Buttery Peas ~ Rainy Day Stock Up ~ Something I Learned

 


We were watching a movie one night and they were talking about dressing up canned peas for a delicious side.  One day I came in hot and tired from garden work and didn't want to run to town for fresh veggies, so I dumped a few cans of peas (drained and rinsed) and dressed them up with butter, onions, thyme and salt and pepper.  Yum!

We have also mixed in yellow squash relish, but I don't can that anymore.

 I have a list of items that need made and stocked back up.  I save these to-do's for rainy days.



Pizza dough was restocked in the freezer. 

Something I learned . . .

Add cornstarch to your roasted vegetables for a crispier roasted side.  Suggested amount is 1 Tbsp. per pound of vegetables.  I'll update, regarding this new tip, after I try it.



July is booking up fast with parties, gatherings, travel plans and get togethers.  July also is the month in which Daughter E's boyfriend and his best friend were killed in a car accident.  There will be a large gathering to get with all of both families and friends to remember them both and enjoy each other's company.

Rain ~ Cold Temps

Rain moved in yesterday as predicted. Our temperature is to drop considerably tonight.  They say the rain will go on for 36 hours.

I went from "I'll just clean the hallway" (where people just drop stuff on the floor coming in and the boot pile is a mess), to "I think I should make...." and here is what got done . . .


Homemade English Muffins were made.






Einkorn Peanut Butter Cookies were made.

Einkorn pizza dough was made for the freezer.

I would have made pie crust crumbles, but I need to get some flour.  It remains on the re-stock it list.


I got zero cleaning done, other than dishes.  Our 20 year-old daughter came out for dinner, and helped with making it.  I was totally excited she wanted to help.  Although I told my husband he would only get homemade corn dogs once a year, he got them.  I told them no "french fries" though.  They got oven roasted potato wedges and they were fantastic.  I used a recipe online (Tasty) with homemade garlic powder, Parmesan cheese, etc.

Update on our SIL - he's still in ICU due to experiencing Afib.

Camping Trip!

Got back from our first camping trip last night.  Puppy spent the weekend with his buddies Zuri and King, and with the kids.






We really needed a weekend of camping too.  I took along some home canned hot pepper relish too.  We had guests Friday night, so I made some foil packet dinners to cook over the campfire with sausage, potatoes and beans.  Breakfast was easy to pack, meats, eggs, potatoes and bread for french toast.

What's your favorite "go-to" natural remedy to take in your "first aid" kit when traveling.  I take chickweed salve and homemade neosporin, and sometimes mullein tincture.  Would love to know what you suggest and why.  I'm considering digestive bitters next trip.



Friday morning I also baked us some Einkorn peanut butter cookies to take with us.  Mmm!

Before we left I made sure the bedding was already washed and back on the bed, Hubby's work clothes washed and dried, and so forth.  It really saves a headache of rushing around when we get back home.

Speaking of heading home, just before we got on the highway, someone rolled down their window at a light and told us a piece of metal was dragging.  Sure enough it was a jack on the camper that somehow came apart (can be easily fixed).  Thank goodness I took a yarn project.  We tied it up with some pretty cotton yarn (ha ha!).

Hubby not only left my garden hose in daughter's car, but left his coffee mug.  Although we have many half finished projects like this, we are getting some done too.




I dug out some home canned caramelized onions and home canned pizza sauce.  Guess what we had before going camping?  

Einkorn crust BBQ pulled pork pizzas with home grown green onions (which are limited in harvest this year).  Crust recipe is online with Einkorn Flour's website, caramelized onions recipe is from the Blue Ball canning book, and I hope to post the pizza sauce recipe during our tomato harvest.  San Marzano tomatoes make the best sauces.

Tip:  I was gifted a set of thin, flimsy cutting boards a few years ago.




They are great to slide under the pizza crust to move it to the pizza pan.  Works like a charm.

Update:  We let the rhubarb vodka sit longer and boy the next tasting was very good.  Hubby loved it.
As for the garden, we are lacking rain terribly here.  We go weeks without it, and I'm watering with well water right now.  The tomato plants are growing, but at snail's pace.


We are however, getting rain early.  I can't put the laundry on the line as planned (rain wasn't due until 4pm), but I'm thrilled we are getting rain.

I have much to do today.  I better get off the "Procrastination Station" and get to work.

Random Tidbits ~ Pickled Red Onion

Pizza night was another huge success.  I froze the Einkorn dough for the first time last year (preparedness), and it worked out great.  We love the pizza sauce made with San Marzano tomatoes.  They make the best sauce so far.  I'll be sure to grow them again this summer.

I should have started a temperature afghan last spring.  With the hot days followed by this very strange and nasty winter, it would have been one interesting afghan.

I'm scanning my recipes for our oldest daughter.  Not that she's settling in her new apt. she wants to take advantage of her crock pot and cook good meals again.  I have a plan for that too.



I pickled red onion for the first time.  It'll be used for salads, although I am leery to eat fresh kale out of season, we can typically find organic in our grocery store.



Pickled Red Onions
Using organic/non-gmo ingredients, thinly slice enough red onion rings to fit in a wide mouth pint canning jar.

Add:
1 Tbsp. sugar
2 Tbsp. salt
2-3 splashes of home canned hot sauce*
1/2 c. water
1/2 c. red wine vinegar

Shake.  Store in the refrigerator

*any hot sauce will work



My husband is really having a stressful time at his work place.  Even though the vote was like 170-something (no) to 50-something (yes), the higher up's are making them vote again on Thursday on the contract.  They are using their power to manipulate them into voting yes, and from what I see, threatening them in the process.  He, and the others, could surely use prayers, good mojo, and good thoughts right now.  It is a very hostile work environment.   Both mentally and physically.   

The only thing I can do to help him, is clean the house, cook good food, pack his lunch and coffee and listen.  I'm afraid this however, may affect our income (depending on the outcome).  Remember they went on strike one year, and he had to take work out of state?  We are preparing however we have big ticket jobs to get done this year no matter what.

Einkorn Pizza Dough ~ Winner Recipe!

I've been wanting to try the Einkorn pizza dough recipe the entire summer now.  With the canner pot back in the kitchen, I was leary about trying such a recipe on such a busy work day, but I did.  I actually made these the same night of canning the carrot cake jam. I worked on the dough in between freezing the carrots too. 

I had a few garden green bell peppers, some onions,  and of course home canned pizza sauce.  Wa-la!
