Turkey Zucchini Meatballs

I like to freeze these uncooked, because they cook up pretty quickly.  It's a great way to use zucchini too.  I double this and use my large pampered chef cookie scoop, getting about 34 to 35 meatballs.

Turkey Zucchini Meatballs
1 lb. ground turkey, organic
1 cup shredded zucchini*
1 tsp. homemade Italian seasoning
1/2 tsp. homemade garlic powder
1/2 tsp. homemade onion powder
1/4 tsp. organic (or homemade) crushed red pepper flakes
1/2 tsp. salt
1/4 tsp. pepper

*if using thawed, frozen shredded zucchini, squeeze out liquid before adding.

Shape into balls and freeze or cook.  To freeze, I put them on a try and freeze, then remove and freeze in an airtight freezer container or freezer bag.

To Bake (thawed):
Preheat oven to 400°F.  Line a baking sheet with parchment paper or use a pampered chef stoneware bar pan.  Bake 16-18 minutes, or until done.

To Bake Frozen:
Bake 20-25 minutes or until done.

I like to bake the meatballs about an hour to an hour and a half, prior to dinner.  Place them in a crock pot on low and top with a sauce.

Sauces we love:
Homemade marinara sauce
Hot pepper mustard sauce
Home canned BBQ sauce
Mixing home canned ketchup with home canned grape jelly

We've also considered using our habanero/apricot jelly in place of grape, as well as our hot pepper jelly.  It all depends on what you like.  It make a super easy meal.

These sauces are terrific with beef/pork meatballs as well.

They look delicious and simple to make, plus they are GF and Egg free which means my severely allergic kid can enjoy them too! Thinking it should be fine with ground beef as well. Growing up I recall my mother making very simple meatballs, she never used eggs or bread crumbs. Just the meat and seasonings.
Thanks for sharing this recipe! The addition of zucchini is a plus, especially with my younger one being a picky eater!
Bits of stitching, thanks. I also make beef/pork meatballs, which requires eggs, but I use ground organic oats vs. breading.

They look delicious, a great addition for the freezer. A start as been made on the soap savers, thank you for inspiring me.
You are welcome mamasmercantile. The soap saver bags are great to go with homemade soap.

This is a great idea. I just need to find room in my freezer, get a bigger freezer, or pig out on meatballs!
Leigh, that was me last year - hardly any more room to put stuff in the freezer, ha ha!

Apples and Tomatoes Oh My!

The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Did any of my blog writing followers locate a better "blog" platform online?  Just curious if anyone is moving from blogger.

Under the Weather ~ What's Growing?

I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
