Easy Crockpot Recipes

 

What is was supposed to be?  A new recipe - flank steak tacos (recipe is in the first cookbook below).  what it ended up as?  Round steak fajitas.  First, I've only cooked a flank steak once in my lifetime (no kidding there), and two, we couldn't find flank steak, so we used a round steak.  

The seasonings were exactly as the recipe called for however, and it shredded up very nicely.  Although, I would cut back on the seasoning, it was very good, and mostly very, very easy to prepare for the crockpot.

We got 4 servings (2 meals for 2 people), plus we had more leftover after that. Super easy, many possibilities, and a good bang for the buck.


The above cookbook was probably my favorite of all the cookbooks I have borrowed this month.  You don't have to be diabetic to enjoy any of these either.  They are very healthy recipes.  I have many more to try yet.




I found this one to have a lot of recipes with very little ingredients, but most of the recipes ask for a can of this or than, a package of this or that - processed food ingredients.  If you are like me, many of the recipes can be adapted to your homemade ingredients, home canned, or if it's summer your your home grown ingredients.



A soup recipe I converted from a stove top recipe to crockpot.  We have made it twice, and each time with different broth (based on what needed used up first), and we have never had to freeze any of it.  We like it that much.  Odd for a meatless soup too, but we really do like the parsnips in place of potatoes in this recipe (no pasta, no corn, no rice etc).

My slight changes:
-I don't sauté any of the veggies, so no oil
-I don't use sun dried tomatoes, I use one can of diced tomatoes (or home canned or fire roasted diced)

I toss everything in the crock pot and add additional broth if needed, and cook all day long.  I try to add my seasonings at  the end of cooking, but if I'm going to have a busy day, it all goes in first time in the morning.

These all look good. I do love a good crockpot recipe in the winter time. I also use the crockpot a lot in the camper too. Easy meal, delicious and easy clean up.

My crockpot will stay on the counter until sometime in the spring. I seem to make soups a lot during the cooler months and nothing works better than the crockpot for making it.
Betsy, we too use the crockpot moreso in the winter. I like the idea of using one in the camper too. Blessings to you too.
Anne in the kitchen, that is funny you mention leaving it on the counter. It's where ours has been staying lately too.

Apples and Tomatoes Oh My!

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
