I made myself a binder (nothing special, just to organize) for Christmas preparations years ago. I keep recipes (which I should also copy and keep in my regular recipe box), Christmas gift ideas, games and so forth.
There is not too much in the binder, as years went by, and we continued to remove very old (and dog ruined) carpet, and do home repairs and updates. We just didn't host any holiday here, and we continue to do that (much needed repairs, updates, purging, painting etc.), but in the mean time. . .
The binder reminds me to try a new recipe, or write down a homemade edible food gift idea etc. Back in the day, January and February were my months to made handmade Christmas tree ornaments for the next Christmas. I LOVED making Christmas ornaments, and my family was given a plenitude of them. Trust me when I say in abundance, ha ha!
I then resorted to steering those same energies to making them and selling them. I have now left the craft show scene due to lack of support/sales. I can tell you, that I do miss making ornaments and creating new ones from recycled materials. I may be making some to donate. Anyway, back to the recipe.

Holiday Appetizer
Honestly, this would be a great go-to for any party you are attending. The re-heating part has me thinking on easier ways that using an oven, but I'm not sure that's possible. Anyway. . .
You make a homemade dough (very easy to make, but they suggest you cream the cottage cheese, and I did), split it in 6 pieces, then roll each piece to a disc and cut it into 8 pieces to roll each mini-sausage. Place them on parchment lined baking sheets and bake.
(notice the print date on this recipe? Oh boy! In the process of looking for it, I found my long lost broccoli salad recipe card that my SIL shared with me. Time to clean off the side of the fridge ha ha ha ha!)
I printed the new (to me) recipe about a year ago, and it came up on my reading list via my blog last Christmas. I finally got around to trying it, and guess what? It's a keeper appetizer recipe.
I will be very interested if this does indeed freeze well (according to the recipe instructions it freezes well, and reheats nicely {bonus}).
The cocktail sausages are not that healthy, but the dough is homemade, and oh my gosh it tastes so good, and is very flaky. I made the dough about 3 days in advance, and it still made a delicious result. By the way, I am currently looking in stores, to see if they make the mini sausages from turkey or chicken.
There were no instructions on suggestions for re-heating, so I may play around with that idea. I think keeping them warm in a crock pot would not work, as the steam may make them soggy.
They only sell the mini (smokies) sausages in 14 ounce packages, so we had a small bit of dough left. We used it to wrap turkey pepperoni and it turned out pretty good too (maybe add a small bit of cheese for those).
The newly tried recipes would be great for any gathering, potluck, holiday meal or just for fun. It would be nice to have some Pigs in a Blanket in the freezer for unexpected guests too. I call these "not just for Christmas" recipes, but that is what I had in mind for them.

Hot Bean Dip
Here is how I make our Hot "taco" bean dip now (we've changed it just a bit). It is great for an appetizer for any get together as well, and especially for a Mexican food themed meal. So good! We topped ours with some snipped herb garden green onions too.
To make the dip (this is baked):
Mix together first:
2 blocks of organic cream cheese (16 oz. total)
1 can of refried black beans (organic, 16 oz.)
1 can of refried pinto beans (organic, 16 oz)
Once that is combined well, add:
8 oz. sour cream (organic)
2 Tbsp. of homemade dry taco mix (add more if needed)
Spread the mixture into a baking dish and top with about 1 1/4 cups of shredded cheese of your choice.
The thicker it is in a baking dish, the longer it will take to heat up.
Bake at 375°F for 20 minutes (30 if it is thicker). Serve with tortilla dipping chips or any dipping food of your choice.
I have not cut the recipe in half, as it goes quickly around here, but I think it would be just as good with one can of beans of your choice. You could also use homemade beans, homemade sour cream, or homemade cream cheese in this.
If you don't have homemade dry taco mix, use one packet of store brand instead.

Tuesday Tidbits
The aftermath of the Christmas gathering has all been cleaned up. Dishes are washed and put away, the Christmas tablecloth removed and washed, living room debris picked up, floors swept and mopped.....the worst part of hosting is the clean up. One thing I have learned, when someone says they are coming early to help, don't count on the help. Two, don't count on people bringing what food they say they will bring. Hence the dip I made at the last minute.
Finished! Off the list now. My husband's scarf is done.
I mentioned we tried a new dip recipe - Sausage Artichoke Dip (The Southern Lady Cooks, link goes to the recipe online). It is very good, although we think we may use "hot" breakfast sausage (or homemade) next time we make it. Everyone loved it.
Bonus: It's a crock pot dip recipe, and can be thrown together very quickly. We keep canned chilis on hand for several recipes.
The new gadget I mentioned the other day - a water pump for a 5 gallon water jug (we have well water). You simply charge it, and put it on the top of the jug. No expensive water system, and no flipping it upside down. It works great, but we did notice that not all 5 gallon jugs are the same. We first got a jug at a farm store, which the pump worked, but did not securely attach. Other stores sell the jugs that properly fit this, but we love it. No more filling 10 gallon jugs, and having to make room for them.

