No eggs? No Problem

I continue to play around with the einkorn whole grain wheat flour.  I used 2 cups to mix up this bundt bread.
  


There is an easy way to tell if this was better than the last breads I've made this winter.  It was more than half gone this morning.  Typically, bundt bread will last a few days, even three.  Not this time.  They gobbled it up fast.  I made it without oil and without eggs. I swapped the oil completely, and reduced it by half with my home canned unsweetened applesauce.  I found a recipe online and sort of tweaked it to fit with what I had on hand.  It wasn't as "tall" as my other bundt breads, but very moist.


I'm experimenting with different bread recipes again too.  This was a simple sandwich bread (King Arthur Flour recipe found online) again, but softer because it is made with milk (I think that is why).  I made one loaf vs. two this time.  Again, this was baked without eggs.  We are low on egg supply and I greatly miss my egg/green scrambles.

Off the topic of eggs and bread, I'm in search of more sources to buy herbs, essential oils, supplies for mixing and making etc.  I love Mountain Rose Herbs, and everything they sell (organic, heirloom, non-gmo), but their shipping costs are horribly high.  If you have another source to share, I would love to hear about it/them.

Oh, that bundt cake looks wonderful! Glad you're having success with Einkorn flour - did you use 100% Einkorn with the bundt cake? I have the same feeling about Mountain Rose. I love their products but the shipping charges are unreasonable. Too bad we don't live closer - I have a glut of eggs at the moment!

Your bread looks yummy. I have a bread recipe that doesn't use eggs at all and it's the best bread we've ever eaten. I'm making a loaf today so I'll post the recipe. It's also a no-knead bread, which my hands love! The bundt bread almost looks like a cake! I'm on the lookout for a bundt pan myself.

Susan, to test the flour out, I used 2 cups Einkorn whole wheat and 1 cup organic all-purpose. It called for 3 cups flour. I will try it with all whole wheat next time I make it.

Rain, you should see my bundt pan. It's a hand-me-down from my mother and I've used it a bazillion times. I have been making bundt breads, to cut down on the days I have to bake lunch packings. I can hide it up higher in the cake carrier too. Away from tall-man Kingsley the food shark.

LOL food shark...Charlie our very stealthy and sneaky husky is like that too...plus she can climb like a cat so everything has to be up high and hidden! I'm hoping to find a bundt pan second hand, nothing is made with quality anymore!

I do not know about her prices or shipping costs, but I heard Connie Karstens speak at a recent Sustainable Farming conference and was impressed. Her business is The Lamb Shoppe & Wellness Center in Hutchinson MN - I'm not sure how to paste that in this space but if you google it, it's not hard to find. Very interesting gal.

I bet the aroma in the house was wonderful when these were baking.
I've been keeping a low profile lately. I have what seems to be frozen shoulder (right one), and the pain from it wears one out working at the keyboard, or just about anything really.
It's in the 70s this week, and gorgeous, but WHAT??? We have snow predicted for Sunday - that's Spring in NC. Prayers for farmers with crops and trees budding.
Also praying everyone's having a great week, and a safe one too.

RB, I keep hearing how strange the weather has been for so many other people. I hope you feel better soon. Pain always makes me a grouch, so I hope your pain goes away soon.

The bundt cake looks yummy and so does the bread. I use the same no-knead recipe as Rain and it does not use eggs and makes enough dough for other things which you can make later as the dough sits in the frig. It would be handy for you. You can find the recipe just about anywhere but Mother Earth News is where I got it originally.
