Cabbage and Carrot Cobbler


 According to my kids, it "sounds nasty" and looks nasty.  However, it tastes pretty good.  I've been looking for healthier meals, and more with vegetables we don't eat enough of.

The photo isn't that great, but it was taken at night.  Our lighting isn't that great in the kitchen.

It's baked with a crust and the vegetables are topped on it.  The recipe did not say to cover the dish, and the onions got crispy and delicious.  The onions are what gives this dish flavor.

Cabbage and Carrot Cobbler
1 cup water
4 cups shredded green cabbage
1 cup shredded carrots
2 onions sliced
1 1/4 cup plain White Wave dairyless (see notes)
1/4 tsp. salt
1/4 tsp. black pepper
2 cups whole wheat pastry flour
2 tsp. low-sodium baking powder
1/4 tsp. salt
1 cup soy or rice milk
2 Tbsp. olive oil


Preheat the oven to 375°F.


Place the water, cabbage, carrots and onion in a large pot.  Cover and cook over medium heat for 5 minutes.  Uncover and continue cooking an additional 5 minutes.  Stir in 1 cup of the Dairyless, salt and pepper.  Set aside.


Stir the flour, baking powder, and salt together in a mixing bowl.  Add the remaining 1/4 cup of Dairyless, milk and olive oil, and stir just to mix.  The batter will be quite thick.  Spread in a greased 9 x 13 inch backing dish.  Spread the cabbage mixture evently over the top and bake for 35 minutes.

Notes:  I did not have any plain yogurt (use in place of Dairyless), so I used sour cream.  It worked great.  Also, I used regular milk, but when we have it, I will make this with goat's milk.

Interesting...do you drain the vegetables before stirring in the yogurt/sour cream? I imagine this is really tasty!
I don't drain the vegetables, but I did scoop them out of the pan with a slotted spoon. It tastes great re-heated the next day too.
That's an interesting recipe and I LOVE crispy, crunchy onions ;) :) I'll have to put this in my recipe file :) :) I wonder if you could use a non-dairy alternative like Almond milk or something like that? It would probably affect the consistency of the batter. I'm glad it turned out good :) Love and hugs from the ocean shores of California, Heather :)

Apples and Tomatoes Oh My!

  The early morning weather here has been downright chilly.  One morning it was 42 degrees.  Flower beds have been weeded.  The herb garden is next in line, but I do need to figure out what to do with all the rosemary plants I planted in the actual vegetable garden.  I have not mastered keeping them alive all winter indoors.  They will not survive the winter if left outside. Under the Weather ~ What's Growing?

  I have not been around in blogland much, due to being under the weather after I pushed myself way to far one day.  I have to remember we cannot do it all in one day.  Thank goodness for teas and tinctures, and healing foods (and rest).  We are feeling better. As for our blogs being used for advertising on many websites, and so forth (I can't see any other reason for the source of views: howstuffworks, dominospizza, mayoclinic {not the blog readers interested in my actual blog}) the numbers continue to climb.  I have not found a way to "opt" out either.  If any of you find a new way to avoid this, blog elsewhere, find a new platform etc, please be sure to share.   If your blog has ads, you are are not going to complain, ha ha!  You are probably making a bucko-bucks with all these visitors to your blog. Okay, back to the update post . . .

16 Weeks Until Christmas

  It's not hard to believe that we are traveling closer to the winter holidays.  I'm trying to focus on enjoying every single day until then, but I am fitting in a few snippets of holiday preparing.  Christmas is my favorite holiday of the year.  It's hard to believe it's the last day of August. I have not yet gotten rid of the links to all the advertisers using my blog posts, but again, still working on it. However, my profile has gone from my blog, and while I am in settings, it is not able to add as a "gadget" to the blog.  Weird things are happening.   Google had a data breach recently as well, so gmail users were advised to change passwords.  Not sure what else is going on, but just in case you are wondering why my "profile" is not on my blog any longer.   Okay, back to the Christmas countdown post . . .
