Pea Casserole

 I was intrigued to try a new pea recipe, but did not want to use the canned condensed soup it required.  In the end, I think I did too much over thinking with this dish.



I did a little research, and whipped up my own condensed soup in it's place.  I will be tweaking it as we try my homemade condensed golden mushroom soup.  I basically used the directions for homemade condensed mushroom soup, but changed the broth from chicken to beef and added other ingredients, still using the shallots and mushrooms.



As for the pea casserole, here are the 3 ingredients to make it...

2 - 12 oz bags of organic (or home grown) frozen peas, cooked

1 can of golden mushroom soup (hence the homemade "can")

1 cup of shredded cheddar cheese

Once the peas are cooked, mix in other ingredients, pour into a baking dish and bake at 350°F


My opinion?  I didn't think it was absolutely out of this world good, but it wasn't bad either.  It lacked flavor.  I think I need to continue to add a few more ingredients, but we will be looking for more ways to dress up peas from now on.  Maybe more organic soy sauce or possibly add Braggs Liquid Aminos.  Maybe more onion, and some garlic?

I have researched most recipes online for ingredients for "Golden Mushroom Soup."  What would you add for flavor?  I honestly think you could just use the homemade mushroom soup and maybe add some organic beef bouillon or homemade beef bouillon. 

Do you have a favorite way to dress up peas?  I wonder if just sprinkling some parmesan cheese on it would be tasty?  I googled for recipes, and most have a breaded topping.

We love this but you might consider it a "summer" salad:

Broccoli Slaw
1 bag of broccoli slaw
honest roasted peanuts
frozen peas
poppy seed dressing

The friend gave these "non=specific" directions:
I don't list amounts because it is to your liking and the slaw comes in different size bags. I tend to put a lot of peanuts and peas. You must make it ahead of time to let the sugar from the peanuts needs to blend with the dressing. I put the peas in FROZEN, so they need time to thaw."

Apples and Tomatoes Oh My!

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
