Sweet Potato Butter

I had some sweet potatoes that needed cooked, so I made






a crock pot batch of Sweet Potato Butter.  There are many versions of recipes for this, but I highlighted the one I used this time.



Cooking this on high until it was soft, and mixing it up until it was a puree, I was able to fill about 2 pints.  I did not seal these, as we have already used 1 pint of it.

My 15 year-old daughter baked this Apple Butter Spice Cake (from Eating Well) for her brother's 20th birthday.  He didn't want the traditional strawberry cake with homemade decorating frosting this year.  We found this recipe and used the Sweet Potato Butter in place of apple butter and boy was it delicious.  In place of frosting, we used whipped cream.  Yum!

Weekend Work Delayed

We have been delayed by a car situation.  After driving one hour to retrieve hubby's bank card (which he left in an ATM machine that eventually sucked it back in for safe keeping, and luckily it was a bank which we bank with), we felt the back end of the explorer jerking back and forth quickly.  

Hubby has been working on that problem since Saturday and as of today, we have not started the garden tilling, planting, the tearing down of the chicken coop and rebuilding, nor the other work.  If I could afford hired help, I could get cracking on these jobs, but I can't.  With two older kids working outside the home also, I am limited to help.

I just have to pray we get through all of this, and continue to work as we can.

Lost Flash Drive Case

I took time to search again last evening, while hubby was away working on the explorer.  I continue to search, but so far it has not been found.

I pray that your car will get fixed.

My father lost his flash drive at the library. We're fairly certain of that...and we are also fairly certain that someone took it. Thankfully there was no personal information on there, but still, he's was upset over it.

If you lost yours in the house, you'll find it again :) :)

Your flash drive will show up when you quit looking for it...that is how it is with me.
did you check under the seat of the explorer?
just saying...it never is where you think it will be. You didn't switch purses lately have you?
and.. I guess you checked ALL USB PORTS on ALL COMPUTERS? You don't use computers at the local library do you?

Well Happy Birthday to your son. That dessert your daughter made does sound good.
Hope things calm down a bit for you, seems like a rather upsetting few days. Wish I lived closer I could come help you. Just don't let me near the canning section.

Emma, I used in in place of apple butter in the cake recipe. It was delicious. My 10 yo daughter also spreads it on her breakfast toast.

Those recipes sound yummy! I can't wait to try them. Hope your car gets fixed and you find your flash drive and your bank card and the goat is okay....you do have a lot on your plate! I have no help and live alone so I have grown very patient with myself in getting things done but thank God I am persistent! LOL!
