Canning Tomatoes and Peppers ~ Going Coo Coo!

Canning is a lot of work.  Phew!  With all of our tomatoes this year, I am very busy canning today.  I can tell you that canning tomato sauce, although lengthy and tedious, was well worth it.  The taste is unbelievably better than store canned sauce.  I canned mine as seasoned tomato sauce, and plan to be doing that again tomorrow.

As for today, I was successful in canning my first tomatoes ever. 
I chose to can them in water, but will can them in their own juices next time.  With the water, I don't get as many packed into the jars.  At least I tried it and know what to do next time. Also, I won't have so many floater jars (where you have too much liquid and not enough tomatoes). Our pantry was blessed with 7 1/2 quarts of canned tomatoes.

I also brought in a basket full of banana peppers.  I am trying a new recipe.  My husband loves these flavored hot.  We tried making fridge pickled peppers with our cayenne, but they were not spicy enough.  Since we were gifted some garden fresh jalapeno peppers, I added one to each jar.  The pantry was blessed with 6 pints.

Now, as I rest my back and feet, I have 2 loaves of zucchini bread baking in the oven.  It will be a nice treat after all this work today.  I still have my laundry out on the line to take down yet.  

Tomorrow is another canning day.

I'm still waiting and waiting and waiting for some tomatoes to ripen so that I can can some (hmmm...can can? LOL!!) I have put up a batch of zucchini relish, a batch of pickle relish and some bread and butter pickles! :)
