Taco Pasta ~ Popcorn Topping

There have been days when I just think ice cream sounds good for dinner, and I don't want to cook.  However, one night I threw together a pasta dinner with what was on hand (too hot to hit the grocery store for restocking).


We still have some corn and beets in the freezer, so veggies are still supplying us, but I had to be creative with the pasta dish.

A Bit of Stocking Up ~ A Good - Dirty Apron Week

It's been a canner-ganza week.  I'm thankful for that too, and we haven't checked our pears yet (no apples or plums this year again). 

Homemaking goes to a new level when you homestead as well.  It's not just cleaning, tidying up, dusting, paying bills, vacuuming, sweeping, purging, baking, cooking, washing dishes, getting kids to appointments and off to school.....it's hard work.  My kids hate me this time of year, ha ha!  Literally.  Deep down, I know they appreciate it.

I'm looking forward to a huge crock pot of delicious chili soon.  All these tomatoes are making me hungry.

I used about 23 pounds of those delicious tomatoes, to can up some seasoned tomato sauce (recipe is in the Ball Blue Book).


I used pint jars this time.  Smaller meal planning.

Rain! ~ Random Tidbits

We finally got another rain shower last night.  I haven't checked the weather forecast yet today, but it's wet out.  I'm running behind today.  I'm just plumb worn out, and needed the rest.  Don't we all?

The humidity yesterday morning was thick.  My camera continued to fog up.  Here is Timmy resting in the heat.  See that pot?  It was one that was ravaged by a raccoon (or two or three), and there are green starts in it.  In fact, all but one (horehound) are showing signs of life, despite them getting turned over so many times.

Garden ~ Herb Garden

The zucchini is doing well, and cucumbers are just now starting to come in.  Our hot peppers and green bell peppers are behind, and we do not have any broccoli yet (oddly, it's usually the first).  I'll be out picking peas, and maybe green beans today.  It all depends on how well this last small bit of rain did.



Picked our first cucumber this year.  Delicious!  We only had one ripe one, so I am hoping we get many at once to can pickles.

Zucchini Salsa ~ "Million Dollar" Salsa

What did I do with all that zucchini?  First, I canned zucchini salsa.  We love this stuff. 

I pre-plan and order my organic/non-gmo vinegar over winter, so I have it when canning season starts.  The recipe calls for 2 cups of it.  This is not sold in stores anywhere here.  Hopefully, with my suggestion, one store will start selling it.
 

Here is the, very late, and promised "how-to" in a sort of quick fashionable way. 

Over the years, I have made several different types of salsa.    We even had a "salsa party" to try them all.   And out of all the ones I canned, zucchini was not one of them.

All recipes were for canned salsa too, not freezer salsas.  I canned zucchini a few years later.  Out of all the recipes I tried, the most liked here, is zucchini salsa.


It's not a Ball recipe, but I have seen several similar variations to the one I make, found online as well.

Breakfast ~ Herbal Journey ~ Jasper

We've been eating leftovers for a few days.  I cooked up a crock pot of organic black beans with onion, and those have been going fast too.  I really enjoy eating the beans with scrambled eggs, home canned zucchini salsa and a bit of cheese, all wrapped up in a whole wheat tortilla.  Youngest started doing this after school, and they really are delicious.

Salsa Tasting



Okay, I lied about letting the zucchini salsa sit.  We popped open a jar already.  Now, I did pretty much follow the recipe, but I diced up 2 jalapenos and 2 hot banana peppers and added them (to the marinade early on). 

If you like medium to hot salsa, definitely add some hot peppers.  We loved this salsa.  It's very thick, so I think I can safely leave the corn starch out next batch (if I get enough zucchini to make it again).  I drained the veggies very well and I also drained my roma tomatoes after I chopped them up, before boiling everything.

Zucchini Salsa ~ Yellow Squash Hash Browns ~ Tidbits

I have really enjoyed the tiny bit if porch time I've been able to get this week.  I'm soaking up the cool weather, because I am sure it will turn hot and humid (again).  Then again, it's very nice this morning. 


Before I share my canning results yesterday, I want to share a bit of other good news.  I finally heard from Daughter in GA.  She phased up faster than anyone in her platoon, and was promoted to PG (in charge of a platoon of soldiers).   She can now have visitors, leave post, and even wear civilian clothing.  We are very proud.  She is the only female PG.

A quick update on Son.  We received an invitation from Geiger, NC.  There will be another graduation for him after he finishes MCT (Marine Combat Training).  However, this time we are unable to attend.  I wrote him to tell him, but have not received a call from him (yet).  He may not even have time to see us if we do attend, and may be put on a plane to CA right after he graduates MCT.
