Weeds are Winning....

.... and I am Not Worried

For once.

Priorities.

Food wins.   I put more beets and zucchini in the freezer, and more beet greens.  I believe I am up to 40 servings of beets right now.  I may pickle some.  I haven't decided yet.

I do not like to mess with browning meatballs on the stove top, so I went in search for one online that is baked (and for the sole purpose to use up zucchini).

We love lots of zucchini right now, and so far I haven't had the need to give any away.  I still need to freeze more in the shredded form, and slices.

Back to the meatballs....

I made a double batch of turkey-zucchini meatballs - one for dinner and one to freeze.  It will come in handy I am sure.  The recipe is online but has a lot of advertising.  Just google for one and you'll find some.  I also make my dry Italian seasoning from scratch.  The meatball recipe I used contains zero breading.  No oats either.  The sauce is made with crushed tomatoes (and very good).  Another win for me, as I can crushed tomatoes, grow the garlic etc.

Four cups of shredded zucchini went to good use.  The frozen meal will last up to a month.  Perfect for when the heat of August arrives, and I am canning with tomatoes.

We are still enjoying butter snap peas.  I have just a bit more left, and I'm not sure we'll get any more.  Rain is in the forecast so I must hustle and get my pulled radish plants into a dry area for a few days.

I'm looking forward to rain, although it means more weeds (ha ha ha!), it gives me a break from the heat outside. It was up in the 90's yesterday, and Hubby works out in to all day long.  There is no getting him outside after he gets home.

You said you had to get your pulled radish plants into a dry area. I'm obviously missing something here. What does that mean, please?

I think you have a very healthy attitude towards weeds, because, no matter how hard you work on keeping them at bay, they always win! You are the second person I've read that is making meatballs to stock in the freezer. Such a good idea.

Hi Kristina :) The meatballs look great! I'm jealous of your beet harvest, compared to my little ONE. Lol...I didn't plant a lot of them, it was more of an experiment this year, but when we get our property, it'll be a bigger crop that's for sure. One thing I don't have to worry too much about is weeds with a container garden, thankfully!

Mama Pea, my radish plants all went to seed, and are turning brown. I pulled them all to allow them to continue to dry. Once they are dry, the seed pods will open (or I will have to open them) to save the seeds for next year's planting.

Susan, after losing our garden 2 years ago, I realized I need to remain more mentally calm and do what I can and only what I can. In a way the weeds are keeping the bugs busy, and off my veggies, ha ha! The turkey-zucchini meatballs are soooooo good! I need to stock up on my beef/pork/oats meatballs now too.

Rain, every year I have losses of some sort. This year it's green beans for now. Possibly a few heirloom pumpkin plants too.

Oh, I got 'cha! That makes sense. For some reason (duh), I was thinking of you drying the radishes!

Mama Pea thanks for asking though. You never know what I will be willing to try next, ha ha!

Everything looks yummy! I think you have a good attitude about the weeds.

Sam I Am, it's that time of year, where I can't do it all, and the rain is bringing up the weeds faster than we can keep up.
