Savory Soup ~ Snow

I tried a new white bean soup recipe - White Bean Soup with Greens and Rosemary.  I found it in a book my Dad gave me years ago (Super Foods Rx), but there are many versions of it online as well.  The rosemary in this soup makes it taste wonderful, along with a pinch of cayenne.


I adapted the recipe to work in my crock-pot, so all the ingredients went in at the same time, and cooked on low all day.  The original recipe calls for fresh rosemary and fresh thyme, but I only had dried (and it worked).

I omitted the optional Parmesan cheese too.  I was completely out of dry white beans, so I opted for organic canned cannenelli beans, and great northern beans.  I do think any white bean will work for this soup.

This is basically broth, beans, carrots, onion and garlic, spinach (although any green could be used), thyme, rosemary, a bay leaf, and salt and pepper.  I did use the recipes 2 1/2 Tablespoons of suggested soy sauce, but used organic.  

Why am I sharing our latest soup?  I thought you all could use a break.  Yesterday's post was long and windy. 

We got more snow yesterday, and it came with blowing and drifting.  Our snow fence works well, but we do need a second one.  

Hubby had left to go pick up two free truck loads of wood, and told me in a non-nonchalantly sort of way, "it's not that bad out there," when I told him I had to head to the barn.  He lied.  I did not "suit up" and simply pulled on boots and one jacket (no face mask or scarf).  That wind pelted me, and sucked the oxygen right out of my lungs.  

Today the school has a two hour delay, and traffic is moving ever so slowly.  They kids hoped for a closing, but as of right now, the phone is not ringing.  One daughter will need to rise early to shovel out her car.  The snow plow fairy showed up here very late and plowed us out, but it continued to snow and drift during the night.

The soup sounds good. I have everything except the greens and I actually have fresh rosemary in the living room. So far so good...usually I can't winter it in the house but so far so good.
I better get going as I do want to get something in the crock pot. TTYL!

Sam I am, every year my rosemary has died when I brought it in for winter (bummed about that). One day I'll get it through the cold season.

That bowl of soup looks wonderful. I LOVE SOUPS!!! Could eat them every day. Unfortunately Bro Tom isn't so fond of them for some reason, so I only have them occasionally, and even then am usually eating them alone.
We've sold a lot of soup fixings at the store lately. The flu and colds are running rampant here in NC (90+ deaths so far), and from our sales, looks like people seem to be huddling with various medicaments and pots of soup. I can't blame 'em.
Am not missing snow. Was raised in NW PA (Erie County) where we got plenty as children. Now live in central NC, and only miss it CHRISTmas Eve and Day. But I well remember digging and digging and digging the driveway out only to have the snowplow run through, tossing a snow bank up to block the end of it for us to dig out again. LOL
Enjoy the soup, and the snow (if that's even possible). ;o)

RB, some the the kids get tired of soup here too. Usually Hubby and i finish it off.
