Happy Homemaker Monday


Sunday weather started out at 12°F (wind chill of 5°F).  It was snowing as well.



Stray cat chasing a bird?   I have not seen any cats around here lately.  Interesting.

Thinking and pondering . . .

If you have chickens, are you team "fill the roosts with straw/bedding"  or nothing team?  We put straw in ours, and our eggs are clean.  I was given some eggs a few weeks ago (team nothing in the roosts), and the eggs were very dirty.  Also, since I have not been putting straw in the roosts, they are laying on the floor of the coop, so I'm going back to putting straw inside the roosts.

Egg/sage sausage/cheese cups to go with an oatmeal bake.  When I bake the egg cups, I like to put the solid ingredients in each cup first, then mix up the 6 eggs, 1/4 cup heavy cream (I used Greek plain yogurt and a splash of  milk, salt/pepper and 1/2 tsp. baking powder, and evenly pour it over the other ingredients.  It's just so much easier to evenly distribute the ingredients.  I baked this for 18-20 minutes at 350°F.

By the way, this helps make one pound of sausage make more meals.  I used 1 cup cooked sausage and 1 cup or less of pepper jack cheese that I hand shredded.

Also, I know they are not cheap, but I use parchment cups, because no matter what I grease my pan with, they always stick.

One more day of painting, and I will have finished another door.  I have also managed to get more door trim painted.

I'm in full swing on the hallway project as well.  It was the "drop station" for all things that had to be moved for carpet removal.

I have started another donation box, gotten rid of a few things, and now I am focused  on chipping away at our winter project list.

Deep Clean - Clean Washing Machine (it has a "clean washer" cycle), clean microwave.  If you do not have a "Clean" cycle on your washing machine, you can buy tablets to toss in your washer and run on a hot cycle to clean your washing machine.

Garden Harvest Tip and other ramblings

 

I like to dice up jalapenos I freeze from the garden, but the tip below is an idea to keep fresh peppers fresh, after harvesting.  Anyway, this breakfast had a lot going on in it.  I had a red bell pepper, bacon, a few sweet potatoes, onion, leftover pesto, eggs, jalapeno, and fresh green onions from the herb garden.  Delicious.  No recipe.  I just tossed it together.

As we near garden season, here is another tip I learned (America's Test Kitchen):

I did not know this.  Typically, we either eat, can or freeze as we harvest, but at the end of the season this could be useful.

My husband has not had a day off for 2 weeks now.  Not even weekends.  We cannot wait for that schedule to end.

I have switched gears, and started to go through all the crafting supplies that were moved out of the bedroom closet.  There is a lot to go through.  

Tough decisions on what stays and what goes.

There is nothing going on in the garden currently.  I'm waiting on my husband's crazy schedule to end, before we purchase solar electric fencing.

My front flower bed is full of purple dead nettle.  Part of me says harvest it, the other says look away.

Sheet Pan Scrambled Eggs ~ Freezer Re-Stock

I have baked eggs in the oven on a sheet pan previously, but I wanted to make scrambled eggs for easier breakfast sandwiches.  I also wanted them in the freezer for a quick breakfast, or if we had company (aka kids).





I did some research on time, temperature, size of pan, etc.

I decided to go with 18 eggs, a 12 x 17 inch sheet pan (jelly roll pan), and parchment paper.

Tip: Spray oil onto the pan, line with parchment paper, and spray again.  You will want 15 inch wide parchment paper, or your eggs may go under the parchment in the sides or corners.  I used my 12 inch paper and it went under one corner just a bit.

Preheat Oven to 350°F, bake 15-17 minutes or until eggs are no longer jiggly in the center.  It does take a much steady hand to put this in the oven without spilling it.  I may use a smaller pan and 12 eggs next time.  

I can cut 12 servings this way and freeze them for future sandwiches, or make the entire sandwich, wrap in plastic wrap, then foil, and then into a freezer bag (or airtight container).  I have not tried this yet with freezer paper, but if you do, let me know if that works as well.  It will last up to 3 months in the freezer, according to my research.





It was an all morning breakfast freezer re-stock, but half was for this week and half went into the freezer, minus the bacon.  I made 2 lbs. of homemade sage (using dehydrated sage from the herb garden) turkey sausage patties and 1/2 lb. of bacon.

2 lbs. of turkey sausage sounds like a lot, but one serving is about 4 oz. or 1/2 cup before cooking.

Barbacoa Beef ~ Sausage Gravy Dutch Baby

 I sort of followed a recipe for the crock pot Barbacoa beef that my husband requested.  I didn't brown the meat, but used a technique to help create a tender meat at the end of the cook time.

