's really just leftovers bits of anything leftover, with 3 good scoops of curried lentils in it.  It was however, delicious.
