We are leaving tomato season with a bang!
Our once (or twice) a year green tomato cake!
Love this! Mmmm! I am lucky to get enough green tomatoes to make this once this year.
Rain arrived. We needed it.
I made up for missing a day of deep cleaning the kitchen. While the cake baked, I dumped out our fairly large, and wide silverware drawer. Organizer containers were washed, drawer wiped out, items sorted, and re-organized. I also got another 4 foot section of counter space cleaned off and sanitized - jars labeled and stored etc. One daughter commented late in the day, "I can see you are back Mom."
More like the kitchen is back. Sort of. Before the rain, I worked a bit outside. Post to follow on that.
Dinner last night - homemade Alfredo sauce with chicken and fettuccine noodles, and peas - all organic of course.
Here is how I made the sauce:
(Using all organic ingredients, including the whipping cream)
Melt 1 stick of butter in 1 pint of heavy whipping cream, and 4 ounces of cream cheese.
It's not a low-calorie dinner, ha ha! More like fall comfort.
Once that is melted, and while noodles are cooking and draining, whisk in 1-2 cloves of minced garlic, 1 teaspoon of garlic powder (I make my own from homegrown garlic), 1 teaspoon of Italian seasoning (click to get the recipe on my blog - I make my own from home grown herbs), and 1/2 to 1 cup grated Parmesan cheese. Add salt and pepper to taste.
When the sauce is thickened on low heat, stir in cooked and diced chicken to heat, then add hot noodles. Vegetarians can simply leave out the meat.