The weather . . .
We went from 60-70's to 50's and rain, and this week we'll barely see 50°F with lows in the 30's. I was successful at crossing off "wash rugs" and they dried outside before the weather turned.
Right now I am . . .

Thinking and pondering . . .
Well for starters, I'm searching to see if they sell metal ridge caps that are wider than 10 x 10 inches, and possibly covering the coop with a tarp until we figure things out.
We have another set back with the chicken coop roofing. He hand built the rafters, and the roofing he cut is too short for the ridge cap by about 2 inches. Not what we needed with the holidays and such. Otherwise the ridge cap would have been up last night.
How I am feeling . . .
Tired. However, I taught my granddaughter how to crochet. In the amount of time she was here, she learned to chain stitch and by the end of the night, I taught her how to go back the second row using single crochet. She left with a bag of yarn and a crochet hook, and a happy kiddo. I fear though, she will drive her Mom mad with questions now (ha ha!).

Christmas on Mistletoe Farm (Netflix). I picked this randomly, when I my husband worked overtime, and found it quite fun to watch. Very quirky, and at one point you'd think of it as a musical. A father with 5 kids inherits a farm and the animals with it. The town is very small, and the funny part is there is a woman in the town who crochets/knits for everyone and everything, including kid goats. Everything in this movie is surrounded by something crocheted in the scene. Family friendly.

Update on the home renovations/repairs/improvements:
When we moved in this house, the entire kitchen, and master bath had zero hardware on the cabinets. I bought plain wood knobs, and hand painted them with acrylic paints to appear like weather paint. They have lasted 14 years, and still look the same as the day I painted them.
I've been installing new hardware in the master bath. I've had it in a box since last year, and we got so far behind, painting in there did not happen (yet). I decided to install all the new hardware, and will beautify as the weather sees fit. Now I'm not shuffling the box around to sweep and mop.

Marinated cheese. A first time trying, and why I wanted a basil plant indoors. You can't buy fresh basil this time of year (atleast here anyway). Delicious.

Spiced Nuts - Recipe ~ Buttermilk Pumpkin Einkorn Flour Pancakes ~ Cheesy Baked Pumpkin Pasta with a Twist
I tried a new roasted recipe (see below), but didn't feel it was worth the flavor.
We prefer this recipe for Spiced Nuts (more variety of flavors):
1 egg white
1 tsp. water
1 Tbsp. maple syrup
1 tsp. ground cinnamon
1/4 tsp. salt
1/2 to 1 tsp cayenne pepper, ground
1/4 tsp. ground cinnamon
1/4 tsp. ground coriander
3 Cups almonds, peanuts, pecans, etc.
(we like almonds, cashews, walnuts and some raw pumpkin seeds)
Preheat your oven to 325 degrees F. I use my rimmed pampered chef stoneware, but you can line a rimmed pan with parchment paper (possibly foil) too. Coat with non-stick cooking spray.
In a med. bowl beat egg white and sugar until it is frothy. Add sugar, cinnamon, salt, cayenne pepper, cumin, and coriander. Beat the mixture until combined. Add nuts and stir to coat..
Spread the mixture onto your prepared pan. Bake 20-25 minutes, stirring once or twice. Once the nuts appear dry, remove from pan and cool. Store in an airtight container.
The recipe we tired was Chili and Rosemary Roasted Nuts (found online - The Real Food Dietitians). It calls for fresh rosemary.
The recipe for the pumpkin pasta dish is online with Skinnytaste. The original recipe calls for bacon. I didn't want to do that, as I had chicken sausages that needed eaten up. I cooked the shallot with butter/olive oil, and added the chicken sausages. We loved this dish. I will be trying it with the bacon next time. I used green lentil pasta with ours. The recipe called for 15 oz. of pumpkin puree. I used my scale to measure my pumpkin puree and it came out about 1 3/4 cups. The recipe also calls for fresh rosemary, and it tasted delicious in this dish.
I thought about adding some broccoli to the dish as well, but was worried it would make the dish too watery. Recipe is a keeper.

Whipped Feta Dip Trial #1 ~ Asparagus ~ Mexican Breakfast Skillet Tidbits
We really liked the flavor in this first recipe we tried, for Whipped Feta Dip. The recipe stated to heat the hot honey with the red pepper flakes. First, this recipe used sour cream, so it whipped up to a very light dip. We prefer a thicker dip, so we will be "whipping" up (ha ha) a trial #2 soon with another recipe. If you want this recipe, it is online with Greens and Chocolate - Whipped Feta with Honey Honey.
Tip: Make the dip at the same time you heat the honey, so it is room temperature. Otherwise the honey will harden on the dip. Also, we felt this was way too much for 2 people, so consider cutting the recipe in half, unless you are entertaining.