While the meat was cooking in the crockpot, I made a breakfast, using my smaller cast iron pan - Sausage Gravy Dutch Baby.  I completely forgot to top it with green onion.  I have some in the freezer.  Our outside green onion is not weather ready yet.

I don't think I have ever made one of these before, but it is soooo good!  I would add more scrambled eggs next time on top, and I used my own homemade sausage gravy (vs.  just sprinkling the sausage and drizzling gravy).  Plus, it's only a 1/2 lb. of sausage, so I have the other half already cooked now for pizza this week.  We will freeze half of the beef we made too, and that will be great to have on hand for another meal night.

I think I used every utensil, bowls, pans, and even my food processor and blender, but I got a it all done, and it will last for a few days thankfully.

Funny thing happened.  I watched America's test kitchen while I took a break and crocheted.  I learned some things on frying fish in a pan, and the funniest part was that they gave tips on cooking Mexican dishes.  They also shared a recipe for fresh salsa (not news to me), but funny it was the same day I was cooking a Mexican beef taco dinner.  By the way, they said when you make quesadillas, brush oil on the sides after you fold it over for a more crisp tortilla vs. putting oil in the pan.

We have rain today, and warning of freezing rain.  Lovely.  Not what we needed, and they are saying the wettest day we've had in 2 years.  It's gonna be a muddy mess out there.  My fall planted garlic will love it though.

Cheddar and Chili Egg Casserole ~ Recipes Going Back in Slot



I used some of my homemade skillet bread to make some French toast.  My husband got special bread that is low carb, but I also made sausage patties and this.....


One of our favorite egg casseroles - it's Rachael Ray's Cheddar and Chili Egg Casserole.  I keep cans of organic chili peppers in the pantry for this and other recipes.  We love how the cottage cheese and cheese fluff this up to a light dish.



Does anyone else do this?  Pull a recipe and just put it on top inside the recipe box in a hurry (while baking/cooking)?  
Breaking this bad habit today.  I will be spending some time putting all those recipes back in their proper slot in the box.

Flooring Snafu and Tidbits

 

I caught a short glimpse of another beautiful sunrise.


I spent most of my morning making a breakfast casserole with dandelion greens, but guess what while it was baking?

The new flooring did not work with our floor.  As well as a new level floor was, this flooring was not working (thin, and locking side would not stay locked).

It was all taken out, and our handy man went home.  New flooring was picked up, so we will find out this weekend if it will work better.  It's thicker, and actually less expensive.

The rain arrived last night as expected, and it's is to rain all day long.  The weatherman says, "do not let this rain fool you."  A winter storm is on the way.

My few outdoor tasks today are halted, but I have plenty to do inside today.  It's still not feeling like Christmas at all.  I can say though, I'm glad I'm not running around crazy busy baking and cooking this year.

This and That

 

I ended up cooking eggs for breakfast, using my English muffin rings.  I cooked bacon as well for sandwiches.

Although upside down, the order has been started, and the one color I needed I found online with Michaels store.  I found a great deal, considering prices - buy 2 get one free, made the skeins $2.99/each (7 oz).  Free shipping.  I had to order yarn for me, so it got me the free shipping, but what a deal.  It's been shipped, so as soon as it arrives, I will continue making it.


Flooring started to go in, but our handyman has a few doctor appts. this week, so it has been slow going.  My house is still a hot mess.  I can't put anything where it needs to go, so I keep telling myself to be patient.

We are being told there is a winter storm coming our way.  It is to arrive before Christmas.  Lovely.  I'm checking freezer supply/pantry supply, paper product supply etc. and making lists.  Just in case.

Our truck gets a new windshield today.  Of course they tell you, that you have to be available from 8am to 5pm.  More loveliness.  I just love those text messages too.  No sir, I do not need new wipers.  Anyway, I'm just glad they come to the house to do it.  We've been thru this before.

I need to remind myself today, that I need to put some things from the flower beds in storage.  I keep forgetting, and every time I go out to get the mail I mentally put it on a list in my head.  Sheesh.

Our youngest daughter is no longer doing nails at the salon. Apparently, it is not producing enough income to pay for the booth rental for nails.  She is still doing hair.  I sure hope she continues to do well.

I will be working on lists today, but mainly writing them ha ha!  I have soooooo much going on right now it's crazy.

Breakfast for the work crew and ramblings on the kitchen

 


My husband requested I make all of this.  Not my favorite for a breakfast (not the pie), but the crew at his work loves it - chorizo and egg burritos.  I also sent refried beans for anyone not wanting the meat.  I made the pineapple pie per his request, as his new boss (his new position) has never had a pineapple pie.  Yes, I cheated and bought the crust, but I'm limited to time.

