Bourbon Chicken (Crockpot Recipe)

 

Bourbon Chicken (Crockpot Recipe)

Place 2lbs. of organic chicken breast in a crock pot.

In a bowl mix the sauce:

1/2 tsp. grated fresh ginger

4 cloves homegrown garlic

1/2 tsp. organic crushed red pepper flakes

1/3 cup organic apple juice

1 1/2 Tbsp. organic honey

1/4 cup organic brown sugar

1/4 cup home canned (or organic) ketchup

3 Tbsp. organic apple cider vinegar

1/4 cup Bourbon

1/4 cup organic soy sauce

1/4 cup water

Mix all together and pour over chicken.  Cook on low for 7 hours or so.

Just about 15 minutes before serving, remove chicken from crock pot, shred and set aside.  

Mix 3 Tbsp. water with 3 Tbsp. organic corn starch.  Add to the crock pot mixture and stir.  

Shred chicken and add back to the crock pot. Stir.

Note:  I did not turn up the heat to speed up process, I simply let it sit on low, put the chicken back in, and gave it a stir.

Serve over organic wild rice or rice of your choice and top with chopped green onions from your herb garden.

Looking forward to trying the Bourbon Chicken recipe. Just want you to know I have been following your blog for over a year now. You are such an inspiration! Really enjoy the encouragement that comes out of your blogs. I garden, can, and freeze. We buy a pig and half a beef for our freezer. My husband usually gets two deer a year during the season that goes in the freezer as well. I try to keep stocked up in my pantry, plan and utilize everything. I budget big time.
I would love to have 3-4 chickens but we live in city limits and they say we can't. We were raising a few rabbits and putting them in the freezer.

Cindy, thank you so much! I am trying to get my husband on the bandwagon with rabbits. There is one city not to far that is considering allowing chickens in the city after this awful year we are having. I hope it happens elsewhere too.

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
