. . . made homemade chewy granola bars. These, although buttery, were absolutely amazing.  The flavor is incredible.  This was the first time we used almond flour and ground mace.  I found the almond flour less expensive at the health store, vs. at the grocery store.  If I find more recipes to use the flour in, I will make my own almond flour, using my dehydrator.  The store brand we were buying contained High Fructose Corn Syrup.



Chewy Granola Bars
(from The Back in the Day Bakery Cookbook, by Cheryl Day and Griffith Day)

1 1/3 cups quick-cooking oats
1 cup packed light brown sugar
2/3 cup almond flour
1/2 teaspoon ground cinnamon (I used organic)
1/4 teaspoon ground mace
1 cup salted cashew pieces, roughly chopped
1/2 cup dried apricots, finely chopped
1/2 cup dried prunes, finely chopped
1/2 cup dried blueberries
12 tablespoons, unsalted butter, melted (I used organic)
2 tsp. vanilla extract
1/4 cup (Grade B) Maple syrup (I used Grade A)
2 Tbsp. water

Position a rack in the middle of the oven and preheat the oven to 350°F.  Line the bottom and sides of a 9 x 13 inch baking pan with parchment, leaving an overhang on the two opposite sides.

In a large mixing bowl, combine the oats, brown sugar, almond flour, spices, cashews, and dried fruit.  Mix well.

In a small bowl, whisk together the melted butter, vanilla, maple syrup, and 2 tablespoons of water.  Add to the dry ingredients and mix thoroughly.

Press the granola mixture evenly into the prepared pan.  Bake for 25-30 minutes, turning the pan around after 15 minutes for even baking, until the edges and top turn golden.  Lift the sides of the parchment and transfer the slab of granola to a wire rack to cool.

When it is completely cooled, remove the slab of granola from the parchment to a cutting board and cut into 24 squares with a heavy knife.  Wrap the individual squares in plastic wrap and store in an airtight container for up to 2 weeks.

Note:  I did bake mine a bit past 30 minutes.  It could just be my old oven, but letting you know.

I'll keep this recipe in mind. Minus the prunes I think.
You don't even taste the prunes. When I asked family members what they thought was in them, most said peanut butter and raisins. They loved these.

Sounds like the Kashi bars I buy. Not a big fan of maple though, unless it's on hotcakes with bacon!

I love homemade granola bars but haven't had a whole lot of luck making them, thanks for this recipe!

I have 5 pint jars that I started in Sept. I keep them in my closet. Its dark and cool in there. I usually let them sit 6 to 8 months. The flavor is so good.

Apples and Tomatoes Oh My!

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