I pulled 3 drawers from the desk area in the kitchen.  They are now painted, but I still have to paint the other cabinet.  I hope to get you updated photos soon.  The hutch is in my way in getting the other cabinet painted, so it may be a Sunday job, when I have help to move it. My husband didn't know I was going to do that (paint was purchased for the inside of the front door). He was very happy with it when he saw it.  The darker wood just felt so drably in the kitchen.  I also plan to paint the small wooden stand that holds my onions and garlic.

Daughter K left a futon behind.  A family member is taking it tomorrow.  One more thing purged.  I still need to create a free space upstairs for the treadmill.  It folds up and we can take the handles off to get it upstairs.  I'm anxious to get the living room started.  Garden season is coming very quickly.

I have only had time to clean the cubbies in one kitchen cabinet.  I'm trying to concentrate on the desk area, so I can get the computer back where it needs to be.  Once the living room project starts, I won't be able to get into, what I call, my writing room.

Most days are like this.  Literally, and that is not even putting clothes on the line, because today will be the first day to be able to do that.

Pumpkin Bread

I seem to be spending the first half of my day in the kitchen.  I threw together a zucchini breakfast bake and topped it with freshly grated parmesan cheese.  There is spinach in it too.  I didn't use a recipe.  I just tossed some things together.

I had some thawed pumpkin to use up, and got out my old trusty cookbook. Wow!  I haven't made pumpkin bread in years, and it called for 3 cups of sugar.  That is a lot of sugar for one loaf.  

I went online of course and found one that was a low-sugar recipe.  I didn't have white whole wheat flour, but adjusted to what I had on hand.

I totally forgot to take a photo of it, but it was delicious.  I swapped out the coconut oil for canola.  I just didn't see it staying in a liquid form after adding cold milk and cold pumpkin puree.  It turned out good and my pumpkin puree didn't go to waste. Recipe is called Healthy Pumpkin Bread from Cookie and Kate.

Daughter E is now volunteering for the Humane Society and a charity that gives out food to those in need.  So proud of her.

What is your go-to, crowd pleasing stove top made vegetable?  Not crock pot, but stove-top?  My oven will be busy with baked chicken, so I'm trying to come up with something other than green beans, and nothing with potatoes.  I could steam broccoli, but not everyone likes broccoli.  Hm.  I found a recipe for creamy mashed cauliflower that sounds pretty good too.

Breakfast Using Leftovers and other tidbits. . .

I ended up making a breakfast soufflé yesterday, using up leftover sausage patties diced, and leftover homemade bread.  While I was in the kitchen I tossed together a meatloaf for dinner.

I finally (finally) finished Daughter K's cardigan!!!!!!  She is so happy and so am I.  She said, "do you want a photo for your blog?"  Ha ha ha!  Of course!

The cardigan was the biggest project I have ever attempted.  I frogged several times, and learned a lot from doing this project.  I learned to crocheted "hidden" pockets and more.  It's very comfortable and warm, and perfect timing as we woke up to 20°F (feels like 11°F).

The wood stove is warming up the house nicely, but I have zero intentions of going outside, other than to tend the hens, and get the mail today.  I have a cough now.  Most likely from being out in the wind all weekend, but treating it with medicinal teas and what not.

The world has already gone mad, and now 3 men have been seen during the wee hours of the night in our town (we are on the outskirts) are trying to steal tires/rims off trucks.  Two occasions so far.  

I just realized I will need to suit up and fetch wood.  We need to restock the porch. I'm just thankful for the dead trees the boys fetched for us.  They are burning so nicely.

Monday's are Tough

 

Mondays I typically try and do the entire house, so I can enjoy it the rest of the week.   Didn't happen.  I started out making egg/sausage/cheese and chickpea tortilla quesadillas for breakfast (next time will add jalapenos), cooked up ground beef for sloppy joes and had a mountain of dishes after that. Dinner was crock pot sloppy joes on Ezekiel bread and sweet potato fries (baked).

Laundry got started, but our mower guy arrived, so I couldn't put it on the clothesline.  I started on floors, but had to do other stuff too.  Just hard to keep up with.  I haven't even checked the garden yet.

I got another corner area of the upstairs carpet shampooed, but when Daughter E moved out she left trash and belongings.  Good luck getting her to come and clean it up, so guess who is doing it?  Yep.  Me and my husband.  I am gonna have one big party when the last one moves out.  These kids, and I didn't raise them that way, are so selfish and lazy right now.  

Anyway, it was stinkin' hot yesterday.  I'm glad I don't have a lot in the garden to deal with right now, but I may be canning this week.

Pesto Eggs on Crusty Bread

 



I froze several cubes of pesto last summer, and needed to use some up.  I just "melted" it down in a skillet first.


I then cracked a couple of eggs over it.  There is already oil in the pesto.

Cover the pan for a bit, and then flip.  Top crusty bread.  Next time I will add a layer of cheese over the bread first.  Maybe ricotta or something to go with the pesto.

Sheet Pan Eggs

 



I finally got around to try out sheet pan eggs.  I baked them at 350°F for 12 minutes.  Yolks are cooked, but soft.  You could adjust temp and time for what you like, but it worked out well.   I used my organic shortening that had coconut oil in it to grease the pan.  It did not change the flavor of the eggs either.  Farm fresh eggs are so delicous.

Have leftovers?  These heated nicely for egg sandwiches for breakfast the next morning.

Breakfast ~ A Finish


Breakfast for the next few days - just whipped stuff together.  Eggs, zucchini, yellow squash, onion, jalapenos, garlic, bacon, kale, and oregano.

The chickens are still supplying good.  I'm still using last years garlic (but they are getting green tops), frozen green peppers, jalapenos, and other veggies we froze.


I finished the rag rug for the shower.  I'm not happy with the edges this time around.  I think it's not exactly square due to the thinner material I used in the very center, but it'll work.  The one I made for the bathtub was much more square on the edges.

Chicken on the Loose ~ No Thyme or Spearmint ~ Home Baking ~ Romeo



While out doing garden work, a hen got out of the run and was following me around.  I found it so funny.  I got her back in, as she would tear up my garden. 

I planted more flowers.  I finally filled the driveway pots with flowers and beautified a bit more.  I found non-gmo catnip seeds but not spearmint.  I guess I'll break down and buy them on Etsy.  I could not find one thyme plant either.  They had way less to pick from than any year I've ever seen.  The ones I put in the ground didn't make it through the onslaught of rain we had a week or so ago.


Hubby has been begging for apple crisp.  He got it.


I baked a new breakfast casserole.  Sort of made it up.  I cooked onions and organic red potatoes, then added bell peppers and garlic.  I poured it into a baking pan, layered in some cheese, cooked bacon and eggs/milk.  I topped it with home grown green onions.  It turned out delicious.  Sorry for the bad photo.  I was in a hurry to try it, ha ha!


Romeo is finally "cone" free.  We had to put a cone on him to keep him from licking himself.  He is so happy and relaxed now, but this was the most dramatic neutering I've seen.

Random Tidbits

Monday, while Hubby and daughter were scrambling around getting ready at 5:45am, I was mumbling.  

"I have to work out, can jam, clean the coop, make a scramble for the week, do the dishes, do the laundry...."

Hubby said, "what'ya gonna do after 9am?"  

I laughed, and laughed.  That is true.  There is an advantage of being up early.  Sparta was giving me heck while cleaning the coop.  He kept getting out of the door, and out into the open garden area.  I had to keep chasing him back into the run.  I think he's getting old or his broken leg from years ago is giving him trouble.  He's having a bit of trouble walking and climbing the ramp now.



Speaking of scramble - this weeks breakfast for a few days.  It's made with some swiss chard, jalapeno, home grown potatoes, onions, green pepper and bacon.

Tuesday, I was up at 4:26 am precisely.  Work called Hubby in, and the thunder and pouring rain kept me from going back to sleep.



I hope we are well stocked now with Cowboy Candy, but if I can get more jalapenos, I'll can it one more time.  We love it!  I canned blackberry-red raspberry (our berries) jam and more peach jam.  I just wish I could find some hot banana peppers now. The purchase of our organic hot banana pepper plants were a fail.

The garden. . .popcorn may be a fail this year too.  The last storm we had, brought very strong winds, and my patch has been somewhat flattened.  Now with more heavy rain, thunderstorms, wind...who knows what'll happen.

Sadly, the 2# of tomatoes I had brought in, starting rotting in a few days.  

Although Hubby is against it, I'm back to considering working again.  We have to buy almost everything our garden didn't provide to stock up, and our cost to put the garden in has set us back.   Not sure what we'll do just yet.  I was so busy Monday, dinner time crept up on me quickly, so I'm struggling to figure out how to even hold a job and keep this place afloat.  There are many things we'll do without I believe too.

One dinner this week was smoked turkey bone soup.  I don't normally like soup in summer, but it was delicious.  I just added whatever I had, but the smoked carcass from my younger brother was worth keeping.  Yum.


I also made a new side dish - a cheesy jalapeno corn mix.  I used the frozen off the cob corn and it was very good!

Oh, and here is the latest new recipe I tried in my dehydrator. . .

Peanut butter cookies.  They were much easier to flatten than the oatmeal.  The only con to this, is it uses 1/2 cup organic coconut oil.  Same with the oatmeal.  I will however, keep this recipe for group meals and holidays.  I think they'd freeze okay, and if I triple the recipe I can fill my entire large dehydrator and save me time and ingredients.
